PONCE INLET For most peo-
ple, when prices go up, it means a
few more dollars spent for gro-
ceries, entertainment and such.
But for those trying to get funds
for government projects, increase
in prices can be a little more
extreme.
U.S. Representative Suzanne
Kosmas found that out recently.
She thought she had finished get-
ting money to fund an extension
of the Ponce de Leon Inlet south
jetty, but in the near decade the


project has been planned, the
price of the job more than tripled
in price to nearly $19 million.
Ms. Kosmas recently went
before the House Transportation
and Infrastructure Committee
Water Resources Subcommittee
to ask for additional funding for
the project in the 2010 Water
Resources Development Act.
"This is a priority for her and
she wants to get things moving,"
said Ms. Kosmas' spokesperson
Marc Goldberg. "She's going to
keep fighting for it."

Commission seeks DSC expansion on Beach Street

DAYTONA BEACH -
The possibility of a music
and arts facility being built
by Daytona State College
near the News-Journal
Center is exciting to many
people who promote the
area.
The idea was brought up
at a recent city commis-
sion meeting by Commis-


sioner Shiela McKay-
Vaughan.
Edith Shelley, who is on
the Daytona Beach Plan-
ning Board and the Down-
town Redevelopment
Board, said she would love
to have the facility in the
downtown area.
"This is new so the
boards have not discussed
it," she said. "But I think it
would be a tremendous
asset."


Jim Cameron, vice presi-
dent of the Daytona
Beach/Halifax Area Cham-
ber of Commerce, said it
has "fantastic possibilities"
but he would need to learn
more specifics.
"I know they'd need a lot
of parking," he said.
The facility would also
be welcomed by Naomi
Weiss of the Daytona
Beach Partnership Associ-
ation.


"I've had conversations
with several people on
Beach Street and they are
excited about how it could
stimulate activity," she
said.
The idea of a music and
arts facility beside the
News-Journal Center on
Beach Street, bringing
hundreds of students to
the area each day, was well
received by the commis-
sioners when Ms. McKay-

talked to Daytona State
College President Kent
Sharples recently about
their plans to construct a

VOLUSIA COUNTY -
Last Friday, Brian Teeters
was finally having the
tubes removed for his
release from Halifax Health
Medical Center after eight
days of reconstructive sur-
gery to his battered right
leg.
"It means you're really
going home," a nurse told
him.
He still doesn't know who
to blame for his serious
injury, which came at the
hands of a hit and run driv-
er. For all of his pain and


suffering, though, Mr.
Teeters, 24, is one of the
lucky ones. Just this year,
the Florida Highway Patrol
has investigated 13 fatal
hit-and-run accidents;
only three have been
solved.
Mr. Teeters was among
the hundreds more who
survive hit-and-run crash-
es, enduring trauma and
time lost from school or
work, only to keep on won-
dering if anyone will suffer
for their suffering.
At dinnertime on Nov.
12, the 2003 Seabreeze
High grad and Navy veter-
an had almost steered his


motorcycle to Houligan's
restaurant on Clyde Morris
in Ormond Beach, where
his father and brother were
waiting, when the driver of
a dark gray or blue Jeep
Grand Cherokee pulled out
from Coquina Point and
left him nowhere to go: It
was too late to brake effec-
tively, a car blocked his
way to the right, so Mr.
Teeters tried the left.
"I smacked my right leg
into his bumper," he said,

far too late to do anything.

Halifax Uncorked pops .."

jazz festival Saturday and

Mr. Bornia's second goal,
to reach a more diverse
audience, seemed to hit the
mark as well. Several 20-
somethings at the festival
said they had never heard of
the Daytona Beach Interna-
tional Festival before and
was simply drawn by the
food and wine.
"This is a great event, said
Adrienne Glitniak, 27, of
South Daytona. "I hope they
do more things like this."

got to the event, she was
pleasantly surprised by all

"I didn't know what to
expect, but I'm really sur-

DAYTONA BEACH -
You're never too old to
dream.
That's what Judi Winch,
principal of Westside Ele-
mentary School, likes to say,
and one of her biggest
dreams has come true.
Thanks to a federal grant
and donations from the
community, the school has
created a program called
Westside Nights Alive,
which offers free recreation-
al and educational opportu-
nities for adults, and an
afterschool program for stu-
dents that includes tutor-
ing, help with homework
and recreation.
"Instead of locking up
when we leave at night, we
keep the 'night alive,'" she
said recently. "I believe the
church is the focal point of
the community but schools
must be involved also. We
wanted to give kids and par-
ents things to do and it has
been a huge, huge success."
The idea for Westside
Nights Alive started when
Ms. Winch talked to stu-
dents about what they did
after school.
Ms. Winch walks a differ-
ent student home each Fri-
day, reads a book with the


child and visits with the
parents.
Three years ago, she
walked a girl home, and
asked her, "What are going
to do now, go out and play?"
The child said no,
because her parents said
the neighborhood was too
dangerous.
Ms. Winch got the same
response from another
child the next week.
"I came back to the school
and saw this big, empty
field behind the school,"
Ms. Winch said. "I decided
to put it to use."
She formed a team of
individuals from the busi-
ness community to help her
apply for a grant and raise
money to build a "Field of
Dreams."
The empty space behind
the school now has a fitness
park, walking track, shuffle-
board, tennis courts and
basketball courts, all avail-
able to the community after
school.
Classrooms are also used.
Adults can study academic
topics such as how to use
computers and find a job, or
get active with offerings
such as dance and aerobics.
They can also obtain a
GED by taking part in a
tutorial over the Internet.
Staff is on hand to help nav-


igate through the program.
Kathryn Epps of Ormond
Beach said it's an "awesome
opportunity.
"I can't afford a computer
and I can't go to school dur-
ing the day because I take
care of my child," she said.
"Without this I'd have no
chance to go to college."
Activities are led by
school staff and others from
the community who are
paid for their time through
the grant.
Rodderick King, a coach
at Seabreeze High School,
leads an exercise class in
Nights Alive.
"I have everyone from
parents to high school ath-
letes," he said. "It's a great
program for the communi-
ty. They can't believe it's
free."
Ms. Winch said the after-
school program for stu-
dents, which runs from 3:30
to 5:30 p.m., benefits work-
ing parents as well as the
students because it serves
as a day care.
"We have 130 kids who
stay after school and there
is a waiting list," she said.
"That's the maximum num-
ber we can have right now
because of the staff we have
available."
A recent addition to the
Field of Dreams is the


Dreaming and Grieving
Garden, which has benches
for quiet contemplation.
The original idea was to
have a place to dream, but
Ms. Winch also saw a need
for a place to grieve.
"Sometimes a child
would want to talk to me
after someone they knew
died, but there was no
place to go," she said. "So
we decided we needed to
have a park-like place to
grieve as well as dream."
The federal grant
received by the school is
called a 21st Century Com-
munity Learning Center
Grant, which pays for staff
time. The five-year grant
pays $317,000 the first two
years, and then 80 percent
of that the next three
years.
They are now in the
fourth year, but Ms. Winch
said she might be able to
get the grant renewed.
Ms. Winch and her team
of volunteers raised
$300,000 to build the facil-
ities. Some of the dona-
tions were in the form of
materials, such as con-
crete.
"We're constantly raising
money," she said. There

of the park by the News-

dent Randy Spiwak said the
building was originally
planned for the main cam-
pus, but a lack of parking
was an issue. He said the
college is interested in the
Beach Street location as
long as the city and busi-
nesses want it there.
"From what I've heard,
there's been positive com-
ments from businesses in
the area," he said. "We're

ing could be a spark for the
area.
"This could activate the
arts in the downtown area,"
he said. "This would
encourage people to live
and work downtown."
The mayor directed staff
to draft a resolution for the
next city commission
meeting to "support Day-
tona State College explor-
ing the concept."
Dr. Spiwak said the col-
lege estimates the building
will cost $30 million. That
money has not been raised,
so there is no timeline for
construction yet.

Fire services issues burn ban

Due to the dry condi-
tions throughout the
county, Volusia County
Fire Services has issued
an outdoor burn ban for
the county's unincorpo-
rated area.
Under the burn ban, all
outdoor burning, unless
authorized by the Florida
Division of Forestry, is
prohibited. This includes
the burning of yard trash,
household paper prod-
ucts, bonfires, campfires,
warming fires and cook-
ing fires.
Outdoor cooking done
with a contained gas or
charcoal grill (excluding a
fire pit) is the only excep-
tion.
According to Volusia
County Fire Services offi-
cials, the ban was
necessary due to con-
tinued, prolonged periods
with no significant rain,
the drying out of vege-
tation, and daily above-
normal wind conditions.
Volusia County's Keech-
Byram Drought Index is
602. However, in
some areas of the coun-
ty, particularly the north-
west, the index is 738.
The index is on a scale
of one to 800 (saturation
to desert dry).
Violations of the ban
are punishable by a fine
up to $500 and/or impris-
onment in county jail for
up to 60 days. Personnel
from Volusia County Fire
Services will issue viola-
tion notices to any person
violating the burn ban
and also will extinguish


any fire not authorized by
the Florida Division of
Forestry.
Fire officials also are
urging the public to be
cautious with outdoor
activities, especially with
the upcoming holiday
season. Activities such as
the use of ATVs, welding
equipment, mowers, and
the improper disposal of
cigarette butts can spark a
wildfire. Carelessness and
arson cause two out of
every three wildfires in
Florida according to the
state Division of Forestry.

Christmas is coming way too soon

As I sit here today, thankful that I have finally found a
job, I started thinking about the Christmas holidays.
You can't help it. We are smothered by it on TV, in the
stores and everywhere else.
Now everyone knows that this is the time of year that
suicides go up.
I am not wondering will those statistics go up this
year. Between people being out of work and having
trouble finding work, doing their best to hang onto their
homes, now they have to try and figure out a way to give
their children a Christmas that they cannot afford.
Every parent wants to give their children that special
Christmas and it breaks our hearts when we can't. So
now with everything else going on in this country, I am
being bombarded along with others with Christmas ads
that started as soon as Halloween ended. Forget
Thanksgiving.
It seems to me that the greed of the businesses is going
to drive a few more people over the edge.
Now, the parents will have to listen to children beg-
ging for gifts that there is no way they can give them. I
just want to ask, is it worth it?

Volusia County students
need more homework

The new skateboard park at Bethune Point Park in
Daytona Beach is open until 9:30 p.m. each night.
It is absolutely loaded with children skateboarding. It
seems to me that the largest portion of my property tax
bill is going towards the schools.
It is blatant that the teachers inVolusia County are not
giving these kids enough homework.
They are out here every night, forced to leave at 9:30
p.m. when the park closes, and they are out on school
nights.
What happened to chores at home and then doing
your homework on school nights?
There are hundreds of kids out here. It proves without
a doubt they are not getting homework.

Keep Christmas in the parades

I am reading a local publication's calendar of events. It
is addressing the upcoming holiday season. What
stands out so blatantly is the city of Ormond Beach is
having a Christmas parade. Excellent. The city of Holly
Hill is having a Christmas parade. And here we go with
Daytona Beach, we're having a holiday parade. I'll be
attending two out of three.

Smoking should not be allowed
on city properties

I had some business at the New Smyrna Beach city hall
the other day. When I was going in the front door, I
noticed there were two employees standing outside
smoking. I think that is the most disgusting habit that
there is. I think smoking should be banned from all city
properties in New Smyrna Beach.
They make the police officers not smoke.
I think they should make an example of themselves at
city hall and the administrative offices and quit smoking
and ban it on their property

Commissioners in favor
of hotel should be voted out

If that new Hampton Inn gets built on Flagler Avenue
in New Smyrna Beach, citizens of New Smyrna Beach
should find out which of the commissioners were in
favor of it and vote them out of office the next time
around.

entire community was delighted when
the swans set down and seem to be very
content there. They say people were
coming in droves to see and feed the
swans and that the feathered friends
brought joy to the community. Several
residents heard gunshots on the water
one night and saw a boat out there. The
next day two of the swans were gone
and a week later, someone spotted the
charred head and body of the third
swan in the water. They feel certain the
swans were stalked and have called
police and officers from Florida fish and
wildlife. The problem, said law enforce-
ment officials, is lack of proof. No one
has proof the birds were killed and
officials said they could just as easily
have flown away. However residents are
certain the swans were killed and say
they have banded together and are even
offering a $200 reward for more infor-
mation. They said they are determined
to act as a group in protecting other
wildlife near the waterway.

Man tries to snatch purse

New Smyrna Beach Police are looking
for a man who tried to steal a woman's
purse in the 1400 block of South Dixie
Freeway. The woman told police the
man approached her from behind in a
poorly lit parking lot and tried to pull
her purse off her shoulder. They
struggled and the suspect ran off
without the purse. Despite an extensive
search, police didn't find the man.

for burglary suspect

In another case, police in New
Smyrna Beach know who they're
looking for in connection to an armed
burglary on Sinnka Street. Investigators
said they got a call saying Dwayne
Morris, 21, was in the area waving a gun
in the air. They say they later learned
Morris had been in a home in the 500
block and threatened to kill the occu-
pants while demanding cash. The
suspect managed to get away on foot.

Smyrna Beach is now a non-smoking
campus. Hospital officials said they
received a $25,000 grant to help them go
cold turkey. They are offering quit
smoking programs to employees and

sex abuse, but were told about it by the
teenager who laughed in e-mails when
he said he would tell everyone Wilhite
sexually abused him. Wilhite still faces
other charges from additional teenagers
who claimWilhite provided alcohol and
showed them pornography at his home
and encouraged them to have sex with
each other so he could watch.

Ormond-by-the
Sea men murdered

Investigators with the Volusia County
Sheriff's Office say two men found dead
in their Ormond-by-the-Sea home were
murdered and they don't believe it was a
random crime. Mike Floyd, 41, and his
roommate Andrew Kakowski, 26, were
found in the home on Alamanda Street
when the younger man's mother went
looking for him. Investigators said the
men had likely been dead for several
days due to decomposition of the
bodies. Deputies won't say how the men
were killed, but believe the killer or
killers knew the victims and targeted
them. Neighbors suspected the men
were victims of a murder/suicide
because they said Floyd had been
depressed in recent weeks. In a terrible
twist, Floyd's wife, stepdaughter and a
family friend were killed in September
during a crash in Holly Hill. Since the
loss, neighbors said Floyd had often said
he had nothing to live for. Kakowski
moved in with him after Floyd's family
died.

Emergency brake activation
lead to accident

We learned later in the week that
Holly Hill police no longer believe the
crash that killed Floyd's family was the
result of a street race. Instead, Chief
Mark Barker said crash investigators
believe someone in the back seat of the
Red Camaro that split in two on impact,
pulled the emergency brake, sending
the vehicle into a fatal spin. Witnesses
first told investigators the driver of the
Camaro was speeding down Nova Road,
racing another vehicle, but police now
think the driver was just going so fast he
appeared to be racing when in fact he
was just passing vehicles. Police think
the back seat passenger, Mike Floyd's
wife Kathy, was likely terrified and
pulled the emergency brake to stop the
car. Accident reconstruction specialists
said when she pulled the emergency
brake up full, it created so much heat,
the rear brake assembly welded shut
and the Camaro, running at least 70
miles per hour, began a deadly turn,
ultimately hitting a retaining wall and
splitting in two.

Citizens clean
out closed school

In Oak Hill, citizens spent a recent
weekend cleaning outWF Burns Oak
Hill elementary. TheVolusia County
school board closed the school, among
other smaller elementary schools, in an
effort to save money. Community
leaders were so upset with the closing of
the school that they created a commu-
nity trust and bought the school with
hopes of opening a charter school on
the site as early as next summer.

Radio station
owner found not guilty

A jury foundWELE Radio station
owner DougWilhite not guilty of rape
and molestation charges after several
days of trial, but just minutes of
deliberation. Wilhite was arrested over
the summer after a then 15- year-old
boy he was close to accused Wilhite of
repeatedly sexually assaulting him over
two months earlier in the year. The teen
testified he had gone to live withWilhite,
who he knew since childhood, because
of troubles with his parents and claimed
Wilhite "made deals" with him to get
him to behave provocatively. The teen
said Wilhite, an admitted nudist, would
provide him with alcohol, if he would be
naked around him and the teen claims
the incidents escalated to include sex
acts until he ran away in May. Wilhite
said he was only trying to help the teen
and that the boy ran away because
Wilhite wanted to put him in treatment
for mental health issues and substance
abuse help. Defense attorneys provided
evidence that the teen frequently lied
and changed his story about the sex

The Jeep's driver left him
bleeding in the middle of
the road. He started
screaming, "Get that per-
son in the Jeep!" He tried to
get up, and that's when he
noticed that his leg had
been mangled, despite the
helmet, protective glove
and adherence to the 40
mph speed-limit.
Mr. Teeters, who was
allowed to withdraw late in
the semester from classes
at Daytona State College
after the crash, endured
three surgeries over the
next eight days. A pin was
placed in his thigh to stabi-


lize a compound fracture.
Then spare muscle was
used to plug a hole. Then a
skin graft. It'll be a four-to-
six-month recovery, not
exactly fun for someone
who's worked since he was
a teen as a Volusia County
lifeguard.
"I just want whoever did
this to confess," he said. "I
mean, it's not going to hap-
pen maybe, but that would
be kind of nice."
His mother, Lucie
Teeters, says she's taken to
craning her neck now
whenever she sees a dark-
colored Jeep pass by. From
the other side of her son's
bed, she says about the
perpetrator, "He hasn't got-
ten away with it yet."
The Teeters family is
offering an unspecified
reward to the person
responsible for informa-
tion that leads to a convic-
tion (call the Ormond
Beach police department
with tips).


Just this month, state
troopers have looked into
five new fatal hit-and-run
crashes in Central Florida.
"That's very unusual to
have five in such a short
period of time," said Sgt.
Kim Montes, spokes-
woman for the Florida
Highway Patrol.
Every day in Central
Florida, Sgt. Montes, said,
troopers investigate
between 10 and 25 hit-and-
run crashes a level that
has some troopers calling
this an outbreak.
But it's not a new phe-
nomenon. For decades,
drivers have fled after
crashes for four reasons,
says Sgt. Montes: They're
impaired, their license is
suspended, they're want-
ed, or they don't have
insurance.
The irony, said Sgt.
Montes: "A lot of times the
accident, which usually
involves a pedestrian, isn't
even (the driver's) fault,

except for the reasons they
left in the first place, they
wouldn't even be charged."
Once they leave, though,
it's a first-degree felony,
with up to 30 years in
prison to face.
Sgt. Montes said hit and
runs are a challenge for law
enforcement.
"The worst case scenario
is it happens at night with
no witnesses," she said.
"The best scenario is if we
have the car, or short of
that, there are witnesses.
Any information helps,
she said.
"Even if they only have a
couple of letters from the
tag, that helps immensely,"
she said.
And even after the acci-
dent, the public can help
by being alert.
"If they see a neighbor
whose car is damaged or
covered or not there,"
she said. "They should
report that."

ational conduit for us," Mr.
Nolin said. "Boating is a
huge industry in the state
and Volusia County is no
exception, so from an eco-
nomic standpoint it's very
important."
There are also safety
issues that the expansion
should help to alleviate,
Mr. Nolin said. It will
lessen the amount of sand
that flows into the inlet
and widen the channel.
"The south jetty is a
navigation lynchpin," Mr.
Nolin said. "Any boater will
tell you, Ponce can be
tricky. This will give us a
wider, deeper inlet with a
less intense wave climate."
Mr. Goldberg said the
additional funds needed,
which he estimates to be


around $10 million, will be
split between federal and
county dollars. The federal
dollars need to be author-
ized, which should happen
in the spring, but appro-
priation of the money will
be spread out over a few
years. So, once again there
is the chance the price tag
will continue to go up.
"The hope is that since
the project has already
been authorized, it will go
quicker this time," Mr.
Goldberg said.
Mr. Nolin said efforts by
Ms. Kosmas and the Army
Corp of Engineers should
help get the project mov-
ing and keep costs down.
"It's a challenge," Mr.
Nolin said. "But Ms. Kos-
mas asking for reautho-
rization from congress was
a major first step. And, the
corp is looking at finding
cost-saving and ways to
reduce the cost, so that
should help."

learned that I sell travel.
Unfortunately, this happens
way too often.
Here is her story: She and
her family decided to cruise
to celebrate a birthday
and/or anniversary. She
planned it many months in
advance. They chose the ship
and sailing date, got friends
and family to join in, paid for
the cruise in full and waited
anxiously for the date to sail.
They arrived at the pier
and were checking-in, and lo
and behold, she did not have
a passport nor a certified
copy of her birth certificate.
She had the only birth
certificate she has ever
known; however, it was
apparently issued by the
hospital, not the state in
which she was born, a very
common practice in some
cities and towns.
We in the industry do not
know what else to say to
clients to help them to
understand and convince
them that they need to have
a passport. I know that
personally I have annoyed
some of my own clients
when they tell me they do
not have a passport, but have
a birth certificate. If they tell
me they have had it since
they were little or that it has
their little foot prints
stamped on it, I tell them to
contact the department of
vital statistics from the state
they were born and request a
new one. The footprints are a
dead give-a-way that it came
from the hospital (even


though they were able to use
this to go through school,
etc). This is not a certified
copy from the state.
This woman was so
disappointed. She and her
husband watched her family
and friends sail away on her
cruise. I really felt bad about
her missing her cruise over
something so avoidable.
I cannot stress enough
how important it is to get a
passport. It is so imperative
to get your passport, but if
you do not have one, you
must be able to prove you are
a U.S. citizen. Those who are
not citizens have green cards
or other forms to identify
themselves.
Currently, the rule is that
you do not need a passport if
you are on a closed-loop
cruise that starts and finishes
in the same U.S. port (i.e.
roundtrip cruise from Port
Canaveral, Miami, Fort
Lauderdale, etc.).
For those who do not have
a passport and want to sail to
Alaska, this is good news. No
passport is needed if you sail
roundtrip from Seattle
instead of Vancouver. More
cruise lines are adding this
itinerary.
Do yourself a favor if you
are planning on traveling out
of the country. Get a pass-
port. It will take up to six
weeks (recently it has been
roughly three to four weeks)
to get one.

on Daytona International
Speedway Thanksgiving
weekend for the annual
fall show and swap meet,
featuring the world-
famous Daytona Turkey
Run car show.
Since starting with just
40 cars in 1974, the show
has grown to become the
largest event of its kind in
the Southeast. Fans
come from all over the


world to participate in
the show, some from as
far away as Germany,
England and Iceland.
This year's 36th
anniversary show fea-
tures more than 5,000
show-quality cars on dis-
play, including street
rods, customs, classics,
sport cars, muscle cars,
race cars, motorcycles
and trucks.
In addition to the show,
private sellers and deal-
ers showcase a wide vari-
ety of vehicles for sale,
and Vicari MotorSports
hosts a live auto auction


beginning at 1 p.m., Fri-
day, Nov. 27, and contin-
uing at 10 a.m., Saturday,
Nov. 28, and 11 a.m.,
Sunday, Nov. 29.
One of the show's
biggest draws, however, is
the swap meet.

demonstrating that eating

Allen of Food Network's
"Chopped" and a judge on
Bravo's "Top Chef" hosted
the event and served as
judge of the local restau-
rant showdown.
In a backstage interview,
Mr. Allen said that he
advocates supporting local
restaurants and that this
event fittingly publicized
the diverse, top-quality
cuisine offered in our area.
He did say that chain
restaurants serve a valu-
able purpose in our
economy by providing
jobs. Eating at chain
restaurants may be
occasionally convenient,
but Uncorked provided
strong evidence that we
have no reason to patron-
ize them on principle.
The corporate food
industry has exploited our
biological drive to seek
sugar, fat, and salt, for
great profit. Everything

creation of meals by hand
is an act of artistic expres-
sion. It connects us with
our sustenance in a way
that chain restaurants and
fast food distances us from
it.
The event overall offered
fabulous food. Chefs from
the local restaurants
participating at Uncorked
proved that fresh, organi-
cally grown herbs, vegeta-
bles, and fruits, along with
high quality meat and
seafood, make all the
difference between eating
well and just eating.
Despite that we didn't
see the hours of prep work
that went into getting the
ingredients there, patrons
were able to observe the
process of meal prepara-
tion by chefs dedicated to
the art of cooking and not
just the act of consump-
tion.
If all went well, each
patron of Halifax
Uncorked should have
gone home a little tipsy
and fully satiated, know-
ing that they live close to
extraordinary restaurants
that can offer them more
than a flash frozen, deep-
fried something-or-other
with special sauce.

Great, easy dinners from leftover turkey


Hello smart shoppers.
Check out my
cookbook special at
the column's end.
Not turkey again? I'm sure
you're hearing that about
now. Try my recipes, they'll
love them.
If you have a lot of turkey
left, place some stuffing in a
small freezer bag. Do the
same with the gravy. Place
sliced turkey in a large bag;
insert the other bags and
freeze. In this hurried time
you'll have a dinner in no
time.
Two great, quick dinners
for those leftovers are my
version of turkey divan and
curry.
Enjoy. Countdown to
Christmas next week.

MOCK TURKEY OR
CHICKEN DIVAN
regular or low fat

Leftover turkey or chicken
Leftover gravy
Fresh or frozen broccoli
Cooked medium or wide
noodles*

Thaw meat to room
temperature. Thaw gravy,
bring to a boil and whisk to
reconstitute. Add cut up
turkey or chicken and heat
though. Cook broccoli in
small amount salted water.
Serve divan in individual
au-gratin dishes, topping a
serving of noodles with a
couple of broccoli spears,
turkey and gravy.
Beware of egg noodles.
Their first name is egg,
therefore they are high in fat
and cholesterol. Use no-
yolk noodles instead.
Season with salt and
pepper and a little butter
substitute.

LEFTOVER TURKEY
OR CHICKEN CURRY
serves 4 to 6
regular or low fat

This curry is a simple
variation of the real thing.
It's a winner and takes
almost no time to prepare.

1/2-cup each, finely
chopped onion and celery
1 tablespoon canola oil or
water
2 cups chicken broth,
homemade or canned


ROMANCING
THE STOVE

1/2-cup tomato sauce
1/2-cup water
1/2-teaspoon Worcester-
shire sauce
Several sprigs fresh Italian
parsley, chopped, or 1
tablespoon, dried
Salt and pepper
1 teaspoon to 1 table-
spoon curry powder,
depending on how strong
a flavor you want
3-4 cups cooked turkey or
chicken, cut up
1/4-cup flour
3-4 cups cooked rice or
noodles
Cooked broccoli spears

Lightly brown vegetables
in oil, adding water, if
necessary.
Add the chicken broth,
reserving 1/2-cup. Add the
tomato sauce and water, a
little salt and pepper,
Worcestershire sauce,
parsley and curry powder.
Cook, covered, about 10
minutes. Add meat and
cook 10 minutes longer.
Shake remaining broth
with flour and add to the
pot, stirring until thickened,
adding more water or flour
and water if necessary.
Serve in individual dishes
or any way you choose. I
place broccoli spears over
rice or noodles, then ladle
on the curry.

(turnip)

serves 6 to 8

In my family we have
always called that large,
round, ugly, waxed, orange
root found in the produce
department a turnip. I have
since been corrected and
informed it's a rutabaga.
Try this recipe. The potato

vegetable. One large
"turnip" is enough for any
dinner and leftovers may be
frozen.

1 large rutabaga, peeled
and cut into small chunks
1 large potato, peeled and
cut in medium-size


chunks
Salt and pepper
1 tablespoon butter or
butter substitute

It is very difficult to cut a
rutabaga. In the past, I
placed it on a cutting board
and, using a large sturdy
knife and a hammer, I
hammered it in half.
Now, I have a wonderful
hint from one of my readers.
Place the rutabaga in a
plastic supermarket bag,
loosely tie and place on a
microwave-safe rack.
Microwave on high for 5 to
10 minutes. Carefully
remove from microwave
and rinse under hot, then
cold, water. The wax clings
to the bag and the rutabaga,
though not cooked, is easy
to peel and cut.


Cut it in small chunks.
The smaller the chunks the
easier it is to mash. Place in
a pot with potato, cover with
water and cook until tender,
at least 20 minutes or more.
Drain. An old-fashioned
potato ricerr" is the best way
to mash it or you can use a
food processor. Believe me,
there is so much fiber in this
root that it's tough to mash.
Season with salt and
pepper, add the butter, mix
and serve.

a fish size matters .. '


W en you begin to
fish you must
decide how you will
land your catch.
The jerk up and hope for
the best, method may not
work so well with larger fish.
When properly used, a
landing net is a good choice
from a boat. The person
using the net should have it
submerged well before
attempting to lift the fish. A
fish that seems played out
will find new life if you
splash down a metal hoop
in front of it. Choosing a net
is not as simple a matter as
it would seem.
Size matters! Do not buy a
net that cannot be neatly
stowed in your boat. In
other words, the net should
fit the boat. It is miserable
having a big landing net in
the middle of your deck
where it will snag your
hooks or, worse yet, make
noise when you trip over it.
To that end you should tape
all the metal before putting
it into your vessel.
Your first net decision is
size, but second should be
mesh. If you fish with
artificial baits and the treble
hooks that come with them,
do not buy a net made from
soft cotton string or twine.
Buy a hard plastic or
monofilament mesh. With
the string net you will spend
a good part of your day
trying to extricate your lures
from the twine. Each time
you remove a hook from a
string net you damage and
weaken it.
Never fish with a landing
net standing upright in a
rod holder, sooner or later
you will snag it probably
sooner.
A small gaff can be
effective in the inshore if
you use it carefully. Always
lip-gaff any fish you intend

to release. Most fish will
recover from a small lip
puncture. If you plan to eat
the fish hit it with the gaff
sharply. Don't be shy. Give
your catch a firm, lifting
blow and you will have
success. Any gaff should
have a sharp point and a
light coat of oil.
In later years, there has
been a run on fish gripping
tools. They are great in
theory, but some fall short.
The Boca Grip is the best
tool to grab and land a fish
without doing damage to
the animal. The mechanism
that looks like small ice
thongs grabs the fish at the
front of the mouth and will
release with the twist of the
wrist. Some models even
have a built-in weight scale.
On the downside, the Boca
Grip can run around $100.
De-hookers are less
expensive and consist of a
long rod with a twist at the
end to provide an easy
removal of a swallowed
hook. Every fisherman
should have a pair of needle
nose pliers handy. Another
good tool is surgical forceps
that will aid in releasing
deeply embedded hooks.
Many tackle stores now
carry forceps-type hook
removers.
Of course, best of all is the
bare hand or maybe one
with a glove. Grab your
catch by the tail with one
hand and remove the hook
with the other while leaving
the fish in the water for an
ideal release. Do not lip a
saltwater fish. That is, pick it


up with your fingers in its
mouth. Sure, some inshore
fish like snook, drum and
red fish are safe to handle in
that manner, but most
saltwater fish have teeth.
After spending my youth
bare-handing Louisiana
largemouth bass, my first
saltwater catch was a five-
pound blue fish. I still have
the scars to prove it.

Amaryllis

WTth the holidays
almost in full swing,
ne of the most
sought-after, novelty plant
items is the amaryllis bulb.
These colorful plants are
very easy to grow and bloom
with very little effort. They
can be grown inside or out
and are a staple at most
retailers during the holiday
season.
These colorful plants
actually originated in South
America's tropical climate.
The botanical name for the
amaryllis is hippeastrum.
Because of the large, colorful
flowers the plants produce,
this bulb is in large demand
worldwide during the winter
months.
These gorgeous plants
come in a wide variety of
colors, which include red,
white, pink, salmon and
orange. You can also find
many varieties that have
variegated flowers with an
array of colors in a single
bloom. These bulbs will be
available at many retailers in
the coming weeks.
Amaryllis bulbs can be
purchased in bulk package,
as well as in kits, where all
you have to do is unpack the
kit and water the soil.
If you choose to plant your
own, first place the roots and
base of the bulb in lukewarm
water for a couple of hours. If
you get your bulbs and you
are not ready to plant them
right away, store them in a
cool place at 40 to 50 degrees.
Your fridge is a great place to
store the bulbs until you are
ready to plant them.
Amaryllis bulbs like to be
planted in a good-quality
potting mix, such as Miracle
Gro. Plant the bulb up to the

neck area in the potting mix.
Be gentle with the roots so
you do not damage them.
Firmly pack the soil around
the bulb so it stays securely in
place.
Your new bulbs will do
really well in a warm place
with bright light. The warm
temperatures really make the
bulb grow rapidly and it will
bloom in no time.
Water your new plant quite
sparingly when it is first
sprouting and gradually
increase the amount of water
the plant receives as it grows.
The blooms can last for
several weeks, and if you
plant the bulbs at two- or
three-week intervals, you can
ensure lots of color for many
weeks to come.
Amaryllis bulbs can be
trained to re-flower by simply
cutting off the spent flower.
When you notice the stem
starting to wilt, cut it back at
the base of the bulb and the
flowering process will start
again.
When you walk in to
almost any lawn and garden
center, impatiens will most
likely be the dominant plant.
You will find them in all
colors and sizes from a small,
4-inch pot all the way up to
14-inch (or larger) color
bowls. Many stores also carry
six packs and 24 packs.
As a rule of thumb, if you
are going to plant a garden
with impatiens, plant lots of


stays mucky, impatiens will
develop root rot. They do,
however, need to be kept
evenly moist.
If you let an impatiens
plant dry out too much, the
plant will wilt. Even though


the plant will appear to
recover when you revive it
with water, there is still
damage that has done.
Repeated bouts of drying out
will compromise the plant
quality dramatically over


time.
If you have a sprinkler
system, do not rely on it 100
percent for your flowers.
Always supplement your
watering regime with hand
watering.
