Hispanic Festival set Sept. 26

It's fiesta time at the Palm
Bay Public Library.
The library, 1520 Port Mal-
abar Blvd N.E., is the site of
the fifth annual Hispanic Fes-
tival, which is scheduled for
11 a.m. to 4 p.m. Saturday,
Sept. 26.
"Usually we get about 400
people" at each event, said


Julie Bryant, who is a mem-
ber of the library's reference
staff. "We're hoping for more
this year. (The festival) is
much bigger than in the
past."
This year's celebration will
include several new features,
such as food, crafts and a
muscle car exhibition. The
food vendors are Linda's
Dominican Restaurant,
Maduros Cafeteria, La

Potters host grand opening Oct. 2


Group will open
gallery/studio
to local artists

One of the most chal-
lenging aspects of being an
artist is finding a place to
display your work.
But soon, this won't be a
problem for a local group
of potters, who have, liter-
ally, taken matters into
their own hands.
The Indian River Potters
Guild will host a grand
opening Oct. 2 at its new


gallery in downtown Eau
Gallie at 1542 Guava Ave.,
Melbourne. The ribbon-
cutting ceremony will
coincide with Eau Gallie's
monthly First Friday event.
The Indian River Potters
Guild is a co-op group of
artists who have founded
and financed their own
studio and gallery. The
concept was initiated by
ceramic artist Valerie
Karas, who, with her hus-
band, initially purchased
and renovated the space.
"We started (the guild)
because I thought potters
needed a place to work, a
place they have total


access to," Mrs. Karas said.
"I have all the equipment
they need, including a slab
roller, three kilns, an
extruder, 10 wheels, a
classroom and a dry stor-
age room."
There are currently nine
members enrolled in the
guild. Each member pays
an initial start-up fee of
$450 and a $175 monthly
access fee, which covers
the cost of operations. In
exchange, artists have 24-
hour access to the facility
and its equipment and are
able to use a portion of the
gallery space to display
their work. Ms. Karas said


membership is open to
any Brevard County potter
and she'd like to build
membership to between
20 and 24 members.
Jean Thomas, an adjunct
professor at Brevard Com-
munity College who teach-
es art and design, is an
inaugural member of the
guild. Ms. Thomas works
in clay hand-building to
create sculptures. She said
she joined the guild to
have a place to pursue pot-
tery in a professional envi-
ronment and she enjoys
the feedback afforded by
membership in the organi-

In just two months, "Bree
Varda," a 330-pound log-
gerhead sea turtle who
calls Melbourne Beach
home, has traveled more
than 750 miles.
By early September,
"Bree" as she is known by
her followers was swim-
ming south of the
Bahamas, meeting up with
old friends and dining on
some delicious seafood.
While a common voyage
for many loggerheads,
"Bree" is no ordinary turtle.
Every move (or swim)
she makes is being tracked
by thousands of students,
conservationists and sea
turtle enthusiasts from
throughout the world.
"Bree" is competing in a
marathon alongside 10
other sea turtles released
from different areas in the
world as part of the sec-
ond-annual "Tour de Tur-
tles."
Created by the
Caribbean Conservation
Corporation, the program
was designed as a way to
involve and educate the
public in research efforts,
as well as promote sea tur-
tle conservation, said
Rocio Johnson, marketing
and communications coor-
dinator for the CCC.
Each year, the organiza-
tion selects a group of
female nesting sea turtles
and equips each shell with
GPS technology, allowing
scientists, as well as any-

Brevard Community College campuses go 'green'


College officials make changes
to reduce environmental impact

The school colors may
be blue and white but Bre-
vard Community College
was recently recognized
for going "green."
The college has earned
designation as a certified
green business, becoming
the first green campus in
the state and the nation.
BCC received its certifi-
cation from the Green
Business League, an
organization based In
Plainfield, Ill., that offers
training in green technol-
ogy best practices.
Richard Paradise, asso-


ciate vice president of
facilities for BCC, oversaw
campus-wide green
efforts. He said the certifi-
cation is oriented toward
day-to-day operations,
rather than construction,
and that the school has
made numerous changes
to each of its four cam-
puses.
"This is an ongoing
process, not an event,"
Mr. Paradise said. "Our
goal is to create an envi-
ronment for our students
and staff to be successful."
Changes include new
gas-powered boilers with
a higher efficiency rating;
monitoring systems that


regulate air conditioning
college-wide; the use of an
all-natural cedar oil prod-
uct to conduct insect
treatment on a building at
the Cocoa campus; and
the low use of volatile
organic compounds such
as paint, adhesive and
carpeting.
Mr. Paradise said the
college's decision to tran-
sition to a four-day work-
week has also had a signif-
icant impact on Brevard
County. All Brevard Com-
munity College campuses
are closed on Fridays,
excluding student support
services such as the
library and the learning
resource lab.

fessionals, who will offer free
blood pressure checks, chi-
ropractic tips and informa-
tion about the stomach-
reducing Lap-Band surgery.

Save time, vote from home, says manager

Brevard County residents
who want to vote by mail in
the Nov. 3 municipal elec-
tions have until 5 p.m. Oct.
28 to request an absentee
ballot.
These elections are for
voters in Cape Canaveral,
Cocoa Beach, Indialantic,
Melbourne Beach, Rock-
ledge, Satellite Beach and
West Melbourne. All com-
pleted absentee ballots
must be received at the
county supervisor of elec-
tions office by 7 p.m. Nov. 3.
There are several advan-
tages to voting by mail, said
Karen Graham, mail ballot
manager in the supervisor
of elections office.


For example, absentee
voters "don't have to stand
in line," she said. "The main
thing is, one ballot request is
sufficient for the next two
federal general elections," a
provision that took effect in
2007.
Mrs. Graham said voters
should feel comfortable vot-
ing by mail.
"I think there is still the
stigma out there, one, that
you have to be outside the
county (to mail in your vote)
and two, that your ballot is
not counted," she said.
"That is not true."
About 290,000 county vot-
ers cast ballots in last year's
general election, which
included voting for the U.S.
president. Of that total,
68,304 voted by absentee


ballot, Mrs. Graham said.
Voting by mail seems to be
a growing trend throughout
Florida, she said.
Requests for absentee bal-
lots maybe submitted for sin-
gle or multiple elections, or
for all elections through the
next two regularly scheduled
general elections.
Officials are now taking
absentee requests for the:
Nov. 3 municipal elections
Primary election on Aug.
24,2010
General election on Nov. 2,
2010
Primary election on Aug.
28,2012
General election on Nov. 6,
2012
Officials recently began
sending absentee ballots for
the Nov. 3 elections to voters


who requested them.
Subsequent ballot mailings
will take place on Sept. 25 and
29, Oct. 1, 6, 8, 12 and 14, and
each day from Oct. 19 through
Oct. 27, except on Saturdays
and Sundays.
On Oct. 29, ballots will be
sent for all requests received
through 5 p.m. Oct. 28.

Melbourne Square Mall hosts Senior Days

Seniors, it's all about you.
Melbourne Square Mall will host a
monthly event, called Senior Days, tar-
geted toward the 55 and older commu-
nity.
Senior Day is designed to provide a
free day of entertainment, activities
and information for seniors.
"Each month is a theme month, and
(next) month we'll have a costume
contest," said Niesha Vitello, referring
to the upcoming Halloween holiday.
The winner of the costume contest
will receive a VIP package for six on
Sun Cruz Casino, which includes a


meal, $10 in casino cash and two drink
coupons per person.
Other activities planned for the
October event, which will take place
Oct. 1, include:
a performance by Melbourne
Community Orchestra
a health seminar titled, "Hal-
loween Home Workout," hosted by
Connected to Fitness, which will fea-
ture ways to work out at home with-
out gym equipment
a hands-on art project facilitated
by Art on Fifth of Indialantic during
which participants will make wire
jewelry; seating is limited
free bingo from 9:30-10:30 a.m.

Mr. Paradise said the
decision to go to a four-
day workweek, in which
employees work four, 10-
hour days, has also pro-
duced fringe benefits.
"Absenteeism went
down and productivity is
now up," he said. "For
example, people aren't tak-
ing time off from work to
go to the doctor because
they're scheduling their


appointments on Fridays."
School officials plan to
institute several more
changes designed to
reduce energy consump-
tion.
Future plans include
controlling lights in con-
ference rooms, offices and
classrooms with motion
sensors and converting
exterior light fixtures from
high-pressure sodium to


LED, which saves 200-300
watts per fixture per hour.
Bob Jones, the college's
certified green consultant
and director of custodial
services contracts, pre-
sented the certification to
BCC president James
Drake during a recent
board of trustees meet-
ing. The certification
process began in January
of 2007.

Road service dissatisfaction

If what I have heard about the road work being done in
downtown Titusville, the City Council needs to change
the city's motto from City of Service to City of Disservice.
U.S. 1 South (Hopkins Avenue) and U.S. 1 North (Wash-
ington Avenue) from Garden Street in the north to St.
John Street in the south are road crews working with
concrete cutters, barricades, and other street equip-
ment. The plan: To make both streets one lane. Also, to
widen the sidewalks for pedestrians.
What? There are so few people who actually walk
through the downtown streets as it is now. I also heard
that it is so it would be like Cocoa Village. Let's compare:
S.R. 520 is a main thoroughfare, east and west, through
Cocoa. Cocoa Village is south of S.R. 520 and does not
have the traffic of S.R. 520. Hopkins and Washington
avenues (U.S. 1 south and north bound) are major thor-
oughfares going right through the middle of downtown
Titusville.
Flash forward to the completion of the road work and
both the morning and afternoon rush hours for workers.
The ensuing traffic jams would cause the motorists to
seek alternative routes. Doing that will affect the mer-
chants, who have businesses in downtown, much worse
than it is now.
I wonder who the lamebrain is that came up with this
idea of "progress." With the economy the way it is and
city government crying the blues about lack of revenue,
why are they spending taxpayer money unnecessarily?
How long will it be before they want to raise taxes on
everything?
Drive on either Hopkins or Washington avenues and
you will now see nice, big, blue and white signs (sand-
wich type) indicating where each merchant is located.
Another needless idea at taxpayer cost, although I will
admit it is beneficial for visitors to downtown (all 50 of
them) in a year's time.
A better use for taxpayer monies would be to put
curbs, gutters and sidewalks on every residential dirt
street, instead of just certain sections of the city. Maybe
the time has come to "clean house" of the city council
and the frivolous committees it has spawned.

For the People

Every fourth of July is a good time to reflect and mar-
vel at the courage and determination of our country's
forefathers. They left the only lives they knew to brave
hardships and death in their travels to a new continent
to seek and build a better life. The founders of our coun-
try used their intelligence and creativity to fashion a
new kind of government. Instead of the government
controlling the people, they wanted the people control-
ling the government.
In other words, a government "Of the people, by the
people and for the people." The two amazing and pre-
cious documents orchestrating this new type of the gov-
ernment are the Declaration of Independence and the
Constitution with its Preamble and the Bill of Rights.
The result was a system that has brought individual
rights and freedoms unknown in history. It took blood,
sweat and tears because freedom is never free, but our
country prospered and became the most powerful
nation in the world. The prime responsibility of the gov-
ernment was to provide protection to the people in the
event of attack. The government was to promote domes-
tic tranquility, not provide domestic tranquility.
Now, more than 230 years later, we have a government
so monstrous in size that it is not only cumbersome but
also feels threatening. We, the people, have managed to
vote in leaders and benefits resulting in serious eco-
nomic problems as well as huge growth in government.
We have also lost many of our rights and privileges in
the process. We have become so dependent upon our
government for help with most of our problems that we
may be losing our ability to find our own solutions. We
may be headed for a situation in which the people are
"Of the government, by the government and for the gov-
ernment." If our founders could see how things have

turned out, they might well shake their heads and won-
der why people seem to be choosing to give up their
hard won rights for "easier" lives in which unknown
bureaucrats make our decisions and control every
aspect of our lives.
Our politicians' behavior has run amok. States-
manship doesn't occur when a senator continually
flip-flops his influence over his state's selection
process for an interim senator because he agrees or
doesn't agree with his state governor's party affilia-
tion. High standards of ethics and trust doesn't exist
when institutions curry favor from congressional


leaders by offering exorbitant financial contribu-
tions via lobbyists and "government advisors." The
"pay to play" ideology is unacceptable.
Finally, politicians have no merit when they osten-
sibly vote on a bill before reading and knowing its
content in its entirety.
Do we really want this? A large government that
has placed its people in jeopardy. A government
unable to say no to big spending and stand account-
able for its own actions. Let us start solving our own
problems by keeping government out of the solu-
tion.


'Cash for Clunkers' too costly for taxpayers

To the Editor:

Let me see if I understand President Obama's "Cash for
Clunkers" program.
General Motors was going into bankruptcy but received
a $60 billion bailout of U.S. taxpayers' hard-earned money
in order to stay in business and pay their idled workers to
stay at home. Therefore, the vehicles built by GM were
paid for by the people who pay any taxes. Then a buyer
received $4,500 of taxpayer money as a "clunker" rebate
off the price of the vehicle paid for by the same taxpayers.
Next, the buyer borrowed the money to finance his new
GM vehicle from GMAC, which was going bankrupt, but
also received a $6.5 billion bailout of U.S. taxpayers' hard-
earned money. The buyer is now going to repay GMC the
taxpayers' bailout money for, say, 48 months plus 5
percent interest, or about $2,500, to borrow the taxpayers'
money.
That interest money stays with GMAC since they are not
required to pay back the taxpayers for their bailout.
Think about this example: the taxpayer just paid for
building the vehicle, all buyers bought their vehicles with
the taxpayers' bailout money, were given a rebate paid for
by the taxpayers' bailout money, and are paying interest
for borrowing that money. GM and the U.S. Treasury
Department already have stated that "GM probably will
not be able to pay back the taxpayer money" used for their
bailout. And to really rub your nose in it, over half of the
"Cash for Clunkers" buyers pay no income tax.
So, based on the above information and assuming that
50 percent of U.S. citizens pays 100 percent of the federal
income tax, 50 percent of the "Cash for Clunkers" buyers
paid $49,000 each for a $24,500 vehicle, plus interest to
cover the non-taxpayer's new vehicle.
Once again, a great government program paid in full by
the U.S. taxpayer. I don't know if we can take any more of
Obama's successes. I can hardly wait for Obama's "new"
health care reform bill to be rammed through Congress
and become law.
Keep in mind, the "Cash for Clunkers" program only
cost the U. S. taxpayers $3 billion. The Obama health care
bill is estimated to cost a minimum of more than $1
trillion. And this is going to paid completely from savings
from other government-run programs?
My guess is that the money to pay for the health care bill
will end up coming from the 50 percent of U.S. citizens
who pay 100 percent of the federal income taxes. Scary
thought, and I hope I am wrong.

Never forget Sept. 11

To the Editor:

I don't believe that I have ever, in my entire life, been as
angry as I am right now.
My daughter in Northampton County, N.C., asked her
kids what they did in school today and was told that they


celebrated "Grandparents Day."
She then asked each child what they did to remember
the events of Sept. 11, 2001.
Nothing! That's right, there was no mention of Sept. 11
at all.
Each of her kids attend a different school (different
ages) and none of the schools made any mention of Sept.
11 at all.
No flag at half-staff.
No moment of silence.
No history lesson regarding the events of that day.
No acknowledgement that over 3,000 Americans lost
their lives to a terrorist attack on our country.
No explanation about the reason that we are fighting
two wars in Iraq and Afghanistan.
Nothing!
I am absolutely livid.
And I just now spoke to my nephew, who attends Cocoa
High School, and he said the same thing: That there was
no mention of it at all.
I can only hope that these are isolated cases and that the
rest of the schools in the country did not ignore an
opportunity to teach our history to kids too young to know
what happened.

Respect the blind

To the Editor:

In recent months, my son, Andy, acquired a guide dog
due to the fact that he was horribly beaten in the back of
the head and permanently lost his sight.
I am utterly appalled every time we venture to every
store in town at the shear ignorance of the general public,
who regardless of seeing a man with a cane and a har-
nessed dog, refuse to stop and let him cross the parking
lot.
This has occurred every time we've gone out. Thank
goodness I've been with him most of the time.
Service dogs are a wonderful help, but they are not
aware of people's ignorance. If it is an especially hot day,
Andy will not take his dog for fear the pavement will burn
her paws. He must then take only his cane. A blind person
doesn't wear a sign around his neck. The cane signifies a
handicap just as a wheelchair.
A lot of people don't realize a service dog is literally
working and constantly learning. Molly is a beautiful
white lab, not a German Shepard. The public must also be
aware that service dogs come in many breeds, shapes, and
sizes. Many innocent people often compliment Andy on
the dog and want to pet her. Some scoff at the sight of a
dog being in a store or restaurant, even when they see the
harness a guide dog wears.
I am asking anyone who reads this to make family and
friends aware of these facts. Slow down in parking lots,
and double-check at intersections.
Blindness is a terrible thing, especially if you can see.

Turtles

This year's 11 turtles were
released at different times
throughout the year,
depending on their species.
They did not start being
tracked, however, until
early August when each tur-
tle had been released to
ensure no turtle got a head
start.
The first turtle to travel
1,628 miles will be named
winner of the marathon.
The tracking devices,
which remain in operation
for about three months, are
known as Platform Termi-
nal Transmitters, which
send signals via satellite to
record the locations of the
turtles and their distances
traveled.
Each turtle is also swim-
ming for a cause to raise
awareness about a specific
threat to sea turtles, Ms.
Johnson said.
People are encouraged to
participate by sponsoring

"Scientists suggest each
turtle has a magnetic fin-

brain, which helps them
identify how to get back to

said. "They've identified
patterns of the turtles zig-
zagging along in various
directions and then head-
ing right back in a straight
line once it's time to mate
and nest."
As of press time, "Bree"
slipped into fourth place in
the marathon with "Luna,"
a leatherback from Panama
taking the lead and "Naya"
and "Patty" following close
behind.
The name "Bree Varda"

Inmate-made items saving tax money

County Sheriff's Office is con-
sidering expanding a success-
ful program in which jail
inmates put their sewing skills
to work.
The program began in 2007
and involves female inmates
sewing together the uniforms,
bed-sheets and mattresses for
all inmates at the Brevard
County Jail Complex. The
total jail population is about
1,300 to 1,400 inmates, said Lt.
Ed. Pellasce, information offi-
cer for the jail complex.
"We've seen at least $90,000
in savings since the program
began," he said Aug. 7.


For example, the Sheriff's
Office saves about half of the
uniforms' cost by having
them made in-house, rather
than ordering them from a
company, Lt. Pellasce said.
"There was no cost to set
this up, except for the sewing
machines," he said. "That cost
was recouped within a couple
of months."
On any given day, between
five and eight female inmates
perform sewing tasks, he said.
They make black and white
striped uniforms, which are
worn by inmates who work
out in the public, as well as
color-coded uniforms worn
by inmates inside the jail: red
uniforms are worn by high-
risk inmates, or those who

Who's at risk and why?

More than 28 million Americans approximately one out of 10 people
- have a hearing loss, according to the Web site HearingLoss.org. But this
doesn't mean everybody has the same type of hearing loss, nor is there a sin-
gle one-size-fits-all solution.
Hearing loss can be divided into two main categories: sen-
sorineural and conductive.
Sensorineural hearing loss, often called "nerve deafness,"results
from damage to nerve endings in the inner ear. Common causes
include prolonged exposure to excessive noise, the aging process,
viral or bacterial infections, the use of certain medications, genetic
syndromes and trauma to the head. Sensorineural loss is most com-
monly treated with hearing aids.
Conductive hearing loss occurs in the outer and/or middle ear.
Obstructions, such as earwax, or physical abnormalities impede the
ability of sound waves to move through the ear canal. Most cases of
conductive hearing loss can be corrected with surgery or medicine.
Some people experience "mixed"hearing loss, which is a combina- ."
tion of sensorineural and conductive loss.
By far, the most prevalent type of hearing loss, representing
about 95% of all cases, is sensorineural. Contrary to what many
people think, old age is not the number-one risk factor for sen-
sorineural loss. In fact, extended exposure to noise causes about 34%
of all hearing loss in the U.S., followed by the aging process at 28%.
In today's increasingly noisy society, consumers can protect their
hearing simply by wearing an inexpensive set of ear plugs. While
extremely loud noises, including those generated by rock concerts
and firearms, are typically associated with hearing loss, even compar-
atively low-level noises coming from lawnmowers, busy freeways and
other everyday sources can take their toll over time.
Despite preventive action, hearing loss may not be entirely avoidable, due
to genetics or other factors. Consumers who suspect a hearing loss should
seek care from a qualified professional: an otolaryngologist, audiologist or
hearing aid dispenser.


Recognizing hearing loss -

and getting help
A person's hearing ability usually deteriorates over long periods of time, fre-
quently during a 25- to 30-year span. Because of its gradual onset, hearing loss is
difficult to detect. Often the person with the hearing loss fails to recognize the
problem; rather, it's family members or friend especially someone who
hasn't been with the person for a while.
Following are some of the most common signs of a hearing loss:
Asking people to speak more loudly or slowly
Frequently asking others to repeat themselves
Hearing people talk, but not understanding what they're saying
Particular trouble understanding children's or other high-pitched voices
Difficulty hearing on the telephone
Unable to hear the telephone or doorbell ringing
Family members complaining about the TV or radio being turned
up too loud
Difficulty hearing conversation while riding in the car
Avoiding social situations because of background noise and difficulty

Lack of participation in meetings and other gatherings
Feelings of being left out of discussions or"people are talking about

In the past eight years,
Kristen Malfara and her team
have helped hundreds of
families throughout Brevard
County and across the coun-
try.
As a baby, her son, Morgan,
who will turn 12 this October,
was diagnosed with leukody-
strophy, a rare disease that
causes degeneration of the
white matter of the brain.
In addition to caring for
their own son, she and her
husband, Robert, made it
their goal to help the care-
givers of other critically ill
children with special needs
through individual assis-
tance and small grants, while
keeping them informed
about treatments, tech-
niques and the latest
research results.
"There was no other
organization like it around
when we started," said Mrs.
Malfara, a Melbourne Beach
resident. "We wanted the
opportunity to help others in
similar situations."
Earlier this year, Mrs. Mal-
fara was honored for her
work with the MORGAN Pro-
ject which stands for Mak-
ing Opportunities Reality
Granting Assistance Nation-
wide by a national platform
sponsored by People Maga-
zine and Major League Base-
ball.
She was selected to repre-
sent the Florida Marlins as
one of 30 'All-Stars Among
Us" from throughout the
country, who have dedicated
themselves to community
service.

In July, Mrs. Malfara and
her sister, Sharon, who nomi-
nated her for the award,
joined the other representa-
tives in St. Louis to receive
four days of the "star treat-
ment."
They attended a VIP 'All-
Stars" reception, the MLB
Home Run Derby and the
MLB All-Star FanFest, among
other events. Mrs. Malfara
was also recognized for her


efforts on the field of the MLB
All-Star Game, which had a
crowd of more than 50,000
fans.
She was also honored dur-
ing a speech by President
Barack Obama and was
thanked personally by
dozens of All-Star players.
"It was such an amazing
experience," Mrs. Malfara
said. "I was truly blown
away."


Each year, the MORGAN
Project hosts an upscale
cocktail party hosted by
Lexus of Melbourne as a way
to thank its volunteers and
contributors.
But this year's event Oct. 17
will also honor Mrs. Malfara
for her recognition as a Major
League Baseball 'All-Star
Among Us."
This year's theme "Go
Beyond" encourages atten-
dees to step up to the plate,
and make a difference by
supporting these families in
need, Mrs. Malfara said.
The event will feature both
a live and silent auction, live
music, networking opportu-
nities, hors d' oeuvres and
desserts by Creative Catering
in Melbourne, wine and beer
tasting by the Flying
Corkscrew in Indian Harbour
Beach and d6cor by Eau Gal-
lie Florist and Chairs for
Affairs in Melbourne.
All of the funds raised at
the event will go directly
toward the MORGAN Pro-
ject's support programs.
"It's Morgan who keeps me
going," Mrs. Malfara said.
"For every family we help, it's
just one more way to honor
Morgan. All that we do is in
his name."

Grammy shares a recipe for 'End of the Rainbow' cake


Hello, smart shoppers.
The holidays are
around the corner,
so I must repeat this
amazing cake for special
occasions in both the
original and the low-fat
version.
I found the recipe in a
magazine when I was a
teenager. It was so intrigu-
ing I saved it. Years later, I
made it for my father's
birthday. The fact that he
didn't like cake in any shape
or form didn't enter the
picture. He apologized, but
wouldn't even taste it. Dad
passed away 19 years ago,
his birthday was Feb. 16.
My granddaughter
Christy, another one who
doesn't like cake, requested
it for her birthday. She was
forewarned and promised
she would eat it, which she
did. While her birthday is in
January, we didn't get to
celebrate it until Feb. 16, her
great grandfather's birthday.
Happy birthday, great
grandpoppy!
This cake is a project, but
for a special occasion, you
can just count on the
applause. Enjoy, see you
next week.
This cake is large and
can't be changed; leftovers
freeze great. You can cut the
fat and cholesterol if you
use my recipe for a fat- and
cholesterol-free cake and by
substituting low-fat or fat-
free whipped topping for
the heavy cream.
I will repeat the recipe for
a fat and cholesterol free
cake for those of you who
missed it and then go onto
the recipe in its original
form.

substitute applesauce for
the oil, egg substitute or egg

2 packages white cake mix
Food coloring (optional)
3/4-cup well-drained,
canned, crushed
pineapple
1/2-teaspoon almond
extract
2 tablespoons granulated
sugar
1/2-cup finely chopped
pistachio nuts
1/2-cup apricot preserves,
slightly beaten
1/2-cup raspberry
preserves
1 quart heavy whipping
cream or 8 cups frozen
whipped topping*
2 tablespoons
confectioner's sugar

Day before: In two 8-inch
by 8-inch by 2-inch square
pans or two 8-inch round
pans, bake 1 package cake
mix according to the
package directions. Repeat.
Refrigerate four cooled,
wrapped cakes.
I prepare all of the
whipped cream mixtures
first and then layer the cake.
Early next day: Whip half
the cream, (2 cups). Heavy
cream doubles when
whipped, giving you 4 cups.
Refrigerate remaining
cream.
1. With long sharp knife,
split each of 3 cakes, making
6 layers. On large, low cake
plate, place one of the split
layers, cut side up.
2. With yellow color, tint

one fourth of whipped
cream pale green. Fold in
almond extract, granulated
sugar and nuts. Spread on
third layer; top with fourth
split layer, cut side up.
5. With yellow color,
brighten apricot preserves;
fold in rest of the cream.
Spread on fourth layer; top
with fifth split layer cut side
down. (Use rest of cake
elsewhere).
6. Refrigerate cake for at
least 2 hours to set.
7. Whip remaining 2 cups
of cream, adding confec-
tioner's sugar.
Frost top and sides of
cake, refrigerate until
serving time.
This cake is so tall you will
need dinner plates to serve
it. An electric knife cuts it
best. Decorate cake as you
choose. I used fresh cut,
washed flowers from the
garden. Remember, the
flowers are to decorate, not
to eat, just to look at.

WHIPPED CREAM

Whipped cream is
extremely tricky to catch it
just right before it turns to
butter. Use 2 tablespoons
confectioner's sugar to 2
cups heavy whipping
cream.
Use a high narrow bowl.
Chill bowl and beaters.
Using an electric mixer,
beat at high speed until
frothy. Add sugar and
continue beating, watching
the cream very carefully. It
will start to thicken. Contin-


ue beating, scraping bowl
occasionally. The cream is
whipped when it starts to
have a slight "break-up"
look. Over-beating by just a
few seconds will suddenly
turn it into butter. It will

become a mass with water
around it.
This makes enough to
frost two 8- to 9-inch layers.

Hi everybody. \le are now approaching the
final two months of the Atlantic hurricane sea-
son. We are now in a moderate ENSO condition
called El Nino. El Nino produces oceanic wind
shear that tears apart the tops of would be sys-
tems. There has also been a trough in place
that has been a player in blocking the storms
and allowing them to recurve out to sea. As we
approach the fall season and the climatic con-
ditions begin to change, we will begin to be at
risk for systems coming in from the west. A
good example of this was jWilma in 2005.
l'ilma arrived late in October when we all
thought we were safe from getting hit. Do not
become complacent as we wind down lthe sea-
