Pretty plants often are 'invasive'

They might be showy and beau-
tiful, but many plants in Brevard
County and other parts of Florida
are non-native, invasive species
that do more harm than good.
Jean Wood, a master gardener
with the Brevard County Exten-
sion Office in Palm Bay, present-
ed many examples of invasive
plants, as well as ways of dealing
with them, July 7 at the Lagoon
House.
Among other problems, inva-
sive plants "disturb the ecosystem
and pull up water from the Flori-
da aquifer, taking water away


from wildlife and native plants,"
Mrs. Wood said.
Some invasive plants, such as
the old world climbing fern, can
wrap around a tree, block out
sunlight and strangle the tree to
death, she said.
Spread by seed dispersal,
through their root systems and
other means, invasive plants can
be very costly to remove. For
example, the cost to Florida tax-
payers in the 2004-05 fiscal year
totaled $34 billion, Mrs. Wood
said.
"Obviously, they have not con-
trolled all of them," she said.

Brevard County officials
recently added a link called
"concerns!/compliments" to
their Web site, www.bre-
vardcounty.us.
It provides examples of
recent concerns and com-
pliments from residents, as
well as clarifications and
answers from county offi-
cials.
For example, a recent
concern of a resident
involved the use of a coun-
ty-owned vehicle by a coun-
ty employee who was with
three children and was
renting videos in Titusville.
"The citizen was con-
cerned about the possible
waste of public resources
and tax dollars, and provid-
ed a vehicle tag number,"
officials said on the Web
site.
They explained that the
employee worked for Coun-
try Acres, a county-run chil-
dren's home that serves

What is the public library worth to you?
Well, you no longer have to wonder. Bre-
vard County Libraries, which operates 18
facilities in the county, has a feature on its
Web site, www.brev.org, which allows
patrons to calculate what the library is
worth by adding up the cost to purchase
what you can check out for free.
Features such as these are what bring
the local library into the 21st century.
Gone are the card catalogues of yesteryear,
replaced by a bank of computers and an
Internet Web site that allows patrons to
place book holds from the comfort of their
home PCs.
But don't fear if you don't have a home
PC, you can use the one at the library.
Melbourne Public Library, located at 540
E. Fee Ave., offers a mind-boggling array of
services to the 30,000 to 35,000 customers
who walk through the doors every month,
said Jeri Prieth, director.
"A lot of people have cut their cable and
Internet access (in this economy)," said
Mrs. Prieth, adding that many people use
the library's free services to supplement
their entertainment needs.
Library cards are free to Brevard County
residents who can provide proof of resi-
dency.
There are special cards for juveniles,
with which a parent or legal guardian must
sign the application and are responsible
for monitoring the items checked out on
the youngster's card and any fines or fees


associated with its use.
Children can also sign up for aWeb card,
required for those who wish to have Inter-
net access at the library.
Non-resident cards are available for $15.
But you don't have to have a library card
to use the organization's computers. Sim-
ply stop by any location and sign in for
quick Internet or computer access.
Melbourne Public Library has a collec-
tion of approximately 108,000 items, run-
ning the gamut from books, magazines
and newspapers to audio books, music
CDs, DVDs and Blu Ray Discs.
Ms. Prieth, who said each library has its
own purchasing budget, tries to use the
money to its best advantage.
"Each director formulates what (she)
needs and gets to choose what (she) needs
for (her) own collection," she said. "We get all
spectrums of people, and we try to buy
(resources geared) towards them all."
So, what exactly can the Melbourne Public
Library provide? Check it out (pun intended):

Governor's school teaches students space science curriculum

exclusive
program

Florida Institute of Tech-
nology will take learning to
new heights for 18 lucky
Florida high school seniors
this summer.
Florida Tech physics and


space sciences faculty mem-
bers Sam Durrance, astro-
naut and Ph.D. in astro-
geology, and Niescja Turner,
assistant professor and
Ph.D. in astrophysical plan-
etary and atmospheric sci-
ences, will lead a two-week
residential summer acade-
my for gifted students. Mr.
Durrance was a payload
specialist with shuttle mis-
sions STS-35 and STS-67, on
which he assisted in the
installation of the astro-
observatory, an instrument
he helped design.


The school, started by the
Florida Legislature last year,
is called the Governor's
School for Space Science
and Technology, and will
take place primarily at
Kennedy Space Center.
This summer camp is a
pilot program for the school,
which is to eventually be a
two-year residential high
school for juniors and sen-
iors.
Mr. Durrance and Ms.
Turner will teach an inquiry-
based space science cur-
riculum and will direct the
students in a research proj-
ect involving flying a spe-
cialized camera onboard an
F-104 Starfighter jet.


Students will prepare the
camera, watch the flight and
analyze the data. They will
also learn from scientists
and engineers at KSC labo-
ratories who are focused on
current lunar exploration
research.
"We're introducing them
to real space science explo-
ration and real people work-
ing in the field," Mr. Dur-
rance said.
"And the program is not
entirely project-based," Ms.
Turner said. "We'll be teach-
ing them the physics behind
the experiments at a col-
lege-level curriculum."
The students will also
have an opportunity to use


Florida Tech's Ortega Tele-
scope, which is the largest
research telescope in Flori-
da.
Participants will use the
telescope to look at a star
with a planet in orbit.
The program is free to
participating students, and
is funded entirely through
the Department of Educa-
tion.
Two students from Bre-
vard were accepted into the
program.
Ms. Turner said the pro-
gram is designed to cater to
bright, young minds.
"A big part of the school is
to serve the needs of gifted
students," she said. "If you


don't challenge these stu-
dents, you'll never find out
their potential."
Florida Tech will award 10
scholarships to graduating
delegates of the Governor's
School for a minimum guar-
antee of $15,000 per aca-
demic year up to full tuition
for attendance at the univer-
sity.
The Governor's School
took place mainly at KSC
from July 5-17. The session
begins with an astronaut
training experience and will
conclude with an awards
ceremony including all par-
ticipants and their families.

Running Zone launches annual race series

When most customers stop
by Running Zone in Mel-
bourne to buy their favorite
pair of running shoes, they get
a little something extra with
their purchase: the challenge
to actually lace up those shoes
and hit the streets.
Running Zone, a one-stop-
shop for all things running-
related, hosts an annual five-
to six-run race series aimed at
those interested in improving
their physical fitness.
Health First Health Plans
has secured a three-year title
sponsorship of the series,
which began with the Fire-
cracker 5K July 4 at Mel-
bourne's Liberty Bell Museum
on Hickory Street.
Denise Piercy, who co-owns
Running Zone with her hus-
band, Don, said Running
Zone Foundation, a nonprofit
organization, was created to
"promote and encourage
health and fitness in the com-
munity through running, jog-
ging, walking and related edu-
cational programs and
publications."
"Our goal is to get people in
Brevard moving through exer-
cise," Mrs. Piercy said.
Mrs. Piercy said each year,
the organization targets a spe-
cific group, such as children,
in order to encourage partici-
pation in physical fitness
activities.
"Our goals in getting every-
one moving were first aimed
at children because childhood
obesity is such a problem,"
she said.
Running Zone provides
training programs and awards
for school participation. Dur-
ing the store's last two-mile
race, more than 300 children
younger than 13 participated.
Last year, Running Zone
implemented the Corporate
Cup Challenge to motivate
employees to tune their fit-
ness while flying corporate
colors.
"(Many companies such as)
Health First Health Plans and
Harris Corp. subsidize part of
the registration fees," Mrs.
Piercy said. "Research shows
that for every dollar spent on

MARTIN COUNTY It's


always the quiet ones, the
saying goes, that hold the
most surprises. And the
seemingly sleepy towns in


the south of Martin County
seem to prove that point.
Just south of the faster-
paced Stuart center, are
Palm City, Port Salerno and
Hobe Sound, three small
communities brimming
with pleasant surprises for
adventurous travelers.
Saddle up in Palm City for
a day of horse riding, racing
and polo at area stables that
offer riding lessons, sight-
seeing tours on horseback,
pony rides for children and
classes to show visitors how
to befriend, train and care
for the animals.
Sunlight Stable Club
offers picnic lunches, polo
games and instruction,
while Greenridge Stables
caters to novice and experi-
enced riders at rates begin-
ning at $25 per hour. Call

to arrange rides around
area parks and preserves.
"There's a whole world of
horses here in their back-
yards, but people aren't


aware of it," said Rozeta
Mahboubi, executive direc-
tor of the Martin County
Convention and Visitors

A few miles south, in Port
Salerno, lies one of the
Treasure Coast's biggest
fishing destinations. Its
seafood festival draws
thousands in January, while
its manatee pockets are
popular spots for observing
wildlife.
The area's charm includes
a unique service.
"You can go fishing and
bring what you catch to
most of the local restau-
rants, and they'll cook it for
you," Ms. Mahboubi said.
Just call ahead to check area
restaurants.
In Hobe Sound, the little-
known 78-acre Peck Lake
Park, off Gomez Avenue
and north of Crossrip
Street, features habitats,
trails and educational
kiosks with information on
the area's history and
wildlife.

Political pendulum

Has it all come to this: Do we either choose our country
to be run by a Democratic administration, which means
not as safe from our enemies overseas, but we prosper eco-
nomically, and have as close to as possible no unemploy-
ment and financial security?
Or, a Republican administration which means a strong
military to keep us safe from our enemies, but we as a
result have higher unemployment, not as good economic
times, and the feeling of a forever recession?

Where is the flag?

Gee, it's hard to be humble when the media proves you
right in every way.
When Jackson's death was announced, every media
source went wild. Florida Today and The Orlando Sentinel
had story after story with pictures on nearly every page. I
made a bet that when the paper came out on the Fourth of
July there would be little coverage and no pictures of an
American flag until you get well into the first section.
Last year it was a used car add on page eight of the Flori-
da Today that showed half of a flag. This year it was on the
last page of the first section and not even in red, white and
blue. The Sentinel failed to put one flag in the entire first
section.
Have we come this far, where the passing of an entertain-
er is greater than paying homage to the drafters of our Con-
stitution and recognizing the hundreds of speakers attend-
ing tea parties, expressing their thanks for forming this
great nation?

Freedom is not free

Every one needs to know what it cost for our freedom.
The immigrants and children need to know that this coun-
try's freedom did not come freely. There was a heavy price
to pay before, it is forgotten by all, and should be a require-
ment for citizenship. Beside the reading, writing and arith-
metic in school, they need classes on the history of the
wars it took and how many lives have been lost for the free-
dom we have. The only ones that know what price it took
are the families of loved ones that are not here any more
and those who now and have been involved in the wars.
This freedom that was fought for now is being thrown in
our face from all walks of life. The true freedom came from
our ancestors on the ships and boats from Europe where
they appreciated and fought for the freedom of this coun-
try. Now it's being a safe haven for those who do not appre-
ciate what it took to get where we are today. Not to speak of
those who want to destroy what is known as one of the best
place in this world. Those who want to destroy this country
will never find freedom like this. They may only find terror-
ism. God bless America.

No tax increases

This is in regard to the cap and trade bill. Why is it 1,000
pages long? Who is the hypocrite here? If Congress is so big
on the environment, why is it 1,000 pages long and nobody
is reading it? How many trees are they cutting down to
make all that paper? How hypocritical is that? It's just to tax
more people. America needs to call all its senators and tell
them to vote "no" on this. No matter who is more than the
other, Democrats or Republicans, there's got to be some-
body that can do something about this because whoever
votes for this is going to take us to a dead-end. People who
support Democrats, Nancy Pelosi is behind most of this.
She is driving this. She's been there all along, even with the
Bush administration. So watch out for her. If she wasn't in
office, I think a lot of this would stop. We need to stop this
bill because everyone is going to go broke and drive into a
dead-end. We are going to end up living under a highway.

Educate your vote

I am glad to see that people are waking up and smelling
the flowers and not drinking the Kool-Aid and continuing
to follow the path that the country went for eight years and
now we have someone that's taken over and has gone the
total opposite way. It's important that everybody get
involved and call their congressman and senators. I think

everyone in this county will be truly awakened as I have
called quite a few on different issues and as to date, one
person had the courtesy to call me back. Several of these
people were re-elected or elected by the partisans in coun-
ty, but are not aware of their issues. I think it's important
before you pull the lever and push the vote that you know
what your voting for and research this. Go on a web site,
read what people have to say, get involved in your commu-
nity. Don't just sit back and continue listening to what your
representatives are telling you. It's very important to know
who your representatives are. Investigate. Call them. I think
you will be pleasantly or unpleasantly surprised to see that
they may never return your call. Please remember that you
are paying their salaries and they are responsive to you and
they need to respond to you. You need to know that and not
continue to vote on partisan issues and continue to vote for
a party that you voted for 50 years when you really don't
know what the true issues are that you are voting for as you
can tell by the country in the state it's in right now.

Unemployment thoughts

I just saw on television at Disney World, 1,000 immi-
grants getting sworn for their U.S. citizenship. What skills
do these people have, each individual, that makes this
country need them so bad, in this market, that we need to
bring in 1,000 more people to be unemployed. I haven't had
gainful employment in two years and I'm an American citi-
zen. Where are these people going to work? I just don't
understand. Maybe it's just about time for us to reevaluate
our immigration policies and close the borders for a while
until we can get on our own feet. Until we can get on our
own feet we should stop bailing out other people. This is
not the land of milk and honey anymore. This is the land of
tragedy. How many thousands of Americans on the street
are homeless and we're shipping more in? It just seems
crazy to me.

Fireworks suggestion

Thank you for the awesome fireworks over at the Mel-
bourne causeway. My only complaint is that maybe next
year there should be patriotic music or any music for that
matter. Great job, anyways. Next year music, would make it
even better.

A delightful musical

Has anyone yet raved about the recent musical, "Zoosi-
cal" at the Schecter Center in Satellite Beach? I would like
to commend the young lady who was in charge of the musi-
cal. I think she did a wonderful job with those youngsters in
such a short space of time, but I would like to compliment
that entire organization that was responsible for that. I
enjoyed it tremendously. Thank you.

Exotic pet woes

I find it hard to believe that people are allowed to own
dangerous animals, like pythons, here in Florida. When
they grow too big to handle they are released to kill our
pets. Not to mention, our native wildlife. This is tolerated
while our law enforcers spend their efforts chasing cats
who are left to fend for themselves by their irresponsible
owners and persecuting people who try to help them. What
I find hard to believe is that the citizens of Florida allow this
to happen.

Don't get rid Democrats

I'd like to respond to the person who wrote "get rid of
Democrats," You said that Democrats have put this country
in bankruptcy. Where have you been for the last eight years
when your wonderful Republican (president) brought this
country to a mess raising gasoline prices, people losing
their jobs, losing their homes and losing thousands of dol-
lars in the stock market? Republicans put this country into
bankruptcy by telling mortgage companies and banks to
give mortgages to people without verifying their income. I
could go on and on. You have the nerve to say President
Obama should be impeached. President Bush ruined this
country. President Obama is not in a year. How do you
expect him to fix what a Republican messed up in eight
years? Mr. Obama came into all this mess. Do you think he
is God? Only God would be able to clean the Republican
mess in six months. They took eight years and ruined this
country. Get your act together and leave the most intelli-
gent president ever elected alone, next to President Clin-
ton. Did you see the Obama inauguration? It was history,


and the best ever performed. Leave our wonderful, hand-
some, intelligent, gifted and Harvard-trained President
alone. Get your act together. You are a joke and the laugh-
ingstock of America for what you wrote.

Daily Bread ideas

I am tired of reading all of the editorials condemning the city
of Melbourne for not allowing Daily Bread to expand. I'll be
honest, something previous letter writers haven't been, and say
that I do not and would not want Daily Bread in my neighbor-
hood in Suntree/Viera. So, who am I to say that the residents
who live around Daily Bread should have to live with all the
activity in their neighborhood? I have spoken with John Farrel,
the director of Daily Bread, and gave him my vision of what
Daily Bread really needs to do. My vision is that the organiza-
tion should find several acres in the county, away from any res-
idential neighborhoods and they should build a campus con-
sisting of all that the soup kitchen has to offer now, but also a
men's and women's dormitory. This doesn't even have to be in
the city of Melbourne, since the homeless and hunger issues
are countywide. There is plenty of undeveloped land through-
out the county. Maybe it could be built by the new health
department and VA Clinic. Many of Daily Bread's clients use
those facilities. Those who live there would be responsible for
the care and upkeep, just like the CITA Mission for men, as well
as serving meals to the less fortunate. It would also solve one of
the biggest problems, nowhere for the homeless to go when
the Daily Bread closes for the day. I never understood why vol-
unteers have to come in and serve the clients when many of
them would be quite capable of serving each other. Those that
live and work there would gain self-esteem and self-worth.
This may be just what is needed to set them on the path to
recovery. It has been stated that the area where the Daily Bread
is now has amenities for their clients and to move them away
from them would not be right. If the Daily Bread builds it, they
will come. The labor halls will spring up and almost all of the
clients are very familiar with the SCAT buses and routes; they
will get there. If a residential neighborhood were built close to
Daily Bread, the residents would have no complaint, as the
organization was there first. If the Daily Bread doesn't have the
funds for such a place, perhaps all of the churches and the let-
ter writers could help fund this vision. Until this dream
becomes a reality, I would like to see every church in the coun-
ty allow the homeless to sleep in their churches at night, as
church buildings are some of the most under-used buildings in
the country. This would truly be taking care of the "least of my
brothers." I am sure that there are some pastors out there con-
demning my soul to hell for such an idea, but actions speak
louder then words. If you really want to help, do so; otherwise,
keep your opinions to yourself. By the way, I do and will con-
tinue to help those down-on-their-luck with actions, not
words.

Respect our flag

I served my country for 21 proud years in the United States
Air Force and I have the highest respect for our American flag.
No one seems to realize what our flag stands for, OK maybe a
few do. But the people of the U.S. have lost what our flag is all
about. On occasion, I see an American flag being flown, but it
may be dirty and torn or is not flown properly. Where has our
American pride gone? I ask you please fly our American flag
with the utmost respect. If it's torn or faded replace it. If it's dirty
wash it. I do.

More on health care

Citizens of Canada and Great Britain have experienced a
decade or more of socialized medicine and they know first
hand what rationing means when they have to wait months
(sometimes, years) to get to see a doctor or gain entrance into a
hospital.
As the U.S. government increasingly cracks down on the
American health care industry, we are already witnessing the
crisis in obstetrical care, as most hospitals are losing money,
many are considering closing their doors and doctors are
avoiding gynecology, a worrisome glimpse into our future.

Stop sweatshops

American Apparel, a Los Angeles-based sweatshop, has been
of the wrong side of the law for decades.
Currently, the company is fighting accusations by federal
immigration authorities that it has perhaps more than 100 ille-
gal immigrants on the payroll. It will be interesting if the own-
ers are able to slither off the hook again, or whether they will be
finally brought to justice.

Brothers embark on amazing journey

Two devoted husbands
and fathers: check.
One 21-foot custom flats
boat: check.
Hundreds of nationwide
supporters: check.
A 48-day, 6,200-mile voy-
age from Tampa to Frank-
furt, Germany: well, that's
the plan.
While even the most expe-
rienced boat captain would
be hesitant to complete this
journey, Brevard County
natives Ralph, 50, and
Robert Brown, 52, are well
on their way through the
Atlantic, with a number of
goals keeping them afloat.
One is to test out (really
test out) the stability of the
"Intruder," a prototype boat
built by Ralph's boating
company, Dream Boats Inc.
Another is to set a second
world record. The duo made
it into the "Guinness Book of
World Records" in 2007 after
completing a five-day,
1,400-mile trip from North
Carolina to Bermuda aboard
the very same vessel.
But the third and most
important goal of the Brown
brothers is to garner sup-
port and funds for seven
wounded veterans' organi-
zations. At the same time,
the trip will honor three fall-
en U.S. Marines, who died
during a 1980 operation to
rescue American hostages in
Iran, which Ralph, a former
Marine, has labeled a "sui-
cide mission."
"The day after I learned of
this mission, I made a
solemn promise to myself
that those three Marines
who died that day would not
be forgotten," Ralph said.
"We're doing all of this in
their name: Sgt. John Har-
vey, Cpl. George Holmes and

their primary method of
raising money is by selling
150,000 T-shirts, which sup-
port their cause, at $30 each.
Funds are also being raised
through company sponsor-
ships, such as Interstate Bat-
tery.
Robert, a Merritt Island
resident, is also donating 10
percent of the profits from
his book, "The Bermuda
Suicide Challenge," to the
cause.
"We're only just now get-
ting started," said Ralph,
who lives in Spring Hill.
"We've got a long way to go."
On June 27, the Intruder
set sail from Downtown
Tampa, making stops in
Fort Meyers, the Florida
Keys, Miami and two Bre-
vard locations on July 1:
Sebastian Inlet and Port
Canaveral.
From there, the Browns
traveled north to Jack-
sonville, South Carolina,
Virginia, New York, Boston
and Canada.
Next, the plan is to make
two stops in Greenland, one
in Iceland, London, Paris
and finally Frankfurt, Ger-
many, where their boat will
be shipped back home.


The duo has its share of
fears, but Ralph said rough
weather conditions isn't one
of them.
"Once you've been
through heavy seas in the
past, you know what to do,"
said Ralph, who literally
knows his boat inside and
out. "We took her apart and
rebuilt her from scratch fol-
lowing the last trip. We know
what she can do."
But the brothers did not go
into the trip ill-prepared,
either.
Aside from the necessary
life jackets and safety equip-
ment, they brought two
satellite phones, three elec-
tronic beacon systems, Mus-
tang Survivor Suits, Xterra
wet suits, an emergency raft,
flip poles, two GPS systems, a
tracking transponder, four
fire extinguishers, two sea
anchors and an extra 10 gal-
lons of water.
The Intruder has no cabin,
but does have a T-top and
runs with a Suzuki 115 four-
stroke engine and can carry
about 347 gallons of fuel.
The guys trade off driving
and sleeping in three-hour
shifts by lying on either the
console seat or across the


transom, covered by a tarp.
As for food, the Browns
plan to eat a lot of fresh fish.
They brought along a 12-volt
grill and 12-volt Crock Pot, as
well as soup, granola bars
and canned fruit.
Both happily married,
Robert has two teenagers
and Ralph has three.
"Most teens are embar-
rassed of their dads no mat-
ter what," Ralph said. "You
can imagine the level of
embarrassment my kids feel
with people thinking their
father is nuts. It's off the
charts."
As for their wives, the
Browns said their support for
the trip, that most would call
"extreme," varies from day to
day.
"Define the word 'sup-
port,'" Ralph joked. "Before
we left, one day they'd be
calling us crazy, the next
they'd be helping us pack.
But overall, they understand
why we're doing this. It's just
another chapter in our lives."

Society reports that exclud-

Only 39 percent of the peo-

cancer screenings actually
get them, while colon can-

Independent film fest comes to Palm Bay

The 15-Minutes of Fame
Festival of Shorts, featuring
independent films from
around the world, will be
presented this weekend in
Palm Bay.
It will feature 44 short
movies, which were chosen
by judges from among 120
entries. Genres include
comedy and drama, as well
as documentaries and
music videos.
The free event is sched-
uled for Saturday, July 18,
and Sunday, July 19, in the
Areca Room at the Quality
Inn, 1881 Palm Bay Road
N.E.
The films, which range in
length from two to 15 min-
utes each, will be shown
during two two-hour seg-
ments each day, starting at
2:30 p.m. and 4:30 p.m.
There will be a 10-minute
break every 15 minutes.
The festival is sponsored
by the husband-and-wife
filmmaking team of Ray and
Migdalia Etheridge, of Palm
Bay.
Mr. Etheridge has worked
as a professional camera-
man for more than 30 years,
with experience in every-
thing from television news
to soap operas and game
shows. Mrs. Etheridge has
worked as his assistant for
about a dozen years.
While the couple has
made three independent
films in Palm Bay with local
actors, none of their films
will be included in the festi-
val.

movies from across the
United States and many
other countries, such as
Canada, Germany and Swe-
den, Mrs. Etheridge said.
"It's a really nice mix of
short films," many of which
have been recognized by her
and her husband in different
award categories, she said.
She and her husband said
short films are used as "busi-
ness cards" by filmmakers
and actors to help them find
work in larger projects. The
budgets for some of the
short films range from zero
dollars to $10,000.
Some of the filmmakers
whose movies will be shown
at the festival have indicated
they will attend the event.
An example of one of the


festival movies is the event's
opening four-minute film
from Hawaii called "Fernan-
do's Proposal."
A description of this
movie on the film fest Web
site, http://15minutefilm-
fest.com, says, "Fernando is
getting dumped, so he takes
desperate action to prove
that his love is forever and
save the relationship from
getting cut off."
The last movie of the festi-
val, shown on Sunday
evening, is a 14-minute film
from California called "Man,
Woman, Blackbird."
"During a blackout on a
hot a summer night, a
woman's long-suppressed
rage materializes from the
shadows as she confronts
her philandering husband


in a candlelit death-dance of
seduction, suspicion, and ...
murder," the Web site says.
While admission to the
festival is free, people who
would like to attend it must
reserve a seat in advance for
each two-hour show seg-
ment. They can reserve a
seat via the festival Web site.
The films have not been
rated and some of the
movies may contain adult
language and situations, so
viewer discretion is advised.
Mrs. Etheridge said she
and her husband would like
to make the festival an
annual event.

Big Philly's in Melbourne


strives for authenticity

MELBOURNE Don't
worry if you're not familiar
with the traditional Philly
cheese steak ordering con-
vention.
At Big Philly's in Mel-
bourne, you don't have to
know what "wit," without "
or "Whiz" is to get a great
meal. All you really need,
said co-owner Karen Lewis,
is to bring an appetite for
the most authentic cheese
steak outside of Philadel-
phia.
Ms. Lewis, who grew up
in Landsdown in Upper
Darby, strives for authen-
ticity in creating her cheese
steaks, although she admits
there have been some
adjustments for the south-
ern palate.
"Seventy-five percent of
the sandwiches we sell have


Provolone on them," she
said, adding that a "real"
Philly cheese steak is made
with Cheez Whiz.
Most native Philadelphi-
ans are familiar with the
terms "wit," without and
"Whiz," commonly used in
the area to specify toppings
on the cheese steak. A
Philly cheese steak "wit,"
comes "with" onions.
"Witout" is, you guessed it,
"without" onions. And
"Whiz" is, that's right, with
Cheez Whiz. The authentic
style, complete with
Amoroso Baking Co. bread,
shipped in from Philadel-
phia, is the specialty of the
house at Big Philly's. The
restaurant's motto is
"bringing you a taste of
home."
In fact, that's pretty much
all you get at Big Philly's -
cheese steak in several
different incarnations.

While we're at it, how about
a jardiniere? Love jarred hot
peppers but hate the price?
We'll make them, too!
The best thing about
making your own pickles is
you can also reduce the salt.
In my opinion, nothing
compares to a real kosher dill
pickle.
Years ago, kosher delis in
NewYork had huge wooden
barrels filled with pickles. You
would select the one you
wanted and the proprietor
would reach in with huge
tongs and retrieve it.
Today that's not considered
sanitary, but you can still get a
real kosher pickle in the
refrigerator section of the
supermarket. What really
bothers me is the price.
Did you know that one
large cucumber will fill the jar
of pickle spears? Here's a trick
to save money. Once the jar is
empty, scrub and cut a
cucumber into spears and
put it in the jar with the brine.
Cover and leave on the
counter overnight; turn jar
over (on its lid) and let sit


another day. Have a pickle, if
it's just the way you like it;
refrigerate.
For bread and butter
pickles, bring the brine to a
boil and add slices of cucum-
ber; cook as directed in
recipe.
NOTE: To prevent breaking,
always put a utensil into a
glass jar before pouring in hot
liquid.

KOSHER PICKLES
(NIB)
makes 2 quarts
8 to 10 small cucumbers,
or 2 large cucumbers, cut
into spears
2 tablespoons kosher salt
2 whole sprigs fresh dill
Crushed red pepper,
optional
2 tablespoons pickling
spices
4-6 cloves of garlic, peeled
and cut in large pieces
Cold water
2 one-quart canning jars
Wash jars in hot water.
Scrub cucumbers and pack
tightly in jars.
Add 1 whole sprig dill, 1
tablespoon salt, 1 tablespoon
pickling spices, half the garlic
and a few shakes of red
pepper to each jar, pushing
ingredients halfway down. Fill
to top with cold water, leaving
a 1/2-inch space.

place for a couple of days. Test
a pickle for doneness. When
cured to your liking, refriger-
ate the jars.

BREAD AND BUTTER
PICKLES (NIB)
makes 4 pints (2
quarts)
4 cups sliced cucumbers
4 tablespoon kosher salt
1 small onion, coarsely
chopped
1 cup white vinegar
1 cup sugar or equivalent
sugar substitute
1 teaspoon each of celery
seed and mustard seed
3/4-teaspoon turmeric
Place cucumbers in cold
water. Add salt and ice cubes.
Soak for at least 1 hour. This
will keep them crisp. Drain.
Meanwhile, place all
remaining ingredients, except
onions, in a saucepan and
bring to a boil. Add sliced
cucumbers and onions and
cook for about 10 minutes.
Place in clean canning jars,
seal and store.

JARDINIERE (NIB)
makes 5 to 6 pints
4 cups sliced cucumbers
1 cup sliced onions
4 tablespoons kosher salt
1 red and 1 green bell
pepper, sliced into rings
1 cup white vinegar


1 cup sugar or equivalent
amount sugar substitute
1 teaspoon each of celery
seed and mustard seed
3/4-teaspoon turmeric
2 cinnamon sticks
Place cucumbers, onions
and peppers in cold water.
Add salt and ice cubes. Soak
for 1 hour. Drain.
Place remaining ingredi-
ents in a saucepan and
bring to a boil. Add vegeta-
bles and cook for 10 to 20
minutes, depending on how
crisp you want them.
Discard cinnamon sticks.
Place in clean canning
jars; seal and store.
Cauliflower flowerets,
sliced carrots and any other
vegetable you choose can
be added to the mix.

PICKLED PEPPERS
To make your own hot or
sweet jarred peppers,
simply prepare a vinegar
wash, 1/2 water, 1/2 white
vinegar. Bring to a boil in a
non-aluminum pan.
Add peppers, whole and
cook until tender-crisp.
Place peppers in jars, pour
in the vinegar wash. Liquid
must come almost to the
top. Prepare additional
wash if necessary. Cover and
store.
