A two-time breast cancer survivor,
Ms. Melenwick was first diagnosed
with the disease at age 41, after a

found during a self-exam was most
likely scar tissue.
"I saw another doctor for a second
opinion, and he confirmed my
instincts," she said. "I knew some-

The combination of a

Task Force generated a stir of contro-
versy this month after advising
against routine breast cancer
screening for women younger than
50, who are not at increased risk for
the disease.
Among other findings, the study,
performed by an independent
group of doctors and scientists, was
also against the teaching of breast
self-examination, claiming the
method does not reduce breast can-
cer mortality.
Critics of the new guidelines said
they would stick to what they know
about the disease, but worried that
the findings would result in denied
insurance coverage for
women in their 40s,
labeled not at risk.
After reviewing similar 200
data regarding the issue, V

Help indigent
man who's been

By Jennifer Nessmith

A nurse at Holmes
Regional Hospital and two
local retailers took the
opportunity to "walk a mile
in another man's shoes" to
heart when they made a
donation to a patient who's
been hospitalized since
September.
Jose Kutun is a bilateral
amputee both legs were
removed below the knees -
and a diabetic who's been a
patient at Holmes Regional
Medical Center in Mel-
bourne since Sept. 9, said
Cathy Chapman, clinical
charge nurse and R.N. at
Holmes Regional Medical
Center. He's able to walk on
prostheses.
Mr. Kutun, a native of
Mexico, has no known rela-
tives and does not speak
English. He has been
undergoing dialysis at the
hospital since his admis-
sion nearly three months
ago.
Ms. Chapman said
Nadege Romolus, a certi-
fied nursing assistant,
brought it to her attention
that Mr. Kutun needed new
shoes after she took Mr.
Kutun to the hospital's sup-
ply of used clothing and
footwear which is usually
given to patients who've
had their clothes cut off
during emergency medical
care when they're released
from the hospital to pick
out some "new" clothes.
Ms. Chapman said it was
then she realized she had to
do something.

clothes, she said he went through all
the shoes looking for a pair that
would fit and found nothing," she
said. "The reason I did anything for
him was he's a sweet man, and I
know he didn't have any money."
Ms. Chapman contacted Don and
Denise Piercy, co-owners of The
Running Zone in Melbourne. Ms.
Chapman met the Piercys through
their work with Health First Health
Plans, which sponsors The Running
Zone's annual 5K race series. Ms.
Chapman met the Piercys when she
volunteered for the Health First
team.
"She came into the store and
mentioned it," Ms. Piercy said, "and
I said, 'Let me know when you need
(a pair of shoes for (Jose).'"
The Piercys donated a $100 pair of
Brooks brand running shoes, which
Mrs. Piercy says offer better support
for running and walking because
they typically have more cushion-
ing.
The Piercys delivered the shoes to
Mr. Kutun at the hospital personally.
"I put them on him," Mrs. Piercy
said. "I've never really had an oppor-
tunity to give a donation in person.
It was really neat because it was nice
to see how thankful he was."
Mr. Kutun expressed his gratitude
through an interpreter.
"I like my new shoes," he said. "I
lost both my legs and didn't have
good shoes to put on and help me
get around. I am so happy that the
nurses here wanted to help me."
Mr. Kutun added that he was sur-
prised by the news that he would be
getting a new pair of shoes.
"When the nurses got me new
clothes, I was very happy, but I kept
saying I needed new shoes. There
were no shoes my size. Then they
told me I was getting brand new
shoes, and I was very grateful."
Ms. Chapman said Mr. Kutun's cir-
cumstances have reminded her to
be thankful for her own situation.
"To me, this is about Thanksgiving
and being thankful for our health
and giving people help," she said.
"Sometimes, it's nice to get a new
pair of shoes. I just
hand-me-downs were
good enough."

Some cats and kittens are adopted
within days of being brought to the
shelters, but others have stayed there
for as long as nine months, said Ms.
Cole.
A 40-pound bag of dry cat food feeds
three to four cats for about one month.
Due to the tail-spinning economy,
the shelter has seen a drop off in dona-
tions this year, she said.
"The shelter can use anything and
everything the public would like to
give us paper towels, bleach, and
hand sanitizer but we'd like them to
think of food first," said Ms. Cole.
The shelter is in need of both dry
and wet cat food.
Donations can be dropped off at the

the Molly Mutt Thrift Stores in Merritt

Crowds
From page Al
"Meg O'Malley's was look-
ing for an event to build its
brand and name, so we work
closely with the Old Down-
town Melbourne History
Association," he said.
The group, the nonprofit
arm of the restaurant, pays
for police, trash pickup,
advertising and other
amenities, such as portable
bathrooms and sidewalk
pressure -washing.
But the crowd proved to
be a bit much for the 11
police officers, two super-
vising officers, two firefight-
er-paramedics and four fire
inspectors hired to patrol
the event.
An "after-action" report
issued by Melbourne Police
Department Sgt. M. Casey
stated, "The crowd reached
a point where officers need-
ed to stay on the perimeter,
only entering the crowd to
conduct immediate
enforcement activities. The
crowd reached a maximum
of eight to ten thousand per-
sons in a fairly confined
area."
But downtown business
owners and Melbourne
Mainstreet are in support of
the event, saying it draws
thousands of potential cus-
tomers to an area struggling
to survive in the downtrod-
den economy.
Karen Interva, bakery
manager at Croissant
Chateau, which is directly
across the street from Meg
O'Malley's, said that
although she was closed
during this year's event,
Meg-O-Ween, and Meg
O'Malley's annual St.
Patrick's Day celebration,
are "excellent for her busi-
ness."
"(This year), I dressed up
and participated in (Meg-O-
Ween)," Ms. Inverta said.
"Meg-O-Ween is nothing
more to me than a fun-filled
event. It doesn't help (my
business), and it doesn't
hurt. St. Patrick's Day is an
awesome event, and it does
a world of good for my busi-
ness."
Matt Nugnes, owner and
managing partner of Matt's
Casbah, said his restaurant
tripled its sales during the
event.
"We did great and we look
forward to it," Mr. Nugnes
said. "It's one of those huge
events where anyone who's
open profits."
Laird Gann, executive
director of Melbourne Main-
street, said the event draws
thousands of potential con-
sumers to the district.
"Any downtown area ben-
efits overall from events that
bring crowds because many
of those folks are discovering
(the area) for the first time,"
he said. "These events have a
way of drawing a large num-
ber of new visitors to discov-
er downtown and every
Main Street in the country
deals with these problems.
We host these events to
showcase what we have to
offer."
Cathy Wysor, Melbourne
city clerk, said the city rou-
tinely hosts event follow-up
staff meetings to discuss
plans for future improve-
ments such as crowd con-
trol.
The city will host such a
meeting the first week of
December to discuss future
public safety concerns at the
next regularly scheduled
Meg-O-Ween event. The
meeting, which will include
only city staff members, is
not open to the public; how-
ever, Meg O'Malley's officials
seek community support for
future events and ask resi-
dents to write to the city
clerk's office to voice their
opinions.
To write to the city clerk, e-
mail cityclerkcwysor@mel-
bourneflorida.org.
Mr. Gann added that the
restaurants and nightspots
in the downtown district
strive to keep nearby neigh-
bors happy.
"Our restaurants and our
nightspots are really doing
their best to be responsible
neighbors, and we all must
realize, particularly in slow
economic times, the restau-
rants and nightspots can be
the magnet to draw people
to the downtown."

Got something to say?
Shopping locally is
more important
than ever this year
Naughty or nice?
Last year in this column,
I wrote about the impor-
tance of buying locally. In
preparing this year's col-
umn, there were a few
things I thought I should
talk about: our half-price
gift certificates (which
make great stocking
stuffers), the numerous
awards we have garnered
over the past year or the
fact that we have managed
to not only survive, but
prosper in this dismal
economy.
But then, I started hear-
ing from local business
people. They were having
the same problem they
were last year: holiday
dollars being spent at big
chain stores instead of
their places.
They asked me to call
attention to this again.
And they're not just asking
for help without doing
something themselves.
Several local business
owners and city officials
are joining the national
3/50 project. According to
its Web site and various
news reports, the 3/50
Project supports small
local businesses and is
committed to "saving the
brick and mortars our
nation is built on."
It asks shoppers to pick
three of their favorite
independently owned
shops or restaurants and
then spend $50 at each of
them once a month. There
could not be a better
month than December to
do this.
According to 3/50 Pro-
ject statistics, for every
$100 spent in locally
owned stores, $68 returns
to the community through
taxes, payroll and other
expenditures. For every
$100 spent in a national
chain, only $43 stays in
the community. Online
shopping? Your communi-
ty gets none of those dol-
lars.
Christine Davis, presi-
dent of the Melbourne
Palm Bay Area Chamber of
Commerce, said the
chamber does not make
any differentiation to
chain stores, as they "still
provide sales tax revenue
to the local economy."
"However, being an
organization comprised
mainly of small business-
es, we urge shoppers to
patronize locally owned
shops and consider what
they can buy in town
before making an Inter-
net purchase out of the
area," she said. "This is
really where a lot of our
dollars are leaking."
PUBLISHER '
& C.O.O. ,
STEVE .
ERLANGER '
Ms. Michaels said that
she and her staff are also
familiar with the 3/50 Pro-
ject and its importance in
improving the economy of
local businesses.
"In these tough eco-
nomic times, many have
to curtail their spending,
so we do not advocate a
dollar amount that one
should spend," she said.
"We simply ask that if you
are spending, try to con-
sciously patronize a local
business to keep the tax
revenue local and keep
ourselves and our neigh-
bors working."
Melissa Stains, presi-
dent the Cocoa Beach
Area Chamber of Com-
merce, said, "partners
doing business with part-
ners first," is this year's
campaign for the cham-
ber.
While the Cocoa Beach
Area Chamber of Com-
merce does not partici-
pate in the 3/50 Program,
encouraging chamber
partners to do business
with other partners first is
the key to promoting a
healthy local economy,"
said Ms. Stains.
"When a partner in the
Cocoa Beach Area Cham-
ber of Commerce is in
need of a service or prod-
uct, they go to our Web
site and find a partner in
order to business with
them first. The chamber
has grown quite a few
businesses this way. We
help keep the dollars in
Brevard County and are
helping chamber partners
stay in businesses and
prosper."
So once again, I implore
our loyal readers to
patronize local business-
es. When you are heading
out to do your holiday
shopping, don't automati-
cally point your car
towards the big box stores.
Take a moment and find
out where you can make
those same purchases
from a neighbor. I realize
it can sometimes be much
more convenient to just
hit the big box, but most
things that bring quality
to our lives aren't associat-
ed with convenience.
If we all do this, the pos-
itive impact on our com-
munities will be enor-
mous and make it a much
happier holiday for every-
one.

Is the county working to save money?
To the editor:
Overwhelming evidence indicates a dramatic reduction
in revenue for Brevard County in the coming years, yet
three of five county commissioners continue to act as
though we are living in the high-flying days of the real
estate bubble.
Commissioners Bolin, Fisher and Nelson voted Nov. 17
to extend a contract with AT&T that expires in August of
2010 for an additional three years at a cost of $3.2 million
per year without going to bid, and in spite of competing
vendors showing they could save the county between 40
and 70 percent on some of the services AT&T was provid-
ing.
This unnecessary and lengthy contract extension means
the county is now "frozen" as is in regard to its voice and
data network with no possibility of change for the next
four years a lifetime in the realm of technology.
The county's phone system is obsolete, its manufacturer
bankrupt, and third-party industry data indicates the
county could have saved between $1 million and $2 mil-
lion per year by implementing newer technology savings
that would have paid for the new system in less than two
years.
Commissioners Bolin and Nelson alleged fiscal con-
servatives squandering your tax dollars with a smile.
Matt Nye
Candidate for Brevard County Commission
District 4
http://www.mattnye.com
Response from Commissioner Fisher
We supported and made the motion that we go out for
the RFP and agreed to take the immediate saving and hire
a consultant to study the long-term needs of the county.
Since we were still under contract until August of 2010, we
would have been paying $250,000 over the next nine
months for phone services this year; plus would have had
to use taxpayers' dollars to pay the consult $150,000 to
study our systems, the combined cost of $400,000 This was
an immediate saving.
We were able to modify our contract cost by piggy-back-
ing off the School Board's recently detailed RFP process.
We just saved the county $1.2 million (over three years)
and that is a verifiable number. The numbers that Mr. Nye
is quoting is not supporting any facts. He had a chance to
produce the facts at the meeting and did not. Nor did he
produce any facts to save the school board any money
when he had the opportunity. We saved the county money
today and did not have to spend or borrow $2 million for
capital purchases for a new phone system with no guaran-
tee that we would have any savings. Citizens in District 1
are not interested in the County Commission having the
newest technology when it comes to our phones. They
want reliability and want us to stop making unnecessary
purchases.
We will be taking the next 24 months and doing a com-
plete study of the county's long-term needs when it comes
to phone and data service. We will not be spending money
on speculations and unproven opinions of salespeople
who wants us to use their company like Mr. Nye wants us
to.
(Note: To clarify the Commissioner's remarks: Mr Nye is
Regional Director for Verteks, Voice & Data Networks, and is
also seeking the same contract.)
Robin Fisher
Brevard County Commissioner
District 1
Response from Commissioner Nelson
This past Tuesday, County Commissioners Fisher, Bolin
and I voted to extend a communications contract, saving
Brevard taxpayers $1.1 million over the next three years. In
addition, we voted to proceed with competitively bidding
a replacement system to potentially save additional dol-
lars.
But in a letter to the editor from Matt Nye, he criticized
the board for taking these actions. Why? Because he wants
the county to declare a system he sells a "sole source" and
shut out competition from other communications com-
panies. He claimed he could save the County between 40
percent and 70 percent, yet never provided the details as
to how. He didn't mention the new equipment costs to
make the change could run in the millions. His letter was
nothing more than continuation of a sales pitch intended
to line his pockets with taxpayer dollars. The truly trou-
bling part is that he identified himself as a candidate for
the County Commission and not as the salesman.
At a minimum, this was deceptive and unethical. I
believe the public deserves and demands greater honesty
and transparency from anyone seeking to serve.
Chuck Nelson
Brevard County Commissioner
District 2
Response from Commissioner Bolin
At the Nov. 17 Board of County Commission meeting,
the Commissioners heard from a variety of company
representatives, including salesman Matt Nye, interest-
ed in acquiring a county contract for voice and data
services. Contrary to what you may hear, three com-
missioners did not see credible evidence presented by
any vendor that could convince them of an immediate
price reduction for equitable services. Mr. Nye had the
opportunity to provide hard data supporting his pro-
posal and did not do so. Therefore, the best direction
we could provide staff was to take it to the street, and
get the numbers. It is my goal to have that in place as
soon as possible. Bidding it out provides equal oppor-
tunity and some assurance of the best value for Brevard
County.
Brevard County has a massive voice and data net-
work with a multitude of circuits and locations. Tax-
payers fund a variety of communication services
through this network; for example, citizens may
reserve a library book, view the schedule for Space
Coast Government Television or call 911 in an emer-
gency. In addition to all Board of County Commission-
er agencies, the network provides voice and/or data
service to the sheriff, property appraiser, tax collector,
supervisor of elections, state attorney's office, public
defender's office, and the Brevard County court system.
There were two agenda items presented regarding
the network. The first was for a scheduled replacement
of electronics for the current PBX (telephone switch-
ing) system to provide mission-critical service for the
next five years. It will ensure uninterrupted service to
all county agencies at a total cost of $325,000. Similar
to an upgrade in computer equipment, the replace-
ment electronics allow for Voice over Internet Protocol,
including Session Initiated Protocol. An alternative
vendor's product that was pitched by Mr. Nye appeared
to cost $1.7 million over five years.
The second agenda item provided for a $413,000 sav-
ings per year (reducing the expenditure from $3.6 mil-
lion to $3.2 annually for three years for a total savings
of $1.2 million) while the county utilizes an independ-
ent agent to provide a detailed Request for Proposal.
This will allow many service providers to present their
best pricing options. Ultimately the lowest bidder's
package will be presented to the Board of County Com-
missioners after a review panel studies them all.
It is our responsibility to ensure that Brevard County
has the ability to serve its citizens in any situation. To
say that our current system is obsolete is very mislead-
ing. Our existing vendor is a proven global leader uti-
lized by the Department of Defense, as well as 93 per-
cent of the top manufacturing companies in the U.S.
Through our current contract, we will continue to
expect superior service while we work diligently to
keep costs in line with our decreasing budget. The sav-
ings approved Tuesday reflect our continuing commit-
ment to the prudent and responsible use of taxpayer
resources. I would much prefer a dependable family
car that will get us from point A to point B, than an
expensive luxury sports car with all the bells and whis-
tles that can be costly to maintain.

Benton House offers elders senior care S1
Assisted living community in
Titusville creates caring
environment for senior citizens
By Jenet Krol
Krol@hometownnewsol.com
BREVARD COUNTY -
Creating the most homelike
setting as possible is the
goal of the staff at Benton
House.
The assisted living com-
munity, which consists of
47 apartments and is cur-
rently home to 39 residents,
opened its doors in
Titusville in March.
Headed by executive
director Shelley Belville, the
community is run by a
small, dedicated staff that
works together with resi-
dents like a family.
"Residents get to know
those who do their direct
care, and only have to
remember one person's
name. The same person
that is helping them with
their laundry is the same
person that goes with them
to the dining room," said
Ms. Belville.
The community also
caters to memory-loss
patients in their own key-
pad secure, 12-apartment
community called "Beacon
Neighborhood."
Having worked in senior
care since 1993, Ms.
Belville, who is also a regis-
tered nurse, knows what
will make her residents
happy and comfortable.
"I love seniors. It's a pas-
sion and I'm an advocate
for them. I want to provide
the best end-of-life care for
them as possible. They are
all like my grandparents
and I treat them as such,"
said Ms. Belville.
In fact, it was her grand-
mother that was her inspi-
ration behind entering the
field of senior care.
"I grew up seeing her care
for my family, like my great-
grandfather and my grand-
father. Just seeing that nur-
turing and caring side my
whole life let me know I
needed to go into this
field."
The staff of 25, which
includes trained nurses,
certified nursing assistants
and a full-time activities
director, were handpicked
by Ms. Belville to provide
the best caregiving possi-
ble.
Entertainment is a big
part of keeping the resi-
dents happy, and they have
plenty to choose from, said
Ms. Belville.
Recently, the residents
participated in cruise week.
Each day was themed as a
different port of call, and
included a trip to the beach,
a Mexican dinner, and air-
boat rides.
There are also activities
seven days a week and trips
into the community three
days a week, which include
shopping days, bowling,
mall trips and grocery store
runs.
Eleven apartments are
still available for month-to-
month leases.

Shelley Belville, executive director of Benton House, an
assisted-living community in Titusville, chats with resident
Robert Anderson and his furry friend, Jake.
There are five different
styles available, which
range in size from studio to
one bedroom.
Small pets are also wel-
come at Benton House, said
Ms. Belville.
Keeping an open-door
policy for residents and
their families, and treating
everyone as a family mem-
ber is the key to creating a
happy, comfortable envi-
ronment, said Ms. Belville.
"It's all about the resident.
We're fortunate to have
family involvement and it's
important for them to have
confidence in us and that
their loved ones are happy,"
she said. "I make them a
part of my family and treat
them that way."

It doesn't matter what other
people around you think, as
long as you are happy with
your own results first. Com-
pete with yourself first. Strive
to perfect your own dreams
and passions. This gives you
the needed power to influ-

positive forces at work that
ensure everyone's continu-

Your great, earthly wisdom
always prevails when you lis-

time, energy and resources
on the important issues. You
will prevail. You know what
you want. Use the rest of the
year to evaluate and set your
goals for next year. You need
a plan. No need to go
around in circles at this
point.

Your communication skills
are at an all-time high. Do
you know where you want to
be one year from now? Find
out quickly because time
goes by so fast. Patience is a
virtue that comes from tak-

positive ways and success is

live each day of our lives. You
have a strong, clear, loving
mind. Let this and your good
heart and instincts guide you
down the path of life. This is
what winners do. You are a
winner.
Libra-Sept. 23-Oct. 22
You have the greatest judg-
ment. You seem to have
been born under a lucky star.
Why? At the last minute,
when it seems like things are
not going to work out, they
usually do. This is the univer-
sal message saying, "Not to
worry. It's all in divine order."
Your actions and facts speak
much stronger than your
words.
Scorpio-Oct. 23-Nov. 21
Positive change is on the way
to you. Are you ready for it? A
big move will present itself
soon. Be sure to include fam-
ily and friends in the good
fortune. You have more than
earned this universal promo-
tion. It is because of your
hard work, dedication and
good heartedness. No one
could be more deserving.
Enjoy.
Sagittarius-Nov. 22-Dec. 21
It's your turn at the helm of
the zodiac wheel for the next
four weeks. It's a time of
feasting and rejoicing. Spend
time in nature and with
friends and family. Sagittarius
leads us into the holidays
with good cheer. Psych your-
self up daily. Now more joy is
on the way. Lead us forward
with hope. It is your greatest
mission.
Capricorn-Dec. 22-Jan. 19
Stay on the sunny side of life.
Refuse to let earthly chal-
lenges pull you down and
cause excess stress. You
know what you want. Your
heart is open and filled with
love. Follow it and you will
succeed with something left
to spare. Live in the now and
take care of today's priorities
first. Everything else will wait.

Great, easy dinner ideas from leftover Thanksgiving turkey
Hello smart shoppers.
Check out my cook-
book special at the
column's end.
Not turkey again? I'm sure
you're hearing that about
now. Try my recipes, they'll
love them.
If you have a lot of turkey
left, place some stuffing in a
small freezer bag. Do the
same with the gravy. Place
sliced turkey in a large bag;
insert the other bags and
freeze. In this hurried time
you'll have a dinner in no
time.
Two great, quick dinners for
those leftovers are my version
of turkey divan and curry.
Enjoy. Countdown to
Christmas next week.
MOCK TURKEY OR
CHICKEN DIVAN
regular or low fat
Leftover turkey or chicken
Leftover gravy
Fresh or frozen broccoli
Cooked medium or wide
noodles*
Thaw meat to room
temperature. Thaw gravy,
bring to a boil and whisk to
reconstitute. Add cut up
turkey or chicken and heat
though. Cook broccoli in
small amount salted water.
Serve divan in individual au-
gratin dishes, topping a
serving of noodles with a
couple of broccoli spears,
turkey and gravy.
Beware of egg noodles.
Their first name is egg,
therefore they are high in fat
and cholesterol. Use no-yolk
noodles instead.
Season with salt and
pepper and a little butter
substitute.
LEFTOVER TURKEY
OR CHICKEN CURRY
serves 4 to 6
regular or low fat
This curry is a simple
variation of the real thing. It's
a winner and takes almost no
time to prepare.
1/2-cup each, finely
chopped onion and celery
1 tablespoon canola oil or
water
2 cups chicken broth,
homemade or canned
1/2-cup tomato sauce
1/2-cup water
1/2-teaspoonWorcester-
shire sauce
Several sprigs fresh Italian
parsley, chopped, or 1
tablespoon, dried
Salt and pepper
1 teaspoon to 1 table-
spoon curry powder,
depending on how strong
a flavor you want
3-4 cups cooked turkey or
chicken, cut up
1/4-cup flour
3-4 cups cooked rice or
noodles
Cooked broccoli spears
Lightly brown vegetables in
oil, adding water, if necessary.
Add the chicken broth,
reserving 1/2-cup. Add the
tomato sauce and water, a
little salt and pepper, Worces-
tershire sauce, parsley and
curry powder.
Cook, covered, about 10
minutes. Add meat and cook
10 minutes longer.
Shake remaining broth
with flour and add to the pot,
stirring until thickened,
adding more water or flour
and water if necessary.
Serve in individual dishes
or any wayyou choose. I
place broccoli spears over rice
or noodles, then ladle on the
curry.
MASHED RUTABAGA
(turnip)
low fat
serves 6 to 8
In my family we have
always called that large,
round, ugly, waxed, orange
root found in the produce
department a turnip. I have
since been corrected and
informed it's a rutabaga.
Try this recipe. The potato
cuts the sharpness of the
vegetable. One large "turnip"
is enough for any dinner and
leftovers maybe frozen.
ROMANCING
THE STOVE
with the
Grammy Guru ,
ARLENE BORG
butter substitute
It is very difficult to cut a
rutabaga. In the past, I
placed it on a cutting board
and, using a large sturdy
knife and a hammer, I
hammered it in half.
Now, I have a wonderful
hint from one of my readers.
Place the rutabaga in a
plastic supermarket bag,
loosely tie and place on a
microwave-safe rack.
Microwave on high for 5 to
10 minutes. Carefully
remove from microwave
and rinse under hot, then
cold, water. The wax clings
to the bag and the rutabaga,
though not cooked, is easy
to peel and cut.
Cut it in small chunks. The
smaller the chunks the
easier it is to mash. Place in
a pot with potato, cover with
water and cook until tender,
at least 20 minutes or more.
Drain. An old-fashioned
potato ricerr" is the best
way to mash it or you can
use a food processor.
Believe me, there is so much
fiber in this root that it's
tough to mash. Season with
salt and pepper, add the
butter, mix and serve
CRANBERRY
SURPRISE RELISH
serves 6-8
One 4-serving package
cranberry or orange-
pineapple gelatin
3/4-cup boiling water
1 large stalk celery,
chopped
1 orange, peeled and
chopped
One 16-ounce can
cranberry sauce, jellied or
whole berry
1/2-cup chopped walnuts
Dissolve gelatin in boiling
water, add remaining
ingredients, place in mold
and chill. Un-mold several
hours before serving: dip
mold in hot water for a few
seconds and inverting onto
a plate. Chill until firm. Cut
in wedges and serve.
