E1 ave national de Panama es el poderoso y majes-
tuoso Aguila Harpia. Siendo el fnico miembro de
su g6nero, la Harpia, es una de las mas grandes y
poderosas aves de rapifia de Am6rica. Su nombre, Harpia,
proviene de la mitologia griega; las Harpias eran espiritus
del viento, que tenian como labor cargar las almas de los
muertos al Hades. Eruditos griegos han descrito las Harpias
como criaturas de alas emplumadas, garras letales y caras
humans. Hist6ricamente el campo de aguilas Harpias cor-
ria desde el sur de M6xico hasta Brasil. Esto ha cambiado
de manera dramatica en afios recientes. En Panama afn se
encuentran Aguilas Harpias, y estAn bajo protecci6n guber-
namental, que en conjunto con esfuerzos de otras organiza-
ciones promueven la consciencia ambiental.

El Harpia es un ave hermosa. Como la mayoria de las aves
de rapifia, la hembra es considerablemente mas grande que el
macho, midiendo en promedio entire 100 y 110 cm de largo,
con una envergadura de 2 mts y un peso de 6 a 10 kg. El
macho pesa en promedio entire 3.5 y 5.5. kg; casi la mitad
del peso de la hembra. Ambos tienen garras tan largas y
fuertes como las de un gran oso y estan cubiertos de lujosas
plumas gris oscuro, las cuales se toman mas palidas hacia la
cabeza y son blancas en el pecho. El Harpia estA coronado
con una cresta spectacular que consta de plumas oscuras


T he powerful and majestic Harpy Eagle is the national
bird of Panama. The only member of its genus, Har-
pia, it is the one of the largest and most powerful of
American raptor birds. Its name, Harpy, comes from an-
cient Greek mythology; the Harpies were spirits of the wind
that were tasked with carrying the souls of the dead to Ha-
des. Greek scholars described the Harpies as creatures with
feathered wings, lethal talons and human faces. Its terri-
tory historically ranges from Southern Mexico to Brazil, but
this domain has been dramatically reduced in recent years.
Protected by the government and with its survival dependent
on organizations and raised environmental consciousnesses,
the Harpy is still found in Panama.

The Harpy is a distinctively beautiful bird. Like most of the
raptors, the female is significantly larger than the male at an
average of 100-110 cm. in length with a wingspan of 200cm.
and a weight of 6-10kg. By comparison, the male, at 3.5-
5.5 kg is almost half her weight. They both have talons
as long and as strong as a large bear and are covered in
luxurious slate grey feathers that lighten to a paler ash head
and a pearl white belly. The Harpy is crowned with a spec-
tacular crest consisting of long dark feathers and shorter,
lighter ones that surround the face, giving it a beautiful, yet
dramatic and sinister, appearance. These feathers create a

Si usted se pregunta qu6 es ser panamefio... la respues-
ta es ffcil: todos los nacidos en la Repiblica de Pan-
ami, los que son hijos de panamefios nacidos fuera
del Estado, los que se han naturalizado y a los que por una
disposici6n constitutional, el Ejecutivo se lo concede.
Vio.... jFAicil!

Sin embargo, lo panamefio implica culturalmente cosas que
un extranjero no puede copiar, a menos que naciera en un
pais que tuviera como denominador comin a Espafia.
Si, somos un pais donde existen panamefios indoamericanos
(kunas, teribres, bribries, emberies, uaunanes, ng6bes y bu-
gleres), panamefios angloamericanos (zonians y creolles), y
panamefios hispanoparlantes, que mayoritariamente tienen
una historic que comienza a proyectar sentido de identidad a
partir de la llegada de los espafioles; que ademis de expresar
todos sus sentimientos en castellano, tienen una moral cristi-
ana: somos los llamados mestizos, mulatos, zambos, secun-
dones, tercerones, tente-en-pie, salto-atras, lobo, espafiolo y
vaya Ud. a saber. Casi un tuti-fruti epid6rmico.

Somos un rostro muy variado: ni negros, ni blancos, ni am-
arillos. Somos un rostro multicolor; somos el resultado de
gente de tantas latitudes, que al llegar a este pais quedan atra-
pados por el calor human, por la geografia y por la diver-
sidad cultural, todo concentrado en un pequefio y hermoso
lugar llamado Panama.

Somos muchas caras que sonrien amablemente al visitante,
que colaboramos entire nosotros y que abrimos nuestros cora-
zones como un puente al mundo en un universe de amistad.

At the same time, being Panamanian culturally implicates

one was born in a country with Spain as its historic common
denominator It is like this ... Panama is a country ofAm-
erindians, Kunas, Teribes, Bribries, Emberaes, Uaunanes,
Ngobes, and Buglers, as well as Anglo-Americans, Zonians,
and Creoles and, for the most part, Hispanic, Spanish speak-
ing individuals.

The latter group is the largest; its history began with the ar-
rival of the Spaniards. Spanish speaking Panamanians have
Christian values and express themselves in Spanish. They are
called mestizos, mulatos, zambos, secundones, tercercones,
tente-en-pie, salto-atr6s, lobo, espaholo, and so many more,
a veritable smorgasbord of skin color based monikers.
Panamanians have a variegated face ... not black, not white,
not yellow, but multicolored, the product of so many people
from such far latitudes. Here in Panama, they were trapped
by human warmth, the geography and the cultural diversity
concentrated in this tiny and beautiful country

We are happy faces, quick to smile at visitors who wander
among us. We lend our hearts like a bridge into a world of
friendship.

ria y de parriotismo. La independencia de Panama Ilcg6 a ser

Un mito romantico como Io dicta la l16gica o una dudosa real-
idad, dicen que el primer grito de Independencia de Panama
de Espaila, fue ingeniosamente planeado por una valiente jo-
ven armpcrina de la Villa de Los Santos. Leyenda. tradici6n
y rcalidad, a veces se toman en una sola. A -. Rufina A I faro
Ilego a ser la inolvidable heroina de ]a insurreccion paname-
ia el 10 de noviembre de 1821. Latinoambrica se encontraba
en una sangrientia guerra Panamai aislada de los centros de
gran hostilidad, no habia participado at mismo nivel que sus
vecinos del sur; ni habia habido ning6in otro acto de resist-
encia o de violencia en suclo panamcino por largo tiempo.
Para 1819 la tension aumentaba en Panami, Los ciudadanos
panainmcio. tambien se animaron a buscar la Independencia
al escuchar acerca de los Iriunfio que estaban ocurriendo en
Sur America.

Hubo mementos de desespcraci6n; los espaiioles ejercian un
control muy riguroso y censuraban informaci6n. La selva del

disminuia, pero nunca se rindi6 ante la esperanza de una Lati-
noam6rica unida. Afn cuando la gente no estaba de acuerdo

y gratitud por su libertad; 61 estaba derrotado inicamente

La uni6n con Colombia no era una idea popular con los istme-
fios. La idea de liberaci6n para muchos no incluia llegar a ser
un departamento aislado de Colombia, con dos provincias,
Veraguas y Chiriqui; sus aspiraciones iban mas alli de eso.
Hubo definitivamente muchos partidos separatists en los
aflos siguientes y un sinnfunero de intentos fueron realizados
para lograr la separaci6n a lo largo de los siguientes 72 afios.
Los afios mas significativos fueron 1830, 1831, 1840, 1841

Soon after, civil war broke out and Bolivar's dream was all
but over Actually Bolivar's dream had become distorted over
the years of war and the overwhelming task of trying to unite
such a vast area. His early dream of a free democratic Latin
America had mutated itself into a dream of imperial propor-
tions. With the mutation came frustration, disappointment,
then scorn. There was mutual mistrust between him and the
people he had fought so hard to free. By 1819 he had al-
ready adopted an admiration for monarchies evident when
he declared in the Angostura Congress that "jAngeles, no
hombres, pueden unicamente existir libres, tranquilos y di-
chosos, ejerciendo todos la potestad soberana! Angels alone,
and not men, can exist free, peaceable and happy in the exer-
cise of sovereign power" His supporters became dissenters
and his influence diminished but he never gave up his hope
for a united Latin America. Even though people could not
agree with his monarchist views they never lost admiration
and gratitude for their liberation; he was defeated only by
his own intransigence. He died with his dream unfulfilled
in 1830.

The joining Colombia was not a popular idea with the isth-
mians, the idea of liberation for many did not include becom-
ing an isolated department of Colombia with two provinces,
Veraguas and Chiriqui, and their aspirations were higher
than that. There were definitely many separatist factions in
the years that followed and a number of attempts were made
for separation over the next 72 years. The most significant
were in 1830, 1831, 1840-41 and finally the success in 1903.
In 1830 as the weak alliance of nations started to fall apart,
Panama, led by, Jose Doming Espinar separated itself from
the federation in the month of September This separation
was short lived as by December of that same year Bolivar
had convinced them to rejoin. By the middle of December
Bolivar was dead and Panama was once again subject to
distant rule. In 1831 another attempt was made under tge
leadership of Juan Eligio Alzuru, they tried to separate but
Colombia, unable to face yet another desertion, quickly and
forcefully dealt with the attempt. Throughout this process
Panama continued to be geographically isolated by the vast
impenetrable Darien, leaving it politically and economi-
cally dependent. Such isolation limited communication at
a time when communicating was already limited and slow.
And so, the Isthmus of Panama was absorbed by Colombia
in all her variations and once again was subject to absentee
rule. The reality of self rule had eluded the isthmians but
the illusion remained. In 1839 Colombia was once again
at war with itself, the war of "Los Supremos" and Panama
saw an opportunity to separate again. To that end, in 1840
a constitutional junta was formed in Panama City. Under
the leadership of Carlos Icaza, Mariano Arosemena and a
Revolutionary hero, General Tomas Herrera, they produced
a constitution for the Estado Libre Del Istmo, The Liberated
Isthmian State. They were well organized and well on their
way to self rule, they sought but were unfortunately denied
diplomatic recognition by the U.S.A. and Costa Rica and
then by 1841 Herrera was betrayed and the plan failed. By

the second half of the 19th Century the isthmus was being re-
discovered by the rest of the world. The discovery of Gold in
California led to a new influx of people and ideas. Panama
became the shortest route to the goldfields in California, then
in Alaska and Australia. By 1855 the first transcontinental
railroad had been built in Panama increasing its importance
as an international trade route. By the 1880's the French had
arrived to build a canal. The fact that they failed to do so did
not diminish the importance of their influence on the people.
The railroad and the French Canal helped bring the isthmus
out of its isolation. New ideas and fresh input rekindled the
latent desire for complete independence. The French Canal
project failed in the 1890's and the U.S.A. was standing on the
sideline waiting to take over Of course this new added value
on the isthmus did not go unnoticed in Bogota.

In 1899, a canal commission was named by President McKin-
ley of the U.S to study the feasibility for a Central American
canal. The commission showed interest in Panama andNicara-
gua. At the same time the French were interested in salvaging
what they could from their own financial disaster in Panama
and therefore saw the idea of an American Canal in Panama
as advantageous to their to cause. Any hope of a small mea-
sure of economic recuperation laid with convincing the Ameri-
cana to buy out their interests. The final report favored the
construction of a canal in Nicaragua and so a French engi-
neer Phillipe Bunau-Varilla took up the task of convincing the
American Congress that Panama was where they wanted to
build a canal.

While all of this was taking place Colombia was at the height
of the 1,000 Days War, a bloody civil conflict between the
Liberal parts, and the Government and Conservative party
(1899-1902). Separatists in Panama could see that it was
again time to mount a campaign. In 1901 the American pres-
ident McKinley was assassinated and Theodore Roosevelt
had taken office. On the isthmus the 1,000 Days War was
escalating. Roosevelt was desperate for an American Canal.
Meanwhile intrigue was mounting in Panama as they quietly
plotted and planned when and how to make their move. The
opportunity came to them when the Colombian Legislature
refused to sign a treaty negotiated by their representative,
Herran and the American Secretary of State, Hay early in
1903. Roosevelt immediately decided to support the separat-
ists in Panama in exchange for a canal treaty. It was not the
perfect solution for Panama, but it was the best option at the
time. By that time all of Colombia including the Isthmus of
Panama had been devastated by the war, 100,000 had lost
their lives and the country was in economic ruin, it was time
to take advantage of the chaos. Later the same year the stage
was set, and on the 3rd of November, 1903 a junta made
up of the prominent Panamanians, Manual Amador Guer-
rero, Federico Boyd, Jose Agustin Arango, Ricardo Arias,
Tomas Arias, Nicanor de Obarrio, Manuel Espinoza Batista,
and Carlos Constantino Arosemena, a union of Liberals and
Conservatives, declared Panama a separate and autono-
mous nation. In less than 48 hours, with minimal bloodshed,

Independence did not come easily to Panama; it was a pro-
cess of hope and disappointment, dedication and defeat
where final success was ultimately determined by incredible
perseverance. It took 72 years from the 10th of November
1821 when "Viva La Libertad" was shouted in Los Santos
and the 28th of November 1821 's original declaration of in-
dependence from Spain to the 3rd of November 1903 when
the Republic of Panama was born. c

Pintada

Muchas personas conocen que los famosos "Panama Hat"
no son realmente originarios o fabricados en Panama, sino
en Ecuador. Sin embargo, no muchos saben que existe un
verdadero y genuine "Panama Hat", originario de Panamai.
El mis famoso de ellos, "el sombrero pintao", se fabric en
el pequefio y encantador pueblo de La Pintada, cerca de Pe-
nonom6, en la provincia de Cocl6. Afios atras, en la 6poca de
las colonies espafiolas, luego de que Panama fuera saqueada
por el pirata Henry Morgan en 1671, Penonom6 y La Pintada
fueron sede del gobierno espafiol en el istmo.

Penonom6, la actual capital de la provincial de Cocl6, fue
fundada en 1581 como San Juan Bautista de Penonom6 por
Diego de Villanueva; era un important enlace dentro del
camino de suministros desde Panama Oeste hasta mis alli
de Chiriqui. Hoy, es un pequefio pueblo con un encantador

The Home of the "Real" Panama Hat ... Penonome and
La Pintada

Many people know that the famous Panama hats are not from
Panama, but from Ecuador instead. Not many realize that
there is a "real" Panama hat that is actually from Panama.
The most famous of these, "the sombrero pintao," is made in
the charming little town of La Pintada, near the town of Pe-
nonome, in the province of Cocle. Penonome and La Pintada
date back to the early Spanish and, after Panama City was
sacked by Henry Morgan in 1671, for a short time Penonome
was the seat of the Spanish government on the isthmus.

Penonome, the present day capital of Cocle Province, was
founded in 1581 as San Juan Baustista de Penonome by Diego
de Villanueva. It was an important link along the supply road
west from Panama City to Chiriqui and beyond. Today, it is a
hustling bustling little town with a lot of colonial charm. It is
the provincial government seat and an important agricultural
center There are some interesting things to see in Penonome
... the old section is lovely and clean, an area of neat little mul-
ticolored pastel houses leading up to the plaza and church. On
San Antonio Street, there is a small, but comprehensive, muse-
um that depicts life previous to and during the pre-Colombian
era, as well as at the time of the Spanish Conquest.

Los ranchos eran hechos de palos, barro y pencas. El espafiol
construy6 una casa y la pint6, naciendo un nuevo concept
para aquellos que alli vivian. La casa "pintada", la primera
de la comunidad, se convirti6 en un punto de referencia. Con
una clara diferencia entire las demis viviendas, la casa se
convirti6 en un punto important para el drea, y la encanta-
dora villa fue conocida con el tiempo como La Pintada.

Un punto altamente habitado; existen interesantes remi-
niscencias de la civilizaci6n pre-colombina en la Pintada.
Petroglifos que described la vida diaria de aquel entonces
se encuentran por toda el drea; existen guias locales muy
voluntariosos que podran mostrarle los alrededores con su

Penonome is famous for its aquatic carnival celebration in
February. A carnival parade of beautifully decorated boats
floats down the Mendoza River with the queen and her court,
and the town parties in the best of carnival tradition for four
days.

Not far from Penonome is the El Cano archeological site,
discovered in the early part of the 20th century. It is an area
that was a burial and ceremonial site for the indigenous
tribes of the area long before the arrival of Europeans.

Off the Inter-American Highway and towards the mountains
about 20 minutes away from Penonome, is the village of La
Pintada. Also a colonial town with a rich history, it is nestled
the foothills. According to a legend told in the delightful little
restaurant on the plaza, La Pintada was a small community
of ranchos (palm roofed huts) when a Spaniard arrived to

made of sticks, mud, and palm fronds. The Spaniard built
a house and painted it, a new concept for those who lived
there. The painted house, "la pintada," a first for the com-
munity, became a landmark. Different from all the other
dwellings, the house was an important reference for the area

Recientemente La Pintada ha tenido un impulso econ6mico
adicional, debido al desarrollo de las bienes raices en el Area,
asi como por el proyecto canadiense de la Mina de Oro de
Petaquillas. Un proyecto algo controversial que puede ofre-
cer muchas ventajas econ6micas a la region, siempre que las
desventajas o costs ecol6gicos no los sobrepasen.

Toda el area es pintoresca, y no muy lejos puede encontrar
lugares que han sufrido pocos cambios desde la 6poca ante-
rior a la llegada espafiola. Ha sido siempre una zona agricola
con tradici6n de campo y cultivo que se remonta a miles de
afios. La gente es colaboradora y amigable y las vistas a la
montafia son espectaculares.

Air Panama no tiene un vuelo de itinerario a esta drea, pero
los vuelos "charter" estan disponibles para su conveniencia.
Es un agradable viaje en carro desde la ciudad de PanamA
(dos horas y media), 6 desde David (alrededor de 4 horas);
ademas, encontrard un servicio regular de buses desde ambas
ciudades.

tada is famous for its artisanal art of weaving and the "real"
Panama hat is made in La Pintada. Quite different from the
well known "Panama hat of Ecuadorian origin, La Pintada 's
"sombrero pintao, "painted hat, is woven in a circular pattern
that includes black stripes and sometimes black designs. Its
use in the countryside is universal among men and the hats
come in different qualities depending on their intended use.
The rougher hats shield farmers from the sun and the more
finely woven hats are used for dressier occasions. "El pintao "
is an integral part of the typical men's national costume, the
montuno. The art of hat-making is proudly passed from gen-
eration to generation and many families in the area dedicate
themselves to its confection and also weave everything from
purses to nativities. Recently La Pintada has had an economic
boost in real estate and the Canadian Petaquillas Gold Mine
project, a somewhat controversial venture that can offer many
economic advantages if the ecological disadvantages do not
out weigh them.

The entire area is picturesque and if you wander, not to far
off the beaten path, you will find places virtually unchanged
since before the Spanish. It has always been an agricultural
area with a farming tradition that dates back for thousands of
years. The people are helpful and friendly and the views of the
mountains are spectacular

Air Panama does not have regular scheduled service to the
area but charter flights are available. It is a pleasant car ride
from both Panama City (about two and a half hours) and Da-
vid (about 4 hours); there is also regular bus service from both

dificil de explicar a aquellos quienes asocian
la Navidad con la fria blancura del none. A me-
dida que la Navidad se acerca a Panami, una suave brisa
comienza a soplar, el cielo se vuelve mas azul y el aire mis
limpio. Hay casi un magico matiz dorado en el ocaso y las
estrellas que habian estado escondidas por meses comien-
zan a vislumbrarse. Para la primer semana de dickkinbr.
Panami es literalmente un destello de miles de luces y de
una exuberancia tal, que compile con las celebraciones de
los dias feriados de cualquier parte del mundo. La Navidad
panamefia es realmente una version homogenizada de las
muchas costumbres intcrnacionalcs quc sc han reunido en el
istmo a traves de los siglos.

El dia modern de Navidad, literalmente "llega marchando'"
a la ciudad de Panama; a principios de diciembre, es cos-
tumbre realizar un dc'filc organizado por la Alcaldia con la
participaci6n de importantes entidades civicas y comercial-
es. F; un event muy grande donde nifios de comunidades
remotas alrededor del pais son traidos a la ciudad con el
fin de disfrutar de este maravilloso desfile, a la vez que son

"nacimientos" que son tan complejos que toma semanas ar-
reglarlos. Algunas veces los comparten con el pAblico, los
esparcen por la casa y los llevan al jardin. Muchos son con-
siderablemente mas pequefios, pero no por ello menos apre-
ciados. Hay "nacimientos" que varian desde colecciones de
piezas europeas excepcionales y costosas, hasta las de plas-
tico mis coming o las figures de resina con las que los nifios
pueden jugar, y gozar de una experiencia interactive con su
religion. Esta tradici6n no solamente celebra el nacimiento
de Jesis sino la Epifania tambi6n. Los tres "Reyes Magos"

Los franceses y los norteamericanos trajeron sus tradiciones
a finales del siglo XIX. El drbol de navidad y el jovial bar-
budo vistiendo siempre su ropa de "invierno" fueron rdpida-
mente acogidos.

Una inclinaci6n por los despliegues brillantes incluye a los
chinos; con el pasar del siglo XX fuimos adoptando de el-
los el uso de fuegos artificiales para celebrar el 24 de dici-
embre a medianoche la llegada del Nifio Jestis. La Navidad
en Panama es mayormente un tiempo de alegria y gozo que
combine las tradiciones multiculturales para celebrar el amor
a Dios, la familiar y los amigos; es un tiempo de reflexi6n,
reconciliaci6n y de acci6n de gracias. Sin tener en cuenta
cualquier otra cosa que pueda suceder, las families se reinen
alrededor de suntuosas mesas el dia 24, asisten a la iglesia,
comen y been y son felices al anticiparse a la medianoche
cuando ponen el Nifio Jesus en el pesebre y le dan gracias
por sus bendiciones. Despu6s, los nifios abren sus regalos
atribuy6ndoselos tanto al Nifio Jesus como a Santa Claus.
Los j6venes salen a bailar mientras que el resto de la familiar
disfruta de la compafiia mutua de unos y otros. El 25 es un

Definitivamente la Navidad es un tiempo que conjuga cel-
ebraci6n y recogimiento, compartir con familiares y amigos,

The French and the North Americans brought their traditions
at the end of the 19th century. The Christmas tree and the
jolly bearded man, in his ever so "wintry" clothes, quickly
caught on.

A love for brilliant displays included the Chinese as the 20th
century adopted the use offireworks to celebrate the arrival
of Baby Jesus at midnight on the 24th of December. Most of
all, Christmas in Panama is a joyful time that combines mul-
ticultural traditions to celebrate a love of God, family, and
friends; it is a time of reflection, reconciliation and thanks-
giving. What ever else may be going on, families gather
together around sumptuous tables on the 24th, they attend
church and they eat, drink and are merry in anticipation of
midnight when they lay their Baby Jesus in the manger and
give thanks for their blessings. Small children then open
their presents, attributed to both "El Niio Jesus, Baby Je-
sus, and Santa Claus. Youth go out dancing while the rest of
the family enjoys each others company. The 25th is a quieter
day of visits and leftovers, and contentment in the spirit of

En Tierra Firme, ya no hay bochinche ni destellos de
rojo sobre la copa de los Arboles. Es que las ruidosas
guacamayas escarlata se han ido, tal vez, para siem-
pre. Sus peores enemigos, las quemas, la tala, la caceria fur-
tiva y el trifico de species, han hecho estragos en las colori-
das bandadas que alegraban los cielos del pasado.

Para las guacamayas escarlata, que ya casi han desparecido
de Centroam6rica, aim queda un sitio muy especial y remote
para vivir en libertad. Un destiny sofiado por los observa-
dores de aves del mundo: el parque national de Coiba.

En Coiba, la isla boscosa mis important de las Am6ricas,
estas aves emblemiticas y sociales se ven en gran cantidad
y han hallado su uiltimo refugio. Es possible encontrarlas ali-
mentAndose en los almendros o en las higueras, o volando en
pareja, como pinceladas carmesies sobre el verde intense que
presentan los bosques pristinos del archipi61lago, declarado
con justicia Patrimonio Mundial.

Por suerte, Panamd es un pais de abundancia y de muchos
tesoros naturales insospechados. A Coiba se suman otros im-
portantes ecosistemas, como el Parque Nacional Darien o el
Parque Nacional Chagres, entire una larga lista de areas prote-

En nuestro pais, como en muchos paises de Amnrica
Latina, la Navidad es algo serio. Su celebraci6n no
s6lo incluye el fervor religioso y la alegria de los
nifios, tambi6n la comida es protagonista important. Las fa-
milias compiten entire ellas por la mejor receta y se preparan
con tiempo para la celebraci6n, haciendo gala de secrets
culinarios que se pasan de generaci6n en generaci6n.

El menu simple, pero suculento, estd conformado entire otras
cosas por tamales, arroz con guandd, ron ponche, ensalada de
fiesta (papas) y el pemil, al que el pavo ha tratado de robarle
protagonismo con algin 6xito. Pues a pesar de que muchas
families han sustituido el pemil por el pavo, la mayoria aun
prefiere el primero; especialmente ahora que se han descubi-
erto sus bondades nutricionales. Al cerdo con algo de justicia
tardia se le reconoce como la nueva came blanca.

La receta que ofrecemos a continuaci6n es una de las mu-
chas variantes de este spectacular plato. Buen provecho...

In Panama, as in many Latin American countries, Christ-
mas is serious business. It is more than just religious
ervor and children's glee ... food also plays an impor-
tant role... Families compete for the best recipes ... recipes
filled with secret ingredients and culinary traditions passed
from generation to generation.

A Christmas menu is simple, yet succulent, and among other
dishes, you will always find tamales, rice with pigeon peas,
rum punch, and party salad (potato salad with beets), with
the "pernil" (roasted leg of pork) as the centerpiece. The
turkey has tried to usurp the "pernil" and has had some suc-
cess as many families now serve it, but the "pernil" remains
the favorite, especially now that its nutritional values have
been revealed. Pork, better late than never, is being touted as
"the other white meat."

The recipe that follows is one of many spectacular varia-
tions of a wonderful dish. "Buen provecho ........and Merry
Christmas!"






Pernil Navidefio Deshuesado

Ingredientes:
* 1 pemil de cerdo limpio y deshuesado (aprox. 10 a 12 lbs)
* 2 cebollas blancas medianas
* 8 dientes de ajo
* 2 tazas de vino blanco
* V2 taza de salsa Worcestershire
* 1 taza de jugo de pifia
* 1 cucharada de oregano seco
* 1 hoja de culantro
* 1 cucharada de mostaza
* Sal y pimienta negra
* Hilo (pabilo) para amarrar


Christmas "Pernil" (deboned)

Ingredients:
1 "pernil" (leg ofpork) deboned (approx. 10 to 12 lbs)
2 medium onions
8 cloves of garlic
2 cups of white wine
/2 cup of Worchester sauce
1 Y cup pineapple juice
1 tblsp. dried oregano
1 leaf of culantro
1 tblsp. prepared mustard
Salt and pepper to taste
(Twine for tying off)


Procedimiento:
El dia anterior preparar una marinade, licuando en el vino la salsa worcestershire y el jugo de pifia con el resto de los ingredients. Con esta mezcla untar el pemil (que
debe estar abierto y parejo) por todas parties, enrollarlo y amarrarlo con el hilo y dejarlo reposar toda la noche.
Al dia siguiente, sacarlo del refrigerator, dejarlo refrescar y colocarlo en una fuente de homear honda; cubrir con el liquid donde se marin6 y llevarlo al homo tapado
con papel aluminio por aproximadamente hora y media a 350 F. Destaparlo y retirarle el exceso de liquid y reservarlo para preparar una salsa. Volver a colocar el
pemil en el horno, sin tapar, y dejar que dore aproximadamente entire media hora y tres cuartos de hora. Cuando est6 dorado retirarlo del horno, dejarlo reposar un rato y
rebanarlo (una forma segura de saber si estd listo es utilizando un term6metro de lectura rdpida cuando se consiga una temperature interior de 1550 F-). Desglacear la

One day ahead, prepare the marinade. Blend the wine, Worchester sauce, pineapple juice and the next four ingredients in the blender. Soak the open leg slab with the
mixture then roll it and tie it off with the twine; let it rest, refrigerated, until the following day. Remove from refrigerator and place in a deep roasting pan; pour the
marinade over the pork, cover with aluminum foil and cook in an oven at 350o E for approximately 11/2 hours. Uncover and pour off all juices and reserve, return to
oven for about to % hour or until golden. Remove from oven and let rest before carving. (a sure way to test its doneness is to use a thermometer ... if the thermometer
registers 155o, it is ready). Deglaze the pan with a bit of broth or wine. Reduce the liquid and strain or thicken as necessary, serve in a gravy boat on the side.

C on su aspect de "cera" y sus p6talos blanco marfil
con forma de paloma, la Flor del Espiritu Santo debe
haber sido de gran inspiraci6n para los misioneros
espafioles cuando llegaron a estas tierras; realmente tiene
una apariencia y olor celestial cuando florece.

Es una orquidea terrestre que se puede encontrar desde Costa
Rica hasta Colombia y Ecuador. Florece durante la 6poca
lluviosa de los meses comprendidos entire julio y octubre.
Desde un maduro pseudo bulbo brota un tallo que puede al-
canzar cerca de 1.5 metros (5 pies), y la fina fragancia florece
entire lo que parece ser un nido de pequefias palomas im-
pregnando todo el largo tallo. Sus hojas son largas, delgadas,
plisadas, y un verde profundo, aproximadamente de 100cm
(40 pulg.) de largo por 15cm (6 pulg.) de ancho. La Flor del
Espiritu Santo usualmente se encuentra en el perimetro de
los bosques mis hfimedos en regions montafiosas como
Cerro Gaital y El valle de Anton, pero algunas veces puede
encontrarse en lugares mis profundos del bosque, creciendo
en los troncos de los arboles.

Es una especial en peligro de extinci6n, por lo que nunca
deberia ser tomada del bosque o comprada en la calle. La

dove center, the The Flor del Espiritu Santo or
Holy Ghost Orchid, Panama's national flower,
must have been an inspiration to Spanish missionaries when
they arrived, for it does indeed appear and smell heavenly
when in bloom.

It is a terrestrial orchid found from Costa Rica to Colombia
and Ecuador, blooming during the height of the rainy sea-
son between the months of July and October. The mature
pseudo bulb shoots up a stalk that can reach up to about 1.5
meters (5ft.) and the luxurious fragrant blooms of nesting
doves stack themselves along its entire length. Its leaves are
long, narrow, pleated, and deep green, approximately 100cm
(40in.) long by 15cm (6in) wide. The Espiritu Santo is usu-
ally found in the perimeters of the most humid forests in hilly
regions like Cerro Gaital and El Valle de Anton, but it can
sometimes be found deeper in the forest growing from tree
trunks.

It is a most endangered species and should never be taken
from the forest or purchased in the street. Over collection
and destruction of its habitat are primarily responsible for its
