PORT ORANGE Just
like in prehistoric days,
Spruce Creek's distinctive
black waters just keep
flowing past by James
Gamble's posh early 20th-
century camping retreat
off Taylor Road. Most
everything else though
increasingly hopeful is
still rather uncertain.
It's been a few months
since the site's benefactor,
the Daytona Beach Muse-
um of Arts and Sciences,
closed the historic nature
conservancy and park to
public view. That was a
few years after the city of

nomic storm will come first.
A half-decade ago, it was
high-density zoning work to
attract more high-rises. In
recent years, it was rezoning
sections of the riverfront to
encourage development
there. This year, it's ever more
tedious tinkering like a
current ordinance that would


allow campgrounds and RV
parks to be placed in heavy
business, commercial and
light industrial zones to
ensure that all respectable
and healthy offers can be
accommodated once the
economy improves.

First Pavilion tenant opens with a blockbuster

PORT ORANGE Call it
karma, fate, coincidence
or luck. Any way you look
at it it's got the Hollywood
touch written all over it.
"It" was the opening of
Avatar, the new James
Cameron epic that movie
critics are calling the


biggest blockbuster in
decades. Its showing
occurred the same week
as the area's biggest and
newest theater, Holly-
wood Theaters Pavilion
Stadium 14 in Port
Orange, opened with great
fanfare.
Hollywood Theaters is
the first business to open
at the new Pavilion at Port


Orange, an open-air shop-
ping complex at the inter-
section of 1-95, Taylor
Road and Williamson
Boulevard.
The official grand open-
ing for The Pavilion at Port
Orange is spring of 2010.
Hollywood Theaters
Senior Vice President for
Real Estate, Scott Hall,
said they were "thrilled" to


be the first tenant at The
Pavilion.
"The developers had a
vision and we're happy to
a part of this project," he
said, during a pre-opening
event last week. "The the-

Volusia County Tyra
Roberson often says that
her dad, Ty Wilson, has
multiple sclerosis, but mul-
tiple sclerosis does not have
him.
"My dad is an example of
someone who has multiple
sclerosis who also has a full
life," she said. "He does
everything everyone else
does."
The Ormond Beach
woman was recently named
Volunteer of the Year by the
Mid-Florida Chapter of the
Multiple Sclerosis Society.
She said there are many
people who cannot afford


the necessary drugs and
equipment to help them
lead better lives and that's
what motivates her to work
to raise money.
"I do it to honor my dad,"
she said.
Doris Lill, associate direc-
tor of community develop-
ment for the organization,
said Ms. Roberson was rec-
ognized because she is the
driving force for two Volusia
County fundraisers, MS
Walk and Night at the
Aquarium.
She has raised more than
$100,000 since 2003.
Mr. Wilson started the
fundraising efforts in Volu-
sia County in the mid-90s,
Ms. Roberson said.


She helped him in the
summer on her college
breaks, and then took over
the fundraising activities
completely when she
moved back here in 2001.
Ms. Lill said that Ms.
Roberson was recognized
for her creativity as well as
hard work.
"She created the Night at
the Aquarium event and
handled it from start to fin-
ish," Ms. Lill said.
Ms. Roberson said she
started the Night at the
Aquarium, a fundraising
dinner at the Aquarium
Restaurant at Halifax Har-
bor Plaza, because she
wanted to try something
different.

A volunteer who works
with Ms. Roberson, Vicki
Dimaria of Palm Coast, said
she was very happy to hear

"She has been so dedicat-
ed for so many years," she

Ms. Dimaria has MS, and
has seen the difference the
money has made for others
in her support group who
also have the disease.
"People can get grants to
get computers or remodel
their homes to help them
adjust," she said. "We also
have speakers who tell us
about available services."
Ms. Roberson said MS is a
unique disease.
"It's a prime of life disease
that affects the whole fami-
ly," she said. "It happens
when people are in their
20s, 30s and 40s, when peo-
ple are starting careers and
families."

"It's a just-in-case kind of
thing," said Seat 2 Council-
woman Nancy Long, who's
been an avid camper with
her husband for almost four
decades. "(The city's com-
munity development
department) had a call from
a citizen who was interested
in finding an available
campground in the area."
There wasn't one, the
woman was told.
Staffers "did due diligence
and realized that there was
nowhere in the city that this
could happen," said Mayor
O'Neal.
That could change with
the ordinance's second
reading.
"It could be a money-
maker, something like this,"
said Mrs. Long. "We don't
have a prospective camp-
ground (developer), but if it
came to us..."
Hint, hint, adds Mayor
O'Neal: "We want good,
clean projects that people
can utilize."
After committee approval
in November, asking Coun-
cil to require a sewer hook-
up for every campsite in a
prospective park, city staff
recommended instead that
Council pass an ordinance
that would require at least
half of the sites to have
sewer connections an
attempt to discourage parks
that would seek tenants for
permanent residency.

Keep the Wreath
Green Campaign:
First Red Bulb
of the Campaign

Just more than two weeks
into the "Keep the Wreath
Green" Campaign, Port
Orange firefighters will
replace a green bulb with a
red one on each of the
wreaths displayed at all five
fire stations.
The red bulb represents
the fire that occurred at the
Triangle Motel on Ridge-
wood Avenue.
Crews from Port Orange
and South Daytona
responded and extin-
guished the fire within
minutes of arrival. No one
was injured. Division Chief
Christopher Weir estimates
total damage in the area of
$20,000.
The "Keep the Wreath
Green" Campaign is
designed to reduce the
number of fires during a
time of serious fire dangers.
Each time firefighters
respond to a fire within the
city of Port Orange, a green
bulb will be replaced with a
red one to remind citizens
of the dangers posed by
holiday decorations. The
wreaths will be on display
until Thursday, Dec. 31.

The Volusia County
Health Department is
offering a number of
opportunities for residents
to get no cost vaccinations
for protection against the
H1N1 flu virus including
vaccination outreach
teams that will come to
businesses, organizations
or events to provide vacci-

It's good to give

This letter is to remind people how good it makes you
feel to give.
The Southeast Volusia Humane Society on Glencoe
Road needs blankets, towels or comforters, or anything
that you are going to replace. It could help the animals
stay warm and comfortable in their time of need.
The Volusia County Sheriff's Office will accept dona-
tions of old cell phones.
If you have good citrus hanging on your trees, put it in
a box marked free in front of your house, so you can
share the abundance.
Life is good when you can help others. Happy holi-
days.

Is tone deafness a disease?

Tone deafness is a disease usually spread at bars and
clubs that do karaoke Thursday to Saturday nights.
It is inert to the person that has it, but it is ravenous to
the listeners. It is as painful as being a driver stuck on
Interstate 95 during rush hour.
I completely understand that it is all in fun especially
after having a few bravery cocktails. But before running
out the following week and buying a case of all your
favorite tunes you sing in the car, get an honest opinion.
Not all of Americans have got talent and the drunk sit-
ting next to you may not be the best critic.
So here are a few tips:
Find a song you like in your voice range (trying to hit
notes that don't exist is not good)
*If you do find a tune you can do fairly well, don't do it
week in and week out, (the original hit didn't last that
long)
*Don't get plastered before your turn, (slurring and
miscues is not good)
*If you can't sing acapella, karaoke won't help
Try to remember some people are meant to be the
audience, so enjoy the people who can sing and have a
repertoire and find something you are truly good at.

Please be courteous with cell phones

In regard to cell phones being opened in movie the-
aters, especially the Regal Theaters in Ormond Beach.
It is very distracting when someone near you keeps
opening his or her cell phone. The light comes on, and
you can't enjoy the movie having the light shine in your
eyes. Some people do try to shield their cell phones, but
it is difficult to do.

'I shouldn't have to pay taxes for schools'

Well think about living in an illiterate society. If you
work for someone, and that person is replaced by some-
one who didn't know how to read, write or do arithmetic
who you have a hard time getting paid, and it wouldn't
be much of a fun place to work.

In response to
'If you can't say anything nice,
don't say anything at all'

I want to apologize for what that misguided person
did to her in the checkout line, and I hope she's had
some really good days since. I was offended, too.
The offender doesn't understand the dynamics of neg-
ativity versus positivism, and that behaving as he did is
likely to bring bad things on himself.
In most stores, the express item limit is taken as a
rough figure, and most people (myself included) have
no problem with a few extra items.

'Twas the night after Christmas'

'Twas the night after Christmas, and all through the
house, lay the empty gift boxes from me and my spouse.
The stockings that hung from the chimney with care, are
now to be found at heaven knows where.
The toys and the games and the bright-colored sox, now
lay to the side, while kids play with the box.
The turkey and dressing and all the desserts, still bulge
at your waistline to the point where it hurts.
The tree that was bright and so perfectly trimmed, now
looks kind of tired and the lights, kind of dimmed.
The cards that were taped all around the porch door, are
now one by one winding up on the floor.
And the fire that roared with a crackling of barks, has
now dwindled down to a few gentle sparks.
All the an-tici-pa-tion, and the thrill of it all will eventu-
ally lead to the bills on the wall.
But I have no regrets, as I look round the room, for I see
my whole family with their faces in bloom.
And I say to myself, "thank the Lord up above," for
having this Christmas with the people I love,
And I wish that this feeling of love and good cheer will
remain with us all year, every day, every year.

Man killed when
hit by car

A man in his 50s was hit
by a car and killed in the
3200 block of Daytona
Beach Shores. Police say
they were called to the
scene of the crash and
found the victim unre-
sponsive, lying in the
roadway near the curb. He
was rushed to the hospital
but died before doctors
could help him. Police say
Jodi Ascherman, 38, of
Ponce Inlet was driving a


vehicle northbound when
she struck the victim, but
there's no word on why he
wandered into the road
and in this early going,
police have not been able
to identify the victim.
Charges are still pending.

Subway robber
sentenced to life

A man who robbed a
Subway restaurant in Port
Orange will go to prison
for life without the chance
of parole. Prosecutors say
Isaac Andrews committed
the crime less than three
years after being released
from prison on another
stint so as a result he faces
a far more significant
punishment. Mr. Andrews
robbed the restaurant at
gunpoint in April, but was
seen on store surveillance
and later arrested when
an officer recognized him.

Carjack victim
escapes after being
punched

A 76-year-old man was
punched in the face in
Port Orange when a
suspect claiming to have a
gun attacked him in his
car. Fortunately, police
caught up with the
suspect. They say 40-year-
old Lawrence Singletary of
New Smyrna Beach
approached the elderly
man who was sitting in his
car at a business plaza.
Police say Mr. Singletary
told the victim he had a
gun and ordered him to
move over into the


treated unfairly because the disbursements of real estate
taxes pertaining to schools has touched a nerve.
There is much to be said about both sides of this
argument.
Let's examine the tax in question here, that of taxing real
property. This tax is supposed to be for the support of local
and county services to residents of its jurisdictions;
services such as police, fire, school and water resources, to
name a few. These taxes are levied on just the homeowner,
but the services are provided to all of the residents, both
property and non-property owners alike. Many recipients
of these services could be renters, squatters and even the
homeless, basically anyone occupying space in these
taxed communities.
Is a homeowner being taxed fairly in this case? Of course
not, it's done solely because they are easy marks and the
incentive for paying this tax is not losing their home. Non-
property owners are getting a free ride when it comes to
shelling out for these services. The only fair, equitable
form of taxation for services such as those paid by real
estate taxes is a head tax.
In this manner everyone pays their fair share for servic-
es rendered. The government doesn't see it this way
because of the problems they would encounter with both
collections and enforcement. So, we are now stuck with
real estate taxation.
The revolution fought in this country was in large part
about unfair taxation.
Have we lost our moral compass by expecting others to
support our responsibilities through forced taxation?

Motel fire
was arson

Investigators say a fire
that did more than
$20,000 damage at a
motel in Port Orange was
deliberately set. The blaze
broke out in the office at
the Triangle Motel on
Ridgewood Avenue in the
pre-dawn hours and
firefighters were able to
contain it and prevent it
from spreading to adja-
cent rooms. No one was
hurt, but state investiga-
tors say the fire is defi-
nitely a case of arson and
are offering a $2,500
reward for information.

Pornography viewed
on library computers

A concerned citizen
contacted WESH 2 News
after she was looking up
recipes on the Internet at
the Port Orange library
recently and saw a man on
a computer near her
looking at pornography in
plain view. The citizen, who
does not want to be
identified, complained to
the librarian who asked the
man to log off. The citizen
filed a complaint with Port
Orange Police as well
because she believes


children could be exposed
to adult material. County
officials say viewing
pornography, even in a
public arena like a library, is
protected by first amend-
ment rights, though library
officials do what they can
do discourage it. Comput-
ers at area libraries are
filtered, but adults can
disable the filter and view
pornographic images.
According to county
officials, libraries are places
where there is, by law, a free
flow of information. Unless
a user is totally disruptive
in what he or she is doing in
a library, officials say there
is little they can do to
prevent what people
choose to see or listen to on
computers, or read in
books. The citizen believes
her own rights, to not be
exposed to what she
considers obscene materi-
al, are being abused by the
policy.

Woman
critically injured

A 46-year-old woman
walking back to her
broken down car was hit
by a vehicle in Edgewater
and critically injured.
Police say Teresa Criss-
man from the Jacksonville
area, had car trouble on
Interstate 95 and had
gone to make a phone
call. Ms. Crissman was
walking back to the
highway along State Road
442 near Old Mission
Road just before 1 a.m.
when she was hit by a
westbound vehicle. It's
still unclear if the driver of
the car, MarkYoud of
Ormond Beach, will face
charges.

Son refurbishes table, family memories


W ile most people
will associate
money or valuable
property with things left in a
last will and testament, the
gift to me from my father
was something completely
different, but very special.
At 11 inches wide and
almost seven feet long, it
wasn't your normal cocktail
table.
This anomaly, fabricated
from angle iron, half-inch
plywood and multicolored
two-inch square tiles that
had been laid in no particu-
lar pattern or order was a
labor of love created by my
father sometime in 1956.
The table had been in our
family for as long as I could
remember. Often the sub-
ject of discussion between
my father and me, I always
liked the table and hoped
one day to have it passed on
to me. I told dad that the
only thing I really wanted
from the small group of
family treasures once he was
gone was the cocktail table.
He obliged, and after his
passing in 1999, I learned
that he had kept his word
and left it to me in his will.
After recently realizing
that it had been almost 10
years to the day that my dad
had passed away, while sit-
ting on the back porch
enjoying the Florida sum-

holt's either.
The grandchildren of the
former Proctor & Gamble
chief and heir deeded all 175
acres along with Gamble's
grand Cracker home, its cit-
rus packing house and Snow
White replica cabin to the
Nature Conservancy of Flori-
da in 1983. It wasn't until
1999, however, that the prop-
erty started living up to its full
potential again, when the city
and museum successfully
proposed a partnership,
along with recreational serv-
ices provided by neighbors

The conservancy still holds
a "conservation easement"
over the property, and still
does annual inspections -
one of which they've just per-
formed.
"It's largely been produc-
tive and successful through
the evolution of the relation-
ship to date," said Walter
Thomson, the conservancy's
director of terrestrial conser-
vation. "There was heavy
storm damage in 2004, and
most of that damage was
dealt with, cleaned up. The
current condition is excel-
lent."
Most of the damage out
there now would take a week
or two at most to spruce up,

WILLIAM J. EGAN (Veteran)
Word has been received of the death of William J. Egan, on
December 15, 2009. He resided in Port Orange, Florida, having
moved here from Manchester, New Hampshire. Mr. Egan was born
in New York City on March 6, 1933. He was the son of the late
Thomas and Charlotte Howe Egan.
Mr. Egan retired in 1990 from the Manchester NH, Police department
after 30 years of service.
He was a United States Navy Veteran who had served during the
Korean War. He then became a Life Member of the American Legion
Post # 79 in Manchester. His commitment to veterans took him to the
position of State Commander of the New Hampshire American
Legion in 1991 and 1992. Mr. Egan was also a member of theVFW
# 8214 in Manchester, the Eagles, and many other organizations. He
was a devoted Yankee Baseball fan who seldom missed watching his
team play. He also enjoyed singing and dancing.
After moving to Florida, he remained active in the American Legion,
VFW, and Eagles. He also joined the American Veterans Org.
(AMVETS) Post # 911 where he had served in the official title of
"Good Will Ambassador" for several years.
He is survived by his loving wife of 35 years, Sandra Hurley Egan,
four sons: Shawn and wife Lisa of Litchfield, NH; Brian and wife
Sandra of Candia NH; and Keith and Glenn both of Manchester and
three sisters; Helen Joseph of NH, and Ruth Reno and Joan Palmer
both of Fl. He had three granddaughters, one grandson, and sever-
al nieces and nephews. He was preceded in death by two brothers,
Thomas and Robert; and one sister, Rita, all of New Hampshire.
A Memorial Service will be held at the AMVETS Post 911 on
Saturday, January 9, 2010 at 1 PM. A Veteran's Memorial Service
will also be held in New Hampshire through the American Legion at
a time to be announced.
In lieu of flowers, Memorial Donations may be made to the Halifax
Hospice Center at 3800 Woodbriar Trail, 32129, in Port Orange.

Hearing Centers, a national
company.
The new company has the
AccuQuest name, and the
local centers are in Ormond
Beach, Daytona Beach, New
Smyrna Beach and Palm
Coast.
Virgil Baker, regional direc-
tor, said the larger company
is beneficial to consumers.
"AccuQuest is a large,
national company that pro-
vides stability even in reces-
sionary times," he said. "They
will be here tomorrow to
service what they sell today."
The company performs
hearing tests as well as selling
and servicing hearing aids.
"Once you get a hearing
aid, it's important to have it
checked periodically, every
three months for most peo-
ple," Mr. Baker said, "We can
change the settings to adjust
to hearing or lifestyle
changes."
There is no charge for the
visits.
Anyone who suspects they
have a hearing problem
should make an appoint-
ment, Mr. Baker said. Spe-
cialists can perform tests to
determine if a hearing aid
will help or if the person
should see an eye, nose and
throat specialist.
They also have a video oto-
scope to look into the ear
canal and check for wax.
Mr. Baker said that he is
proud to sell the Starkey line
of hearing aids, which is
made in the United States.

"open fit" hearing aid. It rests
over the ear, and a stem
extends into the canal, rather
than the traditional piece
that fills the canal.
"It weighs less and is less
cumbersome," he said. "It
has a more natural feel, and
there's more amplification
and less feedback."


Mr. Baker recommends
everyone have their hearing
checked once a year if they
have noticed any problem.

there. It hasn't been done for
three or four years, though it
should be done yearly or at
least every two years.
"We recognize the situa-
tion with the economy," said
Mr. Thomson. "Certainly all
organizations are seeing
financial challenges, so we've
offered to bring our services
in to get habitat manage-
ment back on its legs."
Mr. Thompson said he'll
lead a team here in late Janu-
ary or early February to begin
regular burning again.
Beyond that, the city and
museum need to come to a
settlement to determine who
will maintain the rest of the
place with its eight miles of
trails and hundreds of acres
of verdant Florida forest.
"I think it's the hope of
many ... that Spruce Creek
be available and presented to
the public as the fantastic


cultural and ecological
resources that it is," Mr.
Thomson said. "And we, as an
organization, are happy to
enter into the equation again
to help."
Another organization is
entering into the equation
again, too, hoping to spur
some needed urgency.
The county ECHO grant
program, once it learned of
the site's closure, sent a letter
to the city on Dec. 11 asking
for a prorated $52,946 refund
of the money it spent on
restoration, since the grant
stipulates 20 years of public
view. The program, noted
coordinator Margaret Hodge,
doesn't bequeath funding for
maintenance.
"As long as the owner kept
it open, we didn't seek resti-
tution of any grant funds,"
she said. "But under the
agreement, as the stewards of
these dollars, we have a right
to request the grant money
back now. My role is to
administer the grant policies
as approved by the County
Council. (The city was) aware
in advance that this is one of
the conditions."


Mr. Parker confirmed that
city officials knew some of
the grant money would have
to paid back and it has been
set aside since the city
stopped paying the lease to
the museum in 2007. He said
he will recommend paying
back the money to the city
council at its Jan. 5 meeting.
Ms. Hodges explained that
such actions aim to serve as
an "incentive to follow
through on your conditions
when the grant was awarded
to you."
Mr. Atherholt and city
leaders still appear to be
committed to the property.
"They don't want to let it
fall apart," she said. "Our
hope is for the residents of
Volusia County, that it opens
again at some point to them.
... There is some movement,
some positive movement for
this property, and I don't real-
ly see it going into decay.
There's people who care
about it, and they're the ones
getting their hands in the dirt
right now and getting it
cleaned up."
That was news to Jill
Williams, who shares with
her husband a grand Cracker
home within sight of the
Gamble estate. The couple
invested their life savings
into an eco-tour, camping
and recreational boating
company to supplement the
city and museum's offerings
at Gamble. For several years,
they've spent thousands to
make their property and lives
part of the Gamble Place
experience.
And since 2007, they've
been struggling to do all the
maintenance on both prop-
erties themselves.
"The problem is, the con-
servation gave the property
to the museum for them to
assume all these responsibili-
ties," Ms. Williams said. "And
they either want to be paid a
high-dollar figure or they
want to be paid a large lease
payment as they were getting
from the city. Obviously,
everyone is concerned about
public accessibility. That's the
bottom line."
Ms. Williams said she is
hopeful that everyone will
come together to reopen
Gamble Place, she just wish-
es things would move a little
quicker.

Joey Dee and The Starliters were
discovered while working at a
nightclub called Oliveri's in Lodi,
N. J. They were booked for a week-
end at an New York City nightclub
called the Peppermint Lounge. It
was suppose to be a weekend
stand that escalated into a 13-
month run. In 1961, their first song
"Peppermint Twist" went gold. This
was followed by "Hey Let's Twist,"
"Shout Part 1" and "What Kind Of
Love is This" to name a few.


Mr. Mancuso attended Tilden
High School in Brooklyn where he
and his four school buddies
became known as The Red Hot
Chico and His Four Peppers. When
his family moved to Long Island
his search began for new singers
who lived close by. It wasn't long
before Mr. Mancuso and four new
friends created The Imaginations.
They are remembered for

Mr. Horn began singing
bass in junior high school
in the Bronx. In 1960, he
was asked to join a group
called The Sharks, who
made 26 singles and five
albums. Their most memo-
rable songs were "Stormy
Weather" and "Canadian
Sunset." Mr. Horn is
responsible for forming the
Legends Of Doo Wop who
have been touring since
the late 1990s.
As a teenager, Mr. Mara
played the drums in
Brooklyn and sang in a
local rock band. He then
toured with Blonde. After
moving to Florida, he
joined The Saints and then
The Crests. Mr. Mara, who
is the present day lead
singer and owner of The


Crests, has been referred
to as both "The Pavarotti
of Doo Wop" and "The
Meatloaf of Doo Wop." He
sings hits that include
"Cara Mia," "Sixteen Can-
dles," and "Step By Step."
Special guest during the
"Night of Doo Wop will be
13-year-old singer Aman-
da.
In 2009, she was show-
cased in a solo in "Cirque
Dreams" and she per-
formed twice with David
Foster.
There will also be a
grand finale with all of the
artists performing togeth-
er.

Celebrate the New Year with special Italian cookie treat


Hello, smart shoppers.
Hope you had a
wonderful, blessed
Christmas and Hanukkah.
A reader e-mailed thank-
ing me for this recipe her
grandmother used to make.
I'm writing on Dec. 14; how
strange to write about the
New Year when we haven't
had Christmas.
Let's ring in year 2010!
Here are a couple of New
Year's traditions. Up north,
eat a piece of pickled
herring at midnight and
touch a dollar bill. Symboli-
cally, may there always be
food on the table and
money in your pocket.
Here in the south, you
must eat pork and black-
eyed peas on New Year's
Day.
I can remember New
Year's eve being a celebra-
tion where we made as
much noise as possible at
midnight. I have some
noisemakers from my
parents, given to them by
my dad's parents, that date
back almost 100 years,
wooden handles and all. No
cut fingers from sharp
metal, that's for sure.
To me, it's a capital sin to
be sleeping at midnight. I
used to wake my kids up
just to make noise. Silly?
Childish? Maybe so, but I
hope to never lose that
excitement.

This week's column is a
tribute to mamma, my
paternal grandmother. For
NewYears she made
"cookies," not regular
cookies but special Italian
treats coated with honey
and topped with colored
candy sprinkles.
Many of you are familiar
with Strufoli (honey clus-
ters), but her other specialty
I bet you've never heard of.
Tordillo, made with olive oil
and wine, was everyone's
favorite. When I finally
decided to make them, I
kept hearing mamma
saying, "you have to feel
when it's right." Back my
memory went to when I was
17 and "I remembered
mamma." I asked for the
recipe and mamma said in
her delightful Italian accent,
"you come over and we do it
together."
What I thought was going
to be very easy turned out to
be a bit of a fiasco when I
kept questioning mamma's
instructions. Here's how it


went while making the
tordillos.
Mamma: Dump flour on
the board.
Me: How much flour?
Mamma: "This much,"
she said as she pointed.
"Make a hole in the center
of the flour and pour in 1
glass of wine and 1/2 glass
oil."
Me: "What size glass?"
Wouldn't you know I meant
how many ounces?
Mamma didn't. As her
voice started to rise, she
held up the glass and
shouted, "This size! Now
mix it all together until it
feels right," she said,
determined to go on.
At that point I just
couldn't resist and asked,
"What does right feel like?"
Well, she threw her hands
up in desperation and said,
"Don't say another word,
you ask too many questions;
watch what I do and DO it."
In most traditional
cooking, you have to feel
when it's right. I've taken
that "feel" and tried to put it


into measurements for you
in all family recipes I have
written. While making these
cookies, I think I really
learned what "right" feels
like as "I remembered
mamma."
Enjoy. See you next year!

TORDILLO (NIB)

The wine used for these
cookies was muscatel. If you
can't find it, use a slightly
sweet white wine or a dry
white wine. such as chablis
or Chardonnay, mixed with
1 teaspoon of sugar.

4 cups all purpose flour
1/2-cup extra virgin olive
oil, warmed slightly in the
microwave
3/4-cup wine
Canola oil, enough to fill
a medium saucepan
halfway
1 cup honey
1-1/2 tablespoons sugar
Multi-colored candy
sprinkles
Using the dough hook on


your electric mixer or food
processor, mix first three
ingredients together. Place
dough on cutting board and
knead for about 5 minutes
until smooth and silky.
Break off small pieces of
dough and roll into a
cylinder about 1/2-inch
wide and 2-inches long.
Place thumb (or 3 fingers) in
center of cylinder and press
dough down firmly as you
push forward then towards
you, causing the cylinder to
curl and look somewhat like
a seashell.
Fry cookies a few at a time
until golden. Drain on paper
towels.
In medium saucepan,
bring honey and sugar to a
boil, lower heat and simmer
for 5 minutes. Add cookies a
few at a time, turn to coat.
Remove to platter with a
slotted spoon. Dust with
sprinkles.
Note: Cookies can be
made, fried and stored in an
airtight container for weeks.
Glaze the day you're ready
to serve.

Caring for plants after the holidays so they last all year


Shop you and your
family had a wonderful
Christmas holiday and a
have a happy and safe New
Year!
Now that the holidays are
coming to a close, many of
us will have an abundance
of holiday plants to nurture
for an entire year so we can
enjoy them again next year.
One of the most popular
gifts of the holiday season
are amaryllis bulbs.
Amaryllis bulbs are
relatively easy to take care
of. If you give them ade-
quate water and bright light,
they should bloom in about
six weeks. The best way to
water is to keep the plants
evenly moist. Do not water


so much that the plants are
sitting in standing water.
Keep the plants on a
windowsill or protected
porch for best results. If
your bulbs are too small,
you may have to wait until
next year before you get
blooms to form.
If you received a Norfolk
pine as a gift or bought one
for yourself, you can
successfully grow them
indoors. As a matter of fact,
I recommend that you
either grow them indoors or
plant them in a container. I
do not recommend planting
them outdoors.
These trees do not fare
well in hurricane-force
winds and they grow

extremely large. With that
said, Norfolk pines will do
extremely well in an indoor
environment, as long as
there is ample light. Position
your plant near a window
where it will receive a bit of
sun daily.
These plants will do best
if they are watered on a
regular schedule. Keep the
plants evenly moist but not
dripping wet. Do not allow
the plants to sit in standing


water. Norfolk pines also
enjoy a humid environment
so if the plant is indoors,
you may find it beneficial to
lightly mist it from time to
time to help increase the
humidity around the plant.
Improper watering can
result in needle loss that will
not regenerate itself. In
addition, never try to prune
the tree to shape it. The only
pruning that should be
done on this plant is for
basic maintenance, such as
trimming off dead or yellow
lower branches.
In the past, I have dis-
cussed about how to choose
and nurture poinsettia
plants during the holidays.


These delicate plants can
also be planted outdoors
after the season is over.
First, choose a location
that is sheltered away from
strong winds and the full
direct rays of the summer
sun. Also, choose an area
where you can control the
artificial light at night, so
you can get your plants to
bloom next season with
minimal effort.
Use a good-quality
potting mix to place your
plants in the ground and be
sure it is a well-drained
location. It might be wise to
repot your plant in a large
pot until all danger of frost
and cold weather has past.


March would be a great
transition month to place
your prize in the ground.
Once it's planted and
established, be sure to trim
off all the old red bracts. You
will need to do this in order
to get blooms next season.
Now comes the tricky
part. Starting around
November or sooner, the
plant is going to need long
nights in order to re-bloom.
During this two-month
period, you will need to
eliminate, as much as
possible, all signs of artifi-
cial lighting at night. Keep
the area as dark as possible.

Is it a fond childhood memory or just another fish tale?


K, here we go. You
have time off from
work and the kids are
out of school.
Fishing trip!
Granted you will need to
be persuasive to get the
youngsters to put down
their new video games, but
the weather is great, the
insects are dormant and
nature is waiting all around
us.
At this point, I would ask
each and every one of you
to pause for a moment and
allow your mind to wander
back to your first fishing
memory.
It was not difficult to
summon up, was it?
If it meant enough for you
to carry with you this long,
surely you would not deny
your children or grandchil-
dren the same experience.
As you searched your
memory, I was right there
with you, but my first
fishing memory is not
actually a memory at all.
It is one of those stories
from our youth that we have
all heard repeated so many
times we only think it to be
a memory.
At age 4 or 5, my grandfa-
ther (who was no fisher-
man) asked me to ride with
him into town in his big old
Buick with the twin side
mount spare tires.
On the way, I spotted a
large puddle left from the
previous night's rain. The
way the story goes, I
pestered the old man until
my gramps pulled over. He
rigged a piece of twine onto
a stick (no hook) and
allowed me to fish in the
rainwater until I was
satiated.
After some time, my mom
and dad came by in their '49
Plymouth and got a good
laugh from the sight of
grandpa sitting, forlornly,

This is the key to getting
new blooms for the holi-
days.
One of the biggest
problems you might
encounter with a poinsettia
plant is root rot. Often-
times, you will see poinset-
tia plants wilting as if they
were not watered in days.
You go to check the soil and
it is still moist. So why is the
plant wilting?
Actually, the poinsettia
most likely has a root
fungus or disease that is
preventing the plant from
taking on water. That
explains the wilted condi-
tion. This is usually caused
from the plant being in soil
that is overly moist.
This condition will
almost always lead to a
dead plant. In addition, you
must also keep a watchful
eye out for whiteflies. Treat
them at the very first
indication with Orthenex.
With a little luck and
some skill, you should be
rewarded with some great
holiday color in your
garden next season.

As I said, my gramps did
not like to fish, but he did
like kids.
My own son, Landan, who
now teaches middle school,
began fishing when he was
around 3 years old. We
would take him onto the
pier beneath the Granada
Bridge where he could catch
sailor's choice, catfish and
other assorted bait snatch-
ers.


For some unknown
reason, he declared that
each one was a ratfish.
Some were mommy ratfish,
some were daddy ratfish,
but all were designated
ratfish. He was fast to point
out to any passerby that he
had just landed a ratfish. I
am not sure if that is a good
memory for him, but it is a
great one for me.
My daughter Shayla has
fished since she was old
enough to hold her Snoopy
pole. These days the same
Snoopy pole, which is now
nearing 30 years old, is in
the capable hands of her 6-
year-old daughter Delayna.
She is by far the most
serious of all the Smith

fishermen and insists that I
practice catch and release.
When I have the nerve to
suggest that one of my
catches might be good for
dinner her stock reply is:
"Heartless!"
Delayna shows much
more potential than her old
grandpa did as a kid.
At this point, she has
caught six species including
a dogfish and an eel and as
my wife, Lana points out, is
much too smart to fish in a
rain puddle without a hook.
I hope everyone will take
advantage of this great
family time of year to get a
bag of shrimp or box of
worms and take the kids to a
nearby stream or pond. Just
