selva, Dari6n se convierte en una espesa
frontera natural entre Panama y la her-
mana Repiblica de Colombia. Al igual
que El Amazonas, Dari6n es considerada
uno de los pulmones naturales mis im-
portantes del mundo. Para el mis osado
y entusiasta amante de la naturaleza, es
una gran aventura.

Aquf la naturaleza es la mis hermosa.
Sus rfos son las carreteras; y las monta-
fias y cerros son selva virgen. Los colori-
dos nativos Wounan y Emberi, tranqui-
los guardianes de la naturaleza, quienes
aman orgullosamente su tierra, habitan
esta selva.Los hombres trabajan y tallan
la madera de manera hermosa.

Entre sus trabajos de tallado sobresale
la tagua, una semilla que despues de ser
trabajada parece cobrar vida en peque-
fias serpientes, monos, ranas, entre otras
figuras que sorprenden al ojo mis exi-
gente. Mientras, las mujeres tejen exqui-
sitas canastas. Todo el trabajo, sin duda,
se hace a mano.

Darien consists of thickly layered dense
rain forest just beyond the Panama Ca-
nal and between the Colombian border,
the Darien, like the Amazon, is one of the
world's important green lungs. It is an
adventure for the hardiest and most na-
ture loving enthusiast.

Nature here is at its finest. The rivers are
the roads, the hills and mountains are
virginal forest. The rain forest is inhab-
ited by the colorful Wounan and Embera
natives who are peaceful, nature loving
people who proudly love their land.

The men do beautiful wood and tagua
(a large seed) carvings and the women
weave exquisite baskets.

There are several towns with airstrips
and scheduled service, but this adventure
can be dangerous. It is recommended that
a visitor engages an experienced guide.
Tucked along the Pacific coast, near the
town of Jaque, you will find one of the
most famous and renowned fishing vil-
lages in the world.

Un paraje donde no hay grandes arboles, ni muchos ani-
males; un paramo de Azuero donde la vida es escasa y
crece a duras penas.

Cada tronco de Sarigua nos recuerda que la tala y las
quemas son sin6nimos de muerte.

Donde alguna vez hubo abundancia y vida, se extiende
un desierto llamado Sarigua. Un raje donde no hay gran-
des arboles, ni muchos animales; un paramos de Azuero
donde la vida es escasa y crece a duras penas.

Aprovechando las primeras luces del dia, exploro la an-
tftesis del clasico parque nacional panamefio. Podrfa
decir que estoy en la analogfa en pequefia escaladle de-
sierto de Arizona.

antithesis of a classic Panamanian national park. It could

Al pie de un mirador que se eleva sobre el desierto, Juan Agui-
lar, lugarefio y ex jefe del parque, no oculta su orgullo por Sa-
rigua. Acostumbrado a educar a los escolares que llegan a su
tierra, sabe muy bien c6mo definir al area protegida.

"El Parque Nacional Sarigua es unico, ya que fue creado para la
educaci6n ambiental -me explica el exjefe del parque-para de-
mostrar lo que no debemos hacer y para entender cuales son
los efectos de los malos manejos de los recursos, en este caso
la deforestaci6n".

Ain asi, la piel cuarteada de Sarigua posee una belleza surrea-
lista. Hoy, se extiende sobre un terreno llano y polvoriento,
matizado por escasas agrupaciones de arbustos, suculentas y
cactus propios del bosque seco tropical que han sobrevivido
gracias a los cuidados de la Autoridad Nacional del Ambiente.

Sin embargo, de sus bosques costeros, mas de 8 mil hectareas
verdes que llegaban hasta los manglares del Pacifico, queda
muy poco. Durante el iltimo siglo, la tala y la quema hicieron
estragos. Esta peligrosa realidad no ha cambiado mucho en la
actualidad.

Con la llegada de cada verano, el humo y el fuego anuncian el
comienzo de quemas irracionales que continian destruyen-
do el escaso bosque seco que alberga la regi6n, con objeto de
transformarlos en potreros y pastizales.

Juan Aguilar me gufa por los senderos de la devastaci6n. Sefiala
unos monticulos que muestran las huellas de la erosi6n. Cerca
al joven funcionario, algunos troncos exentos de vida exponen
sus races indicando lo que en un tiempo fue el nivel normal del
suelo. Hacia donde miro, son palpables las huellas del hombre
como verdugo de una fragil naturaleza agonizante, doblegada.E

As I trek further into this parched land, abused by salty winds,
I get the feeling that I am treading upon an old and mistreated
body, senile and wrinkled by the inclemency of life itself.

It is a whim of nature, there is no doubt. Located in Herrera, the
driest, most arid province ofPanama, it also must deal with a
permanently saline saturated soil base.

Yet nature alone did not cause the dramatic ruin. More than
11,000 years of human occupation, intensive cutting, burning and
clearing pastures, has taken its toll. The Sarigua National Park
is a symbol of the results of devastation and foreshadows the pos-
sible effects on all eco-systems.

Juan Aguilar the ex-park keeper does not hide his pride. Ac-
customed to educating visiting school children, he talks about this
protected area.

"Sarigua National Park is unique and it was createdfor envi-
ronmental education, to demonstrate what we should not do and
what the effects of bad resource management are, in this case,
deforestation. "

In spite of it all, this cracked land possesses a surreal beauty.
Today it spreads over aflat and dusty plain randomly dotted with
occasional clusters of bushes, succulents, and tropical cactuses
that have survived thanks to the Autoridad Nacional delAmbiente
(the national environmental authority).

Yet, few of the 8,000 hectares of green coastal forests that once
stretched down to the Pacific mangroves still exist. Over the last
century, cutting, slashing, and burning have disfigured the land
and these dangerous activities continue.

ban con los hongos, con los musgos, con valiosas plantas y anima-

que nos brinda importantes servicios ambientales, como son la re-
tenci6n de agua y la filtraci6n de gases nocivos para los humanos.

No s6lo la naturaleza y el clima causaron su desgaste dramitico.
Mas de 11 mil afos de ocupaci6n humana y y la quema de pasti-
zales para potreros han convertido al Parque Nacional Sarigua en
el simbolo de lo que podria ser la devastaci6n de los ecosistemas.
Hacia donde miro, son palpables las huellas del hombre como ver-
dugo de una frdgil naturaleza.

Anthropological studies conducted in the 1960s indicate that the
aboriginal people of Azuero were slashing and cutting in the area
from the beginning of time. The activity increased with the arrival
of the Spanish crown when they established the town ofParita in the
15th century.

Besides annihilating fungus, moss, and other valuable plants and
animals, fire debilitates soil causing it to lose its nutrients.

Nature alone did not cause the dramatic ruin. More than 11 thousand
years of human occupation, intensive cutting, burning and clearing
pastures has taken its toll.

bles. Pero esa inocencia del animal puede tornarse en su propia
amenaza.

Es por eso que en esta entrevista al Dr. H6ctor Guzman junto con
la colaboraci6n de MarViva, informan sobre la importancia del pez
en nuestros mares y de la adecuada forma de interactuar con el
animal para protegerlo debidamente.

H6ctor M. Guzman, bi6logo marino, trabaja en Panama desde
1987 y es cientifico permanente del Instituto Smithsonian de In-
vestigaciones Tropicales.

LCual es la importancia de esta especie?
Es el pez mas grande que existe.

LEs esta especie agresiva?
En absoluto, es d6cil e inofensiva; por eso es acosada por los tu-
ristas, convirti6ndose en una especie vulnerable al turismo y la
pesca.

Segun los reportes, Lcuinto midi6 el especimen mis grande?
Es normal encontrarlos de unos 14 metros, aunque la mayoria son
juveniles de entre 4 y 6 metros, pero existen registros de algunos
de hasta 23 metros de largo.

Hector M.Guzman, marine biologist, has worked in Panama since
1987 and is a permanent scientistfor the Smithsonian Tropical Re-
search Institute.

A gentle giant threatened by its very innocence. Whale sharks, the
largest fish in the ocean, are endangered by their friendly nature.

Mar Viva and Dr. Hector Guzman have collaborated in this inter-
view to share important information about appropriate interaction
with these magnificent and gentle creatures.

Why are they important?
The Whale Shark is the largest fish in existence.

Is the species aggressive?
Absolutely not, Whale Sharks are docile and inoffensive creatures
and, as such, are often harassed by tourists, making them vulnerable
to man in general and to the fishing industry.

How large are they?
Whale Sharks have been reported to measure up to 23 meters in
length. The young are four to six meters and it is normal to see
adults at around 14 meters.

LEsta en peligro de extinci6n esta especie?
La especie esta catalogada como vulnerable y en riesgo de extin-
ci6n futuro en la Lista Roja de Especies Amenazadas de la Uni6n
Mundial para la Naturaleza (UICN), de la cual la Repdblica de Pa-
nama es miembro al aprobar sus Estatutos mediante Ley N 26 de
10 de diciembre de 1993.

Esta protegido internacionalmente y esta listado en el Ap6ndice
II de la Convenci6n Internacional sobre el Comercio de Especies
Amenazadas de Flora y Fauna Silvestre (CITES) y la Convenci6n
sobre la Conservaci6n de las Especies Migratorias de Animales Sil-
vestres (CMS), ambas ratificadas por Panama mediante Ley N 14
de 28 de octubre de 1977 y Ley N 5 de 3 de enero de 1989, res-
pectivamente. Ademas, el tibur6n ballena esta considerado como
especie altamente migratoria y se debe asegurar su conservaci6n
segin el articulo 64 y el Anexo I de la Convenci6n de las Naciones
Unidas sobre el Derecho del Mar (CONVEMAR), ratificada por la
Repdblica de Panama mediante Ley N 38 de 4 de junio de 1996.

Por ultimo, esta especie esta protegida en la Repdblica de Panama
por el Decreto Ejecutivo No 9 del 21 de abril del 2009.

Are they endangered?
The species is registered as vulnerable and at risk of future extinc-
tion. It appears on the Red List of Threatened Species maintained by
the world conservation organization, UICN. (By law passed in 1993,
1977 and 1989 respectively, the Republic of Panama is a member of
the UNIC and several other world conservation groups for wildlife
and migratory animals such as CITES, CMS.)

Whale sharks are also protected internationally by the United
Nation's convention, CONVEMAR, ratified by Panama in 1996 and
by executive order, no. 9 ofApril21, 2009.

iSe puede avistar en Panama, en qu6 6poca y en
qu6 lugares?
Se encuentran en Panama en ambos lados del istmo,
mis cominmente en el Pacifico y cualquier lugar cerca
de la costa. Se destacan zonas cercanas de Coiba y Las
Perlas. Todo el afio se pueden observar solitarios o en
grupos. Hemos visto hasta 23 animales juntos. En la
mayorfa de los casos los grupos estan formados por
individuos de un mismo sexo.

iQu6 cosas debemos tener presentes al nadar con
esta especie?
Lo mas importante es no tocarlos, ni montarse sobre
ellos; s6lo debemos nadar a la par y disfrutarlos. No
acercar los botes muy rdpido y colocarseles al frente,
ellos son curiosos y se acercan solos. Ser un buen ope-
rario turfstico y turista responsable. Segin el Decreto
No 9 del 2009, le corresponde a la Autoridad de los
Recursos Acudticos de Panama reglamentar la parti-
cipaci6n de esta especie en actividades turfsticas de
avistamiento.

Le hemos solicitado a la ARAP que reglamente de for-
ma urgente esta actividad en conjunto con la Autori-
dad de Turismo de Panama y la Autoridad Nacional
del Ambiente, debido al incremento en el acoso a estos
animales en la zona de Cebaco-Coiba en particular.

LPara qu6 se les coloca el transmisor satelital?
iQu6 quiere estudiar la ciencia al colocarles este
dispositivo?
Nos permite darle seguimiento al animal y estudiar
su comportamiento y patrones de movimiento diario
y estacional; nos permite establecer rutas migratorias
y la conectividad entre pauses, ademds de comporta-
miento de buceo diurno y nocturno y darnos informa-
ci6n sobre la temperatura del agua donde se encuen-
tra.

When and where can they be seen in Panama?
Though they are more common in the coastal areas of
the Pacific, Whale Sharks can be seen on both sides of
the isthmus. They often congregate near Coiba and the
Las Perlas islands, and are seen in groups or on their
own, usually congregating in same sex groups. We have
seen a gathering of23 whale sharks.

What should we be aware of while swimming with
them?
The most important thing is to not touch them or try to
ride them but, instead, swim alongside peacefully and
enjoy them. Do not approach Whale Sharks in speeding
boats and face them; they are curious and will approach

Gracias a la geograffa inica de Panama, y sus 2,490 km de costa
con aguas puras, hay playas en donde el surf siempre esta pre-
sente y es adaptable para todo surfista.

En Panama hay surf todo el afio debido a consistentes olas que
alcanzan tamafios de 2 a 12 pies, y dependiendo de la tempo-
rada pueden Ilegar a los 20 pies. Cada afio de diciembre hasta
abril, donde las olas derechas e izquierdas rompen en su mejor
punto, las playas en el Pacffico atraen un significativo numero de
surfistas.

En el pasado, casi todos los surfistas, excepto los mas aventu-

Thanks to Panama's unique geography, shape, and its 2,490 km
long coastline of unspoiled warm water, there are beaches were
surfing is always dependable and the surf is so accommodating it
seems to break to the preference of the surfer.

There is year round surf in Panama due to consistent waves ave-
raging from 2 ft to 12ft and, depending on the season, as much as
20 feet. Every year from December to April, when the right and
left breaking waves are at their best, the Pacific beaches attract
international surfers in significant numbers.

In the past, all but the most adventurous surf travelers were res-

LQu6 es el Biomuseo?
El Biomuseo, otra extraordinaria creaci6n del insigne arquitecto Frank Gehry, es
un proyecto impulsado por la Fundaci6n Amador, con el fin de crear un enlace
entre Panama y el mundo, para contar la historia del surgimiento del Istmo de Pa-
nami hace tres millones de afios, acontecimiento que cambi6 la vida en la Tierra.
Cuenta con el apoyo del Gobierno de Panama, del Instituto Cientffico Smithsonian
y la Universidad de Panama.

What is The Biodiversity Museum?
Another extraordinary creation of the notable architect Frank Gehry, the museum
was propelled by the Fundacin Amador to create a liaison between the Panamanian
people and the world. With the cooperation of the Panamanian Government, the
Smithsonian Institute, and the University of Panama, it will relate the story of the
isthmus' raising out of the ocean three million years ago, an event that changed the
earth.

The mission of the museum will be to change perspectives on how people see things,
how they interact, and how they care for the environment. It is, indeed, an educa-
tional instrument with the objective of illustrating the value of the country's biodi-
versity.

Design and construction
From the moment that Frank Gerhy agreed to collaborate on the project, he made it
clear that the project had to have an impact on society. The building is not simply
an edifice to be admired from an architectural perspective, but also as a guardian of
invaluable knowledgefor Panama and the rest of the world.

provocando asf diferentes sensaciones al visitante.

Actualmente, el Museo de la Biodiversidad esta en construcci6n y
su apertura esta programada para el primer cuatrimestre del 2011.
En la actualidad, cuenta con el programa de visitas "Conoce el Bio-
museo", ddndole la oportunidad a la comunidad de conocer las ins-
talaciones y entender c6mo funcionardn sus exhibiciones. Tambien
existe el programa de membresfas "Amigos del Biomuseo", que le
permite a sus afiliados colaborar junto con Amigos Fundadores,
apoyando todos los programas educativos y culturales. Esta ubica-
do estrat6gicamente en el area de Fuerte Amador a la entrada del

Surely, Gerhy will leave his undeniable mark and, with it, his foo-
tprint in the cultural history of Panama. The museum, Gerhy's first
in Latin America, has generated great expectations for an impact on
culture and tourism.

There will be eight large galleries of interactive exhibitions, designed
by Bruce Mau, narrating each step in the history of the isthmus' crea-
tion; salons for temporary exhibitions; cafeterias and stores; and a
botanical park designed by the landscape artist Edwina von Gal.

The goal is that visitors leave with more than just a memory and
that wandering through the exhibits will change their lives. Each
visitor will be a protagonist in search of answers waiting for them
in the amazing working models throughout the museum. Thanks to
the visual and physical concept of each exhibition, this format allows
the visitor to play an active role and provoke a variety ofsensations.

The museum is presently under construction and programmed to be
completed in thefirst quarter of2011. The visitor program, "Conoce
el Biomuseo" (get to know the Biodiversity Museum), gives the com-
munity an opportunity to learn about and understand the function
of the exhibits. The membership program, Amigos de Biomuseo"
(Friends of The Biodiversity Museum), allows its affiliates to collabo-
rate with the 'Amigos Fundadores" (Founding Friends), and support
all the educational and cultural programs. The museum is strategi-
cally located in Fort Amador at the Pacific entrance of the Panama

Mi gran amigo, Angel Revilla Argiieso, decia que ... "el lenguaje
produce el efecto del poder creativo. Esta creatividad es, a la vez,
actividad social y producto de una cultura".
No cabe duda que es asi. El panamefio, en lo que respecta al pro-
ceso de comunicaci6n es altamente creativo, quizA por la gran va-
riedad de identidades culturales que transitan por nuestro pals.

Pedro Altamiranda, cantante popular, en varios de sus calipsos
narra la existencia de una pluralidad de conceptos para hacer re-
ferencia a una sola cosa; este es el caso de la parte sexual femeni-
na... Si no me creen ubiquen la canci6n en "youtube".

ZA qu6 viene lo anterior?
Todos los pueblos y culturas del planeta desarrollaron y desarro-
llan formas particulares de transmisi6n de informaci6n via len-
guaje, sea 6ste verbal, mimico, matemdtico, musical o corporal (si
existe otro... se me escap6).

En el caso de Hispanoam6rica, la mezcla de esos lenguajes produ-
jo y produce (y seguird produciendo) una especie de "ZOMBIE"
para la intercomunicaci6n o para la interacci6n mensaje-receptor
(iChuletas!... y este t6rmino si es acad6mico).

ZC6mo es ese ZOMBIE comunicador en Panama?
Aver si recuerdo... La fusi6n de tantos pueblos y culturas nos lle-
va a expresarnos de manera particular: hablamos con gestos, cor-
tamos e invertimos palabras, somos onomatop6yicos, utilizamos

Professor Kam's article on "Panamanisms" in language is largely
dedicated to interesting aspects of cultural creativity on the Span-
ish language spoken in Panama.
As happens in every culture, diversity affects the development of
all areas of communication albeit spoken, mimicry, musical or body
language.

Professor Kam explains many of the results thatthis impact has had
on Panama, a country with a long history of cultural diversity. The
fusion of so many cultures has produced a unique manner of ex-
pression and communication that includes speaking with gestures,
cutting off words or inverting syllables, inverting word meanings,
sound effects or just inventing when one just does not have the
right word for the situation. In English there is, "whoosh" "yikes",
"gee wiz", "crikey", "splat" and "kaboom" and in Panama there are
words like "zaaasss", "puuuquiti", and "chuummpluun."

Getting street directions can be a whole lesson in confusion. Pro-
fessor Kam's example of someone asking directions to a mall is
classically Panamanian and would go something like this:
_ "Where is the "whatever shopping center?"
_"Let me help you. Take this street until you arrive, in two streets,
at the X pharmacy, then to your right you will see a green building,
keep going right for three streets more until you arrive at the X
restaurant, there you are pretty close to the mall, you will see three
yellow houses but you still are not there, take a left and you can see
the top of the mall in the distance, keep walking straight until you

la intersecci6n, luego siga dos calles mis hasta la farmacia el ca-
pricho, luego ahf mismo coja a la derecha, vera un edificio verde
clarito, que esti como destefiido; siga por la derecha tres calles
mis hasta llegar al restaurante rinc6n de Nico, de allf al Centro
Comercial no queda poco, vera tres casas amarillas, ahf no es,
tome a la izquierda y a lo lejos vera la parte de arriba del Centro
Comercial, como unos techitos rojos; camine derecho hasta llegar
al semiforo, frente al almac6n burbuja. Puede seguir recto o me-
jor toma el callej6n hasta la casita de bloques. Justo en frente esta
el lugar que busca.

tions worse would be watching the hand gestures of the generous
provider. Professor Kam suggests you take a taxi or ask again in
three streets, if you dare...

"Spanglish" plays a big role in Panamanian Spanish, the years of
North American and Caribbean influence created linguistic muta-
tions that have endured. There are actual conjugations of words
like flat, as in flat tire. "Se me flateo la llanta" "my tire went flat",
flatear being a verb you will not find in any dictionary, makes per-
fect sense in a country that has creatively incorporated Anglicism's
for more than 150 years but it might possibly confuse a Spanish
speaker anywhere else in the world. There are many fun and inter-
esting examples, a neighborhood in the downtown area known as
Perejil, the Spanish for parsley actually has its origins with a farmer
named Perry who immigrated here and had his farm, Perry's Hill,
on a small hill where the neighborhood now stands. A "likibuy" is
an endearment for a little boy on the Atlantic coast, a "tinaco" is
a trash basket, early imported trash receptacles were made by a
company named Tin&Co. and there you go......the list is long and
flavorful, keep your ears open and you will hear them everywhere.

Con un peso apenas superior a una libra, el mono Titi, o Tamarin
(como le suelen Ilamar en ingl6s), es uno de los primates mas pe-
quefios de Centroamerica. Con sus entre 9 y 9.5 pulgadas, y una
cola de entre 11.5 y 15 pulgadas, la hembra es ligeramente mas
grande que los machos. Con frecuencia son confundidos con otras
especies de mono, como por ejemplo, el mono ardilla. Los Titis
son pequefias criaturas coloridas con las piernas y la parte baja
del vientre pdlidos, ylas partes posteriores peludas y abigarradas
con colores negros y amarillos. Su cola, excepcionalmente larga,
es rojiza con una pequefia punta negra; otro distintivo es su cara
libre de pelos. Pueden ser distinguidos de otras especies simila-
res por sus cabezas rojas peludas marcadas en el centro con un

Weighing in at just over a pound, the mono titi, or Geoffreys Tama-
rin (Saguinus geoffroyi), is the smallest of the Central American
primates. Measuring a mere 9-9.5 inches, with a tail of 11.5-15
inches, the females are slightly larger than the males. They are of-
ten confused with marmosets and squirrel monkeys. Titis are col-
orful little creatures with pale legs and underbellies, and black and
yellow variegated furry backs. Their exceptionally long tail is red-
dish brown with a black tip, and they have bare faces. They can be
distinguished from other similar tamarins by their furry red heads
marked in the center with a white triangular patch.

Found in Panama and Colombia, the mono titi is more likely to be
found on the Pacific Rim than the Atlantic. They live prolifically in
the jungle in tree canopy communities where they forage for their
diet of fruits, insects, and greens. These busy, playful creatures
communicate with a distinct chatter of whistles, trills and clicks,
and live in family groups where both parents participate in the rais-
ing of the young.

These tamarins are tree dwellers, but do come down from the tree-
tops more frequently than many other primates. Their enemies in
the jungle range from raptor birds, to cats and snakes. Not consid-
ered endangered by the International Union for Conservation of Na-
ture (IUCN), they are classified in the category of "Least Concern",
a testament to their hardiness and adaptability. While not endan-
gered, they have the protections that all wild animals are afforded
in Panama. Unfortunately, their endearing appearance is a liabil-

pinosa; en Venezuela se conoce como chayota; en Peru se le llama

Honduras pataste, en Colombia guatila y en Brasil se le llama
xuxi. Tambien en los Estados Unidos es consumido gracias a la

It is readily available, inexpensive, and easy to prepare. This in-
credible pear shaped vegetable originated in indigenous America
and was cooked and consumed by the Mayas, the Aztecs, and all the

America.

The name chayote comes from nahuatl i (chayotli) and means
"spiny squash." In Venezula, Panama, Nicaragua and Costa Rica, it

Boiling it and adding butter and cheese is really enough prepara-
tion but this versatile fruit can be prepared many different ways. It
is delicious in soups, stews, stuffed or in salads. The next time you

Ingredientes:

2 chayotes grandes pelados, cocidos (tiernas pero firme) y pica-
dos en tiras.
3 huevos duros picados en cuartos, a lo largo.
1 pimiento rojo picado en cuadritos.
lb. de queso nacional en tiras delgadas.
cebolla roja picada en cuadritos finos.
1 taza de aceite de oliva.
1 macito de perejil picadito.
taza de vinagre de vino blanco.
1 pizca de azicar.
c/n de sal y pimienta negra reci6n molida.

Procedimiento:
Preparar una vinagreta mezclando el aceite de oliva, vinagre, azi-
car, sal y pimienta. Emulsionar y agregar los pimientos, la cebolla
y el perejil. Reservar.
En un envase colocar el chayote y el queso y mezclar con cuidado.
Viertale la vinagreta e integre bien. Sirva en una fuente bonita, de-
corada con los huevos. Guarnici6n de varios palitos enjaretados
con jam6n serrano. Servir frfo.

3 hard boiled eggs cut lengthwise into eighths
1 sweet red pepper chopped
lb. national cheese (farmer's cheese) cut in strips equal in size to
the chayote strips
2 red onion finelyjulienned
A handful of parsleyfinely chopped
1 cup olive oil
A dash ofsugar
Salt and freshly ground pepper

Procedure:

Prepare the vinaigrette, emulsifying the oil, vinegar, sugar salt and
freshly ground pepper; add the red pepper and parsley, mix and set
aside
