Officials to seek additional
federal funds for foreclosures

PORT ST. LUCIE Port St. Lucie
officials are planning to seek anoth-
er $11 million in federal funds to
deal with foreclosed homes.
Tricia Swift-Pollard, director of
community services, said if the
application is successful, the
money won't likely come until
around the end of the year.
Earlier this year, the city received
$13.5 million in Neighborhood Sta-
bilization program funds from the
U.S. Department of Housing and
Urban Development.
The city is hoping to buy 100
homes with that money and
then use the money from the sale of
those home to buy more but so
far, has purchased 11 and is under
contract to get five more. About
$700,000 has been spent, Ms. Swift-
Pollard said.

for helping save a boy hit by
a car.
The incident last April
could have ended tragically
were it not for staff at Physi-
cians Intermediate Care
leaving work, a doctor said.

cian at Physicians Immedi-
ate Care, says it shows the
need for a calm response,
rather than letting emo-
tions of the moment take
over.
Staff members of Physi-
cians Immediate Care were
leaving work on April 23
and heard a lot of commo-
tion coming from the McIn-
tosh Street neighborhood
behind the business.
Rhonda MacMillan, a
medical assistant, said she
discovered a boy had been
hit by a vehicle. Kevin
Romero, the boy, was skate-
boarding on his driveway. A
vehicle struck him after he
went into the street.
"People were crying,
screaming and arguing, but
apparently, nobody had
called 911," said Dr. Offen-
hartz said.
While Ms. MacMillan
tried to help the boy, Kevin,

But Mr. Iken said he
believes Chuck Proulx, the
city's director of parks and
recreation, purposely put
the sign right in front of
the booth.
Mr. Proulx said he didn't
agree with the Treasure
Coast Tea Party, Mr. Iken
said.
Mr. Proulx could not be
reached for comment
despite repeated tele-
phone messages.

FreedomFest booth with
police officers this week.
"Their goal was to hide
our group so that nobody
would see our booth," said
Carl Iken, a Treasure Coast
Tea Party organizer. "It
was a violation of our
rights to freedom of
speech and freedom of a
assembly."
But city officials said
they protected the rights
of Treasure Coast Tea
Party members. The group
advocates limited govern-
ment and opposes federal
bailouts.
Traditionally, political
and religious organiza-
tions have not had booths
at FreedomFest, Edward
Cunningham, the city's
director of communica-
tions, said in an e-mailed
statement.
This year, he said,
"though some people may
have preferred to exclude
the groups from the event,
city management was
unwilling to limit free
speech rights, or to spend
taxpayer money on need-
less legal costs."
Instead of excluding
those groups, he said, the
city posted a sign stating:
"The city of Port St. Lucie
does not endorse, support
or condone the views or
products of the organiza-
tions or individuals in this
section. However, we are
required to make this
space available to avoid
the cost of litigation."
Mr. Iken said only his
organization and Sonlight
Community Church were
isolated from other
booths in the section.
"You couldn't see our
booth because the sign
was blocking our booth,"
he said.

a family who took in a dog that was
once abused, a Port St. Lucie
teenager last week said she
enjoyed a project to help the
Humane Society of St. Lucie Coun-
ty.
"It was a great experience," said
Julianna Grillo, 15, a student at
Treasure Coast High School.
Julianna and other high school
students delivered several boxes of
pet food, stuffed animals and
other items the Humane Society
uses at its shelter.
The students, from Fort Pierce
and Port St. Lucie, were part of
Youth Leadership St. Lucie, a sum-
mer program at Indian River State
College that provides skills for
them to become future leaders,
saidWendyWolff, an advisor.
Ms. Wolff said the students
decided to help the Humane Soci-
ety as their yearly community
service project.
They collected donations and
also got other entities involved in
seeking donations. Those included
the St. Lucie County Sheriff's
Office, the Fort Pierce Police
Department, the Boy and Girls
Club of St. Lucie County and the
Port St. Lucie Civic Association.

"We hope that is going to
allow us to buy them a little
more quickly," she said.
Of the 11 homes bought
with the initial funds, six
were demolished because
of the conditions, Ms.
Swift-Pollard said. One of
those was a former mari-
juana grow house that had
been stripped, she added.
The other five are under
contract for renovations
and that work will be com-
pleted before the city seeks
buyers, she said.

Dr. Offenhartz, who went to
the scene and got Kevin
breathing normally until the
ambulanced arrived.
Had his staff not been
leaving work at the time, Dr.
Offenhartz said, he believes
the boy could have suffered
brain damage or died.
The boy was transported
by helicopter to St. Mary's
Regional Medical Center in
West Palm Beach.
Now, Kevin is well on his
way to recovery, said Elvis
Romero, his father.
"Luckily, it happened to
be our closing time and
someone saw what was
going on," he said. "But not
everyone has Physicians
Immediate Care in their
front yard."
He said peopleneed to
seek help immediately by
calling 911.
Ms. MacMillan said she
has visited the family a cou-
ple of times and was pleased
to see Kevin recovering.

No need to widen roads
This is about the widening of roads in Port St. Lucie. We
don't need them widened. The people in office need to be
kicked out. They are wasting our money. We have to get rid
of these dummies. Let's get on board at election time and
get them out of office.
Code enforcement
What about outside storage in residential areas? There are
old cars and boats and furniture all over the place. The peo-
ple at code enforcement should get out of their office and
ride around the county, and not just wait for complaints.
Those who complain are threatened, so they don't com-
plain. They could just sit in their air-conditioned cars and
pick an area of the county and look at what's going on.
Revise system
I have a son who's incarcerated in Miami. He was sen-
tenced to 27 years. He had no weapons or drugs. It was a
racketeering charge. He has filed motions to have his sen-
tence reduced, but they've done nothing. He doesn't
deserve this sentence. But they've done nothing. I'm very
disturbed by the system.
No kids at the bar
What happened to the state laws on alcohol? Aren't they
supposed to be watching what goes on at places that serve
alcohol? I was at a restaurant and there was a child at the
bar. They serve food to children while others drink. Where
are the MADD mothers?
Too much Michael
Why, when Michael Jackson died, did every news channel
have it on all the time? A black entertainer dies and that's all
they can cover? What happened to Farrah Fawcett? I didn't
care for him, anyway.
Religious channel
Why have they taken the religious channel EWTN off the
TV? It's a shameful that they would take that channel off the
TV. There are a lot of seniors who want to watch that chan-
nel at home. Now you have to get a box, and some of us
can't afford one. I really like that Catholic channel. My hus-
band wants to watch what he wants to watch, and now I
can't see that channel.
National health care
If you think it is smart for the government to take over the
nation's health care system, consider the care currently
being provided to our servicemen and women by the Veter-
ans Administration.
The VA admits the backlog of claims continues to grow
and is approaching 1 million. Many of these young people
have been severely wounded in Iraq and Afghanistan.
While the bureaucrats struggle to catch up, some injured
vets are being forced into paying their medical bills using
their own personal credit cards.
What are kids learning?
One half of public school seniors do not recognize the
names of Winston Churchill or Joseph Stalin nor can they
locate the half-century in which World War I occurred. What
does this tell about the state of the nation's public schools?
Fly a flag
Our soldiers in Iraq and Afghanistan are risking their lives
to protect our freedoms.

Dispelling a few common computer myths
There are a lot of
myths surrounding
computers out
there, some based on
reality, some based on
"the way technology used
to be" and some based on
plain old fear and para-
noia.
Some computer myths
tend to be so prevalent
that I often see veteran
computer users falling
prey to some of them.
This week I thought I
would try to dispel some
of these myths.
The first myth is, "if you
connect to the Internet,
you will immediately
become a target for some
hacker who is out to steal
your identity."
This myth is born out of
paranoia and misinforma-
tion. We have all seen the
stories in the news, about
some hacker getting
caught accessing some big
company database or
about some poor people
getting their identities
stolen, but the fact of the
matter is, most hackers
just aren't interested in
you.
Hackers tend to go after
"big" targets, such as
corporate databases, and
don't spend too much
time hunting individual
end users.
But that's not what the
Internet security software
companies want you to

think. There is a big
market for computer
security programs and
firewall software, but if it's
not configured or installed
correctly (which is most of
the time) it can bring your
machine to a crawl and
still leave you vulnerable.
As long as you have an
up-to-date anti-virus
program installed and
running, and have all the
current operating system
updates installed, you
should be safe plugging
your machine into the
Internet.
If it's identity theft you
are worried about, I would
be more concerned about
all those big corporate
entities out there that
already have your person-
al information on file.
It's databases such as
those that are the real
targets. Why take the time
to hack into one user's
machine for one identity,
when there are so many
other systems out there
that hold thousands (even
millions) of identities in
their databases?
Another common myth
is, "regularly defragging
my hard drive will make it
run faster."
This myth has its origins
from the way technology
used to be. Sure, if you are
running an old 486
machine with Windows 95
and a 1 gig hard drive,
defragging it periodically
will clean things up a bit
and give you a noticeable
increase in performance.
If, on the other hand,
you are running some-
thing a little more modern
(any machine built within
the last five years) defrag-
ging the hard drive all the
time to increase perform-
ance is often just a waste
of time.
Any increase in per-
formance gained by
defragging will typically
be un-noticeable. Sure, it's
nice to see all those red
areas turn blue when you
do defrag a modern
machine, but don't be
fooled. You aren't gaining
much. I will concede that
running defrag periodical-
ly to "tidy up" is good
practice, but it's not the
cure-all that some people
still think it is.
The next myth comes
from unclear advertise-
ments that some comput-
er manufacturers run.
Many ads today for new
computers tout their
systems as being "wireless
ready" right out of the
box. And, to a degree, this
may be true, with things
such as WiFi chips being
built into motherboards,
but the thing the ads tend
to leave out (or bury in
fine print) is that you need
to be in an area of wireless
service for it to work.
If you don't have wire-
less Internet access and
are contemplating buying
a new computer that's
wireless ready, because
you are under the impres-
sion that it will connect to
the Internet right out of
the box, you are about to
make a mistake.
All this "wireless ready"
stuff means is that you
won't need any extra
hardware to connect to an
existing wireless service. It
doesn't mean that you can
just turn it on and be
online as some people
have been led to believe.
In order for these
systems to work, they
need to be in a wireless
"cloud;" either your own
wireless service, DSL or
cable plugged into a
wireless router, or a public
wireless hotspot, such as
those found in many
hotels, airports and coffee
shops.

Summer is a good time for small changes
It's summertime, a
good time to think
about ways to relax,
even for a little while.
While vacations and spa
visits may be out of reach
for a lot of us, there are
things we can do to take
mini-breaks to help take
some of the pressure of
daily life and send it
packing for a little while.
I found these tips,
which I've adapted, in a
pamphlet from the YWCA
of Greater Pittsburgh.
Yes, I am still going
through boxes and
clearing things out; it's a
resolution that will
probably take all year.
Sometimes, though, I
come across some useful
things.
Instead of starting a
diet, pick one thing that
you will not eat for one
week and see how it
makes you feel. If you're
successful, do it for
another week and per-
haps take away something
else, or substitute a fruit
or vegetable for the item
you've removed.
Do one thing you're
afraid to do. It doesn't
have to be sky-diving. Join
a group, speak to the
person next to you at the
gym or try an exercise
class. If it doesn't work
out, try something else.
Nurture yourself. Get a
massage or a manicure. If
it's not in your budget,
how about a polish
change? Even a nice hand
cream can make you feel
pampered. Feeling
pampered is a state of
mind. It doesn't have to
cost a lot of money.
Do a new exercise that
seems fun and challeng-
ing. Try yoga or tai chi or
take a dancing class.
Learn something new
and exciting about
yourself. As I have men-
tioned before, I really love
my yoga classes. What has
surprised me is how
strong and flexible I am.
Find new ways to
laugh at stress and at
yourself.
Walk in the park with a
pet or a child. We have
beaches here. If you don't
have a pet or a child,
reach into your inner
child and remember how
much fun it used to be to
walk in the sand, pick up
shells or wade in the
water.
Go on a date with
yourself at least once a
month. Even if you only
go out for coffee, taking
time for yourself is
important to refresh your
mind and spirit.
Ask for help when you
need it and feel strong
doing it.
Do something fun for
someone else or the
community. Giving back
is a great way to banish
the blues. Thinking about
bringing a smile to
someone else also brings
one to you.

that, he had designed pools
for many of the well-known
builders on the Treasure
Coast.
He founded Harbor Bay
Pools because he wanted
the freedom to build pools
as they should be built, with
the utmost in quality, aes-
thetics and durability.
Harbor Bay Pools does vir-
tually everything from start
to finish with in-house staff,
including custom design,
construction, renovation,
maintenance and service..
Employees do all the
craftwork, as opposed to
subcontractors, to maintain
quality. Harbor Bay special-
izes in difficult projects such
as waterfront pools and
infinity edges, while a large

majority of their projects are
still fairly simple and ele-
gant.
And, Mr. Proffitt said, cus-
tomers can be assured they
have someone to turn to if
they need help after the pool
is complete.
"We're not going any-
where," he said. "We're here
to stay."
At the outset, Harbor Bay
staff members meet with
potential customers several
times to assess the space for
the pool, the needs of the
family and what the house-
hold can afford, he said. "It's
important to see the vision
through the mind's eye of
the customer, to ensure that
their dreams are realized
properly."
Some companies may
reduce prices by cutting fea-
tures, Mr. Proffitt said.
But Harbor Bay sees a
pool as a long-term invest-
ment. The business wants to
produce a product the cus-
tomer can afford, but also
one that will exceed their
expectations in the long run.
Typically, Mr. Proffitt said,
Harbor Bay holds itself to a
higher construction stan-
dard than most, to make
sure the pool stands the test
of time.
A pool may meet the
immediate needs of a fami-
ly, but if features are com-
promised, he said, problems
may occur later on.

Aren't you amused by all the cry-babies expecting "some-
body" to get their money back from Bernie Madoff?

An Open Letter to Florida Car Dealers.
Eliminate the "Dealer Fee".
Fellow Florida Car Dealers, if you don't
know me, I should tell you that I don't profess
to be some "holier than thou" car dealer who
was always perfect for the past 38 years.
When I look at some of my past advertising
and sales tactics, I am not always proud.
But I have evolved as my customers have
evolved. My customers' expectations, level
of education and sophistication are much
higher today. Your customers are no different.
My remarks are made sincerely and with a
positive intent toward you and your custom-
ers. I am not trying to tell you
how to run your business. I "My cu
am suggesting a change that
will reward both you and your expectat
customers.
Virtually every car dealer ofeduca
in Florida adds a charge to
the price of cars he sells, a Sophistic
"dealer fee/doc fee/dealer
prep" fee ranging from $500 much hig)
to nearly $1,000. This extra
charge is programmed into
your computer. It has been made illegal in
many states including California, but is still
legal in Florida. The reason you charge this
fee is simply to increase the price of the car
and your profit in such a manner that it is not
noticed by your customers. This is just plain
wrong. I used to charge a dealer fee ($495)
and when I stopped charging it a few years
ago it was scary. But I did it because I could
no longer, in good conscience, mislead my
customers. Just because everybody else
was doing the same thing, did not make it
correct.

Now, here is the good news. After eliminat-
ing the dealer fee my profit per car did drop
by about the amount of the dealer fee, but
my customers realized I was now giving them
a fair shake and quoting a complete out-the-
door price with no "surprises". And the word
spread. My volume of car sales began to rise
rapidly. Sure, I was making a few hundred
dollars less per car, but I was selling a lot
more cars. I was and am selling cars to many
of your former customers. My bottom line
has improved, not because I eliminated the
dealer fee, but because I was

Counseling Service of the
Treasure Coast offers the
following tips to declare
independence from credit
card debt.
Create a budget. Review
how you spend your money
and look for places to make
changes. Small changes
can add up to big savings.
Bring your lunch to work
instead of eating out. Make
a list and stick to it when
you grocery shop. Carpool
when you can to save on
community expenses.
Limit your use of credit.
Think before you buy. "Do I
really need this? Can I pay
for it with cash?" If you
answer no to either ques-
tion, skip the purchase.
Ideally, only use credit as
you would cash, when you
know you can pay the bill
off on-time and in-full.
If you must use credit,
use the card with the lowest
interest rate. Remember,
using a credit card is like
taking out a short-term
loan. If you're not careful to
minimize charges and
make payments on time,
this short-term loan could
become a long-term finan-
cial and credit disaster.
Use cards with no
annual fee. If you don't
carry a balance, get a card
with no annual fee and a
25-day grace period
between the day of the pur-
chase and the day the
interest meter starts run-
ning. Be sure to read and
understand the terms of
your credit card agreement.
Be aware of hidden fees
that might impact you.
Don't carry more than
two or three credit cards,
and be careful in choosing
your cards. With the num-
ber of offers for credit cards
in the mail today, it is
tempting to sign up for
credit cards you don't really
need. Offers often include
low initial rates to encour-
age you to apply, and rates
jump after an introductory
period.
*Beware of cards offering
cash-back incentives or
special bonuses for signing
up, especially if you aren't
able to pay the balance in
full every month, Offers

true usually are.
*Make more than the
minimum payments. Con-
sumers who can't pay their

reading sessions are begin-
ning on various days and
times at the Morningside,
Fort Pierce and Lakewood
Park Branch Libraries. The
program is free and available
to children in first grade and
older. Spots go very quickly,
so parents need to call early
to sign up their children.
"Walls of Art" at the
Morningside Branch Library
will feature paintings by two
area artists. The "Walls of
Art" display is ongoing and
will change monthly, featur-
ing different local artists.
Wednesday at the
movies is held at the Fort
Pierce Branch Library, start-

Many vintage pieces of
jewelry are found with
hematite in sterling silver.
This is a gemstone that has
been used for centuries.
The name hematite
(Greek-blood hema)( in
some countries, also called
bloodstone) is derived from
the fact that, when cut, the
saw coolant becomes col-
ored red. The English
name bloodstone, however,
is applied to a chalcedony
variety. In mineralogy, well-
crystallized hematite vari-
eties are called iron luster,
finely crystallized ones red
iron ore or red ironstone,
and radial aggregates are
called red glass head.
When cut into very thin
plates, hematite is red and
transparent; when pol-
ished it is metallic and
shiny. Often mistakenly
called black diamond ,
these will not go through
any heat processes.
Sometimes these are
bead-set in jewelry and
many times just epoxy
holds them in the jewelry.

gems in hematite for any
repairs a person might
need. Just bring in the
piece that needs to have
any hematite replaced as it
is not an expensive gem-
stone.

At the turn of the 20th
century, Ormond Beach was
known as a warm weather
playground for the rich and
famous, but you don't need
to be a Rockefeller to enjoy
fun summer days in their
old stomping grounds.
With a diverse mix of nat-
ural beauty and historic
charm, Ormond Beach, just
north of Daytona Beach in
Volusia County, is the per-
fect spot for a one- or two-
day respite.
The famous Ormond
Loop is a designated Florida
Scenic Highway, 33 miles of
protected riverside and
interior landscapes with
many points of access and
scenic pull-out spots. Along
the Loop are plenty of free
or inexpensive parks, out-
door activities, cultural and
historical sites, shops, and
restaurants to satisfy every-
one in the family.
Begin at the corner of
Granada Boulevard (State
Road 40) and Beach Street,
traveling north.
Starting out in the cool-
ness of early morning is best
(parks open at 8 a.m.), and
don't forget to bring your
hat, sunglasses, sunscreen,
insect repellant, sturdy
shoes and a camera, since
there will be many great
photo opportunities. More
than 150 plant species and
loads of wildlife including
deer, tortoises, birds and
butterflies inhabit Bulow
Creek, Tomoka, and North
Peninsula State Parks, all
with entrances on the Loop.
All three parks have desig-
nated Great Florida Birding
Trails, so pack your binocu-
lars and checklist if you plan
on birding.
Tomoka State Park offers
hiking and biking trails,
camping, picnicking, and a
boat ramp, plus points of
interest such as the Tomoka
Mounds and Middens, an
archaeological site made up
of burial mounds and shell
middens, evidence of the
area's early Native American
settlements. The Fred Dana
Marsh Museum hosts a col-
lection of this local sculp-
tor's works and a variety of
natural and historical
exhibits. Park Services Spe-
cialist John Lohde said all
park activities are highlight-
ed on the Web site at
www.floridastateparks.org
and brochures are available
at the park entrance. He
suggests calling ahead to
reserve campsites.
Follow the Loop east,
along Walter Boardman
Lane, southeast to High-
bridge Road, and instead of
traveling down John Ander-
son Drive, go straight

hotel and outdoor concert
venue.
Special events at Destina-
tion Daytona include a
Biker Block Party on the
first Saturday of the month
with live music, a bike
show, free BBQ and a vari-
ety of vendors. A Swap Meet
on the second Sunday of

McPherson, vice president
of Florida Atlantic Universi-
ty's northern campuses, was
recently honored with Sen.
Ken Pruitt's Florida Senate
Medallion of Excellence
award for her 36 years of
service in Florida's public
education system.
Ms. McPherson will retire
on June 30.
"For years we have relied
on Gerri McPherson's
tremendous 'can-do' spirit
and genuine talent as a
highly effective leader at all
levels of education," said
Sen. Pruitt. "Her tireless
dedication has left a lasting
mark on the Treasure Coast
region and the state of Flori-
da. The medallion is a way
to honor her outstanding
accomplishments and to
recognize the conclusion of
her amazing career."
Ms. McPherson took on
her role as an campus vice
president in 2004, after serv-
ing for three years as a uni-
versity board of trustees
charter member.
She currently oversees
FAU's Treasure Coast cam-
pus in Port St. Lucie and the
John D. MacArthur Campus
in Jupiter. She is credited for
significantly strengthening
the partner campus opera-
tions and local outreach,
making FAU's northern
presence an integral part of
the university and the com-
munity.
Prior to her work at FAU,
Ms. McPherson was an edu-
cator and an administrator
with St. Lucie County public
schools for 27 years. During
that time, she was recog-
nized as an outstanding
principal in Florida for both
elementary and secondary
schools. She was principal
of Lincoln Park Academy in
Fort Pierce when it was
ranked 21st in the nation by
Newsweek and The Wash-
ington Post.

Pirate to bring magic to library

FORT PIERCE Sean
Driscoll has been entertain-
ing children since he was
15. A classical guitarist, he
was selected as a "Young
Artist" in Atlanta and given
the opportunity to tour area
schools. He quickly discov-
ered that kids liked his
songs and stories and he
enjoyed the freedom and
fun of a children's perform-
ance.
Mr. Driscoll received a
degree in classical guitar
from Florida State Universi-
ty and taught guitar at the
university level, but his love
remained entertaining chil-
dren and he has made it his
life's work. He brings one of
his stories, "Pirate Goodie
and the Magic Chest" to the
Fort Pierce branch Library
on July 22 and he spoke
recently about why he
prefers entertaining chil-
dren.
"I taught guitar at the uni-
versity level and I didn't
enjoy it," he said. "I'm not
into being perfect. There's
flexibility and fun in a show
for kids. There's huge room
to improvise. It's less con-
stricting and I have a really
good rapport with the chil-
dren. My premise is buf-
foonery and it appears I'm
making mistakes all the
time. There's a tremendous
amount of interaction," he
said.
Mr. Driscoll works alone,
but is hardly alone on stage.
He uses puppets and inter-
active animated characters
to move the story along.
In "Pirate Goodie and the
Magic Chest," the hapless
pirate, Goodie Twoshoes,
has a magic chest, but he
doesn't remember the

Mr. Driscoll is so busy
that he has turned away
work and is looking for a
south Florida connection to
take over those shows. The
job is physically demand-
ing, and he thinks it would
be a great opportunity for
someone between 25 and
45.

The evening really
belonged to the graduates
of the center and the
adults who have per-
formed in shows over the
past 10 years.
It's hard to single any-
one out, but "I Dreamed a
Dream," from "Les Miser-
ables," as sung by Megan
Moran, Heidi Condon,
Colleen Phillips and Jean
Ferreira, brought a tear.
The ensemble numbers
were crisp, the smaller
numbers funny or
poignant, as intended.
It was wonderful to see
so many grads on the
stage together again.

ences like that, report
them to the store manager,
and don't make the same
mistake twice.
Rinse the chicken and
remove any fat you can.
Soak in cold salted water
for about 1 hour; this is
called "bleeding the
chicken." It makes the
meat taste fresher.

(CHICKEN WITH
RICE AND PIGEON
PEAS)
Serves 4
A few years ago I wanted
to do something different
with chicken, different and
easy. I searched through
my cookbooks and could-
n't find a recipe for Span-
ish-style chicken and rice.
I remembered a rice recipe
my Mexican friend Lucy
made, and I used what she
taught me to make my
dish.
Lucy has since gone to
be with the Lord, but she
lives on in my memory.
She used a seasoning
called sazon goya con
azafran. You will find it in
the Latin-American
section of the supermar-
ket. It's a seasoning that
comes in a box. The box
contains several packets.
Remember, the recipe is
an original. If any of my
Latin-American readers
have a recipe to share, I
would be delighted.
I added gandules for
extra texture and protein.
Make it as hot or mild as
you choose.
Chicken parts, allow at
least 2 pieces per person
1 tablespoon extra
virgin olive oil, canola
oil or cooking spray
1 large onion, wedged
and sliced
4 large cloves garlic,
chopped
4 large bell peppers, half
red, half green or any
combination
1 15-1/2 ounce can of
whole tomatoes
2 cups chicken broth,
homemade or canned
2 packets sazon season-
ing
1 teaspoon oregano
7 or 8 sprigs fresh Italian
parsley (chopped) or 2
tablespoons, dried
Salt and pepper to taste
Few shakes crushed red
pepper
1 16-ounce can gand
ules (found in Lati
American section)
1 cup raw white rice
Remove skin and fat
from chicken. Do not use
wings for this dish. Save
them for another time.
Soak chicken as explained.
Cut and seed peppers,
slice and set aside. In a
large skillet that has a
tight-fitting cover, saute
chicken lightly in oil or
cooking spray. Remove
chicken and set aside.
Add onions and garlic to
skillet and saute until
golden. Smash tomatoes
and add with juice, sea-
sonings and broth. Cook
about 10 minutes.
Return chicken to skillet,
cover and cook about 20
minutes. Add rice, gand-
ules and peppers. Cover
and cook until rice is
tender and peppers are
tender-crisp. Add more
broth or water if necessary.
NOTE: If you prefer to
use brown rice, cook it
half-way before adding to
the skillet.
KIM'S CHICKEN OLE
Serves 6
Regular or low fat
This can be a very high-
fat or low-fat meal,
depending on your choice
of cream cheese and chips.
Kim insists the only salsa
to use is Pace and the only
chips to use are Doritos.
These choices I leave up to
you.
2 whole boneless chick
en breasts
2 8-ounce packages
cream cheese (regular,
light or fat free)
1 small jar salsa (mild,
medium or hot)
1 bunch scallions (green
onions), thinly sliced,
tops and all
Nacho cheese chips
(regular or low fat),
about 1 to 1-1/2 cups,
crushed
Trim all fat and nerve
from breasts. Separate
lobes and cut each in half
by holding your hand atop
the breast and slicing it in
half to make a thin cutlet.
Mix softened cream
cheese, salsa and scallions
together. Stuff and roll or
fold each fillet. Place seam
side down in casserole.
Cover and bake in a 350-
degree oven for about 45
minutes. Top with crushed
chips. Serve with rice.
NOTE: Try Success-
brand brown rice. It cooks
in 10 minutes.

nity yard sale, benefiting
Molly's House, will be
held tomorrow, July 11
from 8 a.m.-noon at
Hometown News head-
quarters in Fort Pierce.
Jungle Adventures
Nature Park and Zoo,
based in Christmas, will
have staff and animals on
hand. Safari Todd, and
members of the educa-
tion department, will
provide animal interac-
tion, along with conser-
vation education briefs
during the event. There
will be opportunities for
photos.
Molly's House provides
temporary housing for
patients and families
receiving medical care on
the Treasure Coast.
For a $35 tax-
deductible fee, individu-
als, businesses and ven-
dors receive a 10-foot by
10-foot booth to display
items at the event.
"If people take a booth
for $35, then anything
they take in is theirs to
keep," said Louise Mur-
taugh, executive director
of Molly's House.
Ms. Murtaugh encour-
ages the community to
take advantage of the
yard sale, as opposed to
holding individual garage
sales because, "collec-
tively, it will draw a larger
crowd, so there will be
more people and more
opportunity to sell their
items."
Additionally, Home-
town News is sponsoring
a raffle featuring items
donated by local busi-
nesses and community
members.
So far, items have been
donated by Wal-Mart, St.
Lucie Battery & Tire,
Heathcote Botanical Gar-
dens, Savanna Club Golf
Course, Wada Wash car
wash, McKee Botanical
Gardens, A Day of Delight
Spa and a $50 gift certifi-
cate to White City Mer-
cantile.
All money raised from
raffle sales will also bene-
fit Molly's House.
"Last year's event
raised $1,000, so we hope
we can raise at least that
much and more this
year," Ms. Murtagh said.
Those who can't partic-

support Molly's House.

Playing hilly course has its challenges
Something that we
seldom see here in south
Florida is a course with
lots of elevation change.
Therefore, when I travel, I
love to find a hilly course to
place a peg in the ground and
take a few swings.
Just north of Orlando, in
Clermont to be exact, lays
Sanctuary Ridge Golf Club.
Built on the steep slopes of
rolling hills, this track fits the
bill.
Formerly called Diamond
Players Club, Sanctuary Ridge
is now managed by Billy
Casper Golf. Under new
management, the course has
overcome a couple years of
neglect from its previous
owner and has again become
the fine course that many of
my colleagues rave about.

stretch those golf muscles.
Not only is there a plethora
of elevation change on this
layout, but there are no
parallel fairways and 18
distinctive holes. Depending
on the wind and pin posi-
tions, holes may play as
much as 50 yards longer or
shorter from one day to the
next.
Sanctuary Ridge features
five sets of tees, the longest of
which comes in at just more
than 7,000 yards. The shortest
tees play to a shade over 5,000
yards. When deciding on
which tees to play from, be
sure to remember that some
holes will play much shorter
or longer than the stated
length, due to the huge
elevation changes.
Here, course architect Terry
LaGree, created a course that
requires a tough mental
game. You have to decide the
proper line for your tee shot
on every hole. There are a few
holes where you can bite off
the comer, and some where
you need to play for a longer
approach just to get a
reasonably flat lie in the
fairway. At this course, one
cannot simply tee it up and
rip away without concern.

The course starts off with a
nice par-5. In order to keep
from having a blind second
shot over a hill to a green that
sits well below the fairway,
one must hit a solid and
lengthy drive. The second
hole is a long, downhill par-3.
From the back tees, it's
difficult just to see the top of
the flag. Proper club selection
is a must.
The next three holes play
up and down the hills. The
par-3 sixth hole is likely my
favorite. This medium-length
hole features a slightly uphill
tee shot to a green, guarded
by a deep bunker on the
front.
With the pin tucked up
front, just over the bunker, I
hit a perfect pitching wedge,
and my son watched as the
ball landed, hopped once
then rolled into the hole. My
first ace! I missed it, as I had
leaned down to pull my tee
from the ground after seeing
the ball bounce on the green.
The front nine ends with a
gorgeous par-4 that sits at the
bottom of a ravine with a lake
to the right. The green
however, sits half-way up the
hill, making your second shot
longer and more difficult that
you'd think.
The back nine begins with
the first drivable par-4. The
tee sits atop the hill, near the
ninth green. The green sits
down by the lake. It's a true
risk-reward hole.
The next three holes play
along the lake and marsh
before a long trek up hill to

the par-3 14th. From there, it's
onto some of the best
finishing holes I have played
in some time.
The 15th is a severe
downhill, dogleg-left, par-4
that requires precision from
the tee. I chose a poor line
and paid for it with a down-
hill lie from the rough for my
approach shot.
Sixteen is another downhill
par-4 with cavernous
bunkers guarding the
shortest route. Even a short
drive here leaves you with a
mid- to short-iron to a well
protected green.
The 17th is a short uphill
par-4 that is reachable from
the tee. Your approach is to a
shallow green, guarded by
several deep bunkers.
The finishing hole is the
longest par-4 on the course
and plays along the top of a
steep hill. Any tee shot going
left could wind up 40 feet or
more below the green. Again,
you find a deep bunker
guarding the green.
After our round, my son
and I enjoyed a nice lunch
and a few cold beverages to
celebrate my first hole-in-
one. It was truly a great day!
