MELBOURNE Unless you're a
nonagenarian or centenarian, you've
probably never heard of a small Bre-
vard County town named Hopkins.
However, this company-owned
burg played an enormous role in the
early economic development of the
city of Melbourne.


The Union Cypress Co., owned by
George W Hopkins, the town's name-
sake, was Melbourne's first big indus-
try, bringing employment, growth
and development to the region.
The big cypress/pine sawmill was
capable of producing some 40,000
board feet of lumber and 45,000 shin-
gles a day from Mr. Hopkins' cypress
aid pine holdings, carrying a 1911
value of more than $2 million.
The mill's power plant supplied
Melbourne's first electricity, and its
railway to Deer Park provided the first
direct route across the St. Johns River
for 80 miles south of Enterprise. '
Hopkins had 70 buildings within its
industrial, residential and commer-
cial areas. Melbourne annexed this

Richard A. DiPatri leaves post after
nine years with the school district

After nearly 40 years in
public education and nine
years as the head of the Bre-
vard County School District,
Brevard Public Schools
superintendent Richard
DiPatri will retire July 1.
The school district
encompasses more than
75,000 students, approxi-
mately 10,000 school board
employees, 85 public
schools, eight charter
schools and 17 special cen-
ters in a county of some
1,300 square miles.
* Mr. DiPatri holds a doc-
torate in .educational
administration and supervi-
siondfrom Rutgers Universi-
ty, and he earned his under-
graduate and master's
degrees from Rowan Col-
lege in Glassboro, N.J.

New City Hall receives

Residents, employees lavish praise

MELBOURNE The
addition to downtown Mel-
bourne's skyline has
received lavish praise in the
last month as residents and
employees make use of the
new City Hall.
The five-story, 58,000-
square-foot, $8.7' million
building, which opened to
the public May 18, houses
council chambers and
offices, the city manager's
office, the city clerk, pur-
chasing, management serv-
ices, planning and econom-
ic development, and utility
billing.
Due to limited parking,
some city departments,
including code compliance,
engineering, personnel and
risk management, are still
housed in an office building
at 830 N. Apollo Blvd., said
Mike Moore, public infor-
mation officer for the city of
Melbourne.
"There have been some
challenges with parking,"
Mr. Moore said, "but I think
that once the parking
garage is completed, things
will work out well and
everyone will be quite
pleased."
Demolition of the old


building, which opened in
1964 and is adjacent to the
new facility, is taking place
right now to make room for
a five-level, $5.7 million
parking garage. The garage,
which will have a capacity
of approximately 450
spaces, will serve as parking
for employees and residents
using city hall and overflow
parking for visitors to the
downtown Melbourne
shopping district.
Completion of the garage
is expected this November.
Mr. Moore added that he
has heard nothing but posi-
tive feedback from residents
concerning the new City
Hall.
"There were numerous
comments made during the
ribbon-cutting ceremony,
which was attended by
about 200 residents, which
were very positive," Mr.
Moore said. "(People) love
the new building, and I
think there has been an
improvement to services."
Melbourne resident Bill
Bragg, who stopped by to
pay his utility bill, said he
loved the new building.
"It's fabulous," Mr. Bragg
said.

Communications flow

during disasters,

storms, officials say

During a hurricane or other
disaster, the first thing that
shuts down for most people is
their method of communica-
tion with others, said Jane
Bowden, chairwoman of the
public relations task for the
Space Coast Chapter of the
American Red Cross.
While many people do not
have access to phones and
computers because of power
outages during disasters, offi-
cials from the Brevard County
Emergency Operations Cen-
ter, law enforcement agencies
and the Red Cross are able to
keep their lines of communi-
cations open in order to pro-
vide vital relief.
The EOC has its own com-
munications system, which
stayed up and running
through major storms suchas
hurricanes Frances and
Jeanne in 2004 and Tropical
Storm Fay last year.
"Our 9-1-1- system is pro-
tected by backup generators,"
said Bob Lay, director of the
county Emergency Manage-
ment Office.
The EOC's backup power
system means none of its
electrical, satellite or Intemet
connections are lost during
power outages.

representatives from law
enforcement agencies and
other public safety groups.
The EOC is at 1746 Cedar
St. in Rockledge, and right
next to it at 1700 Cedar St. is
the Red Cross.
"During a disaster, we have
a representative from the Red
Cross at the center, and in
that sense we are part of their
team and they are a part of
ours," Mrs. Bowden said.
In addition to using the
EOC communications sys-
tem, the Red Cross stays con-
nected with other emergency
officials via the Red Cross'
amateur radio group, she
said.
And Mr. Lay said the EOC is
responsible for an 800-mega-
hertz radio system that is
used by all public safety agen-
cies in the county.

When a disaster strikes,
Mary Gill does not think
about herself.
Like so many other
American Red Cross vol-
unteers, Ms. Gill's con-
cerns are not for the safe-
ty of herself and her
possessions, but are for
the victims of a disaster
who need food and shel-
ter.
A 10-year volunteer
with the American Red
Cross, Ms. Gill drives an
Emergency Response
Vehicle, delivering food,
water and hygiene and
clean-up kits following
large-scale disasters.
"People are very grate-
ful and very happy to see
someone. They are very
enthusiastic about
receiving the first bottle
of iced water," said Ms.

ble for all maintenance
costs.
"Our ability to keep our
ERVs on the road depends
on donations to pay for the
service," she said.

Invasive jellyfish species spotted in lagoon

Officials would like the public's
help in spotting an invasive species
in the Indian River Lagoon.
St. Johns River Water Management
District officials said June 17 that
about a dozen sightings of the Aus-
tralian spotted jellyfish have been
reported in the Melbourne and north
Melbourne area.
The jellyfish could consume large


numbers of fish eggs and micro-zoo-
plankton in the lagoon, officials said.
"The size of these jellyfish ranges
from the size of a human fist to as
large as a basketball," district
spokesman Ed Garland said in a
news release. "They have white,
semi-transparent to opaque bell
shapes, with white spots on the bell.
Frilly oral arms extending beneath
the bell can release a mildly painful
sting to humans."
Officials said the Australian spot-


ted jellyfish can be mistaken for
native lagoon species like the trans-
parent moon jellyfish and the can-
nonball.jellyfish, which has a milky
color and is about the size of a
melon.

"I think that I have a great
team here, and that's how I
really feel," he said. "We
would not have accom-
plished the Sterling Award
without high performance.
That happens because of
the team I have."
Brevard Public Schools
earned the governor's Ster-
ling Award in 2007 for orga-
nizational excellence and


high performance through-
out the district.
Looking back over his
career with the Brevard
County School District, Mr.
DiPatri said he's most proud
of the students' high per-
formance numbers.
"The whole idea of
schools is to improve aca-
demic performance," he
said. "If you look at the
(Florida Comprehensive
Assessment Test), we have
over 5,000 fewer at Level 1
(test scores) than we had
five years ago. In reading, we
are down from 21 percent
(with Level 1 scores) to 11
percent and 17 percent to 8


percent in math. Students
who have learning disabili-
ties are in that mix."
FCAT scores are rated on a
scale of one to five.
Mr. DiPatri said although
he believes the organization
is poised at the best it can be
for a transition, the work at
Brevard Public Schools is
never done.
"If I were leaving next
year or the .year after, it
would always be the same,"
he said. "It never ends."
He said his biggest con-
cern as he leaves the post is
the future of funding for
education not only in Bre-
vard, but also statewide.

"Education has to be a
top priority," he said. "It's
an everyday event. I want
the best for my children.
That's the way we have to
look at it. It's becoming an
economic competition. The
way the funding is planned,
when this economic stimu-
lus money dries up, we're
going to have some serious
thinking to do. That's my
biggest fear."
Mr. DiPatri said budget
cuts have already placed
school children at a disad-
vantage, as the district was
forced to eliminate its sum-
mer school program.
"Every student, whether
they were falling behind in
reading, science or math,
had an opportunity to come
to school for those extra 20
days. Now it's gone."
Mr. DiPatri, when
pressed, said if he had to
say what his "legacy" was,
he would have to point
solely to his penchant for
high expectations.
"This was a high-per-
.forming school district
when I got here, it's a higher
performing district now,"


he said. "I know it sounds
trite, but no one rises to low
expectations. If the state
keeps the standards where
they are, we will get every
kid to those standards. The
No Child Left Behind Act
was a great move. Gov. (Jeb)
Bush had high expectations
for our schools and I think
the FCAT has produced
thousands of successful
students."
Mr. DiPatri said his
proudest moment is when
more than 30 schools
showed improved FCAT
grades in one year.
"In the start of my second
year, we had about 35 C
schools, but we improved
grades in 37 schools in one
year," he said. "That was
amazing, and the principals
realized that if we worked
as a team we could get great
results."
Mr. DiPatri said that
when he retires, he will
watch quietly from the
sidelines, championing the
school district, but he will
not take an active role in
any future decision-mak-
ing.


"My job at this point is to
be a cheerleader," he said.
"I will not sit on the side-
lines and evaluate or judge
because I've been in the
chair and I know how diffi-
cult it was. My job is to get
out of the way. For things to
change is anticipated. Why
would we expect anything
different?"
The outgoing superin-
tendent speaks highly of his
successor, Brian Binggeli,
who has already met several
times with Mr. DiPatri in an
effort to make a smooth
transition. Mr. Binggeli will
take the superintendent's
post July 1.
"Brian's a bright young
guy, and he's got a great
track record," Mr. DiPatri
said.
What's next for this long-
time educator? Travel and
lots of it. He and his wife of
40 years, Paula, will leave
almost immediately for a
month-long vacation to
Italy. Then it's off on a
cross-country road trip to
visit one of the couple's
three sons.

ican Red Cross to strengthen
disaster preparedness in 128
communities in 44 states and

S.O.R.T. monitors


offenders, predators


O ne of our priorities
at the Sheriff's
Office is the moni-
toring of sex offenders and
predators, and notifying
the public of their pres-
ence in the communities
in which they reside. The
Brevard County Sheriff's
Office is accomplishing
this through its Sexual
Offender Registration and
Tracking Unit (S.O.R.T.).
This all-encompassing
unit assumed responsibili-
ty for the registration of
almost 700 offenders and
predators in Brevard
County, as well as verifying
their addresses, monitor-
ing their movements and
enforcing the statutes of
the state of Florida.
A critical component of
the S.O.R.T. Unit has
included using crime
analysts for the registra-
tion and notification
functions of the unit.
Through the use of a
database developed in-
house at the Sheriff's
Office, the analysts are
able to input all informa-
tion on the offenders'
addresses, employment
and movements.
In order to meet the
public needs of notifica-
tion, the Brevard County
Sheriff's Office became
the first Sheriff's Office'in
the state of Florida to
partner with Offender
Watch Systems to develop
a web-based notification
program, along with a
mail-out system, to reach
as many residents as
possible. Today, Offender
Watch has partnered with
law enforcement agencies
,across the country, to
include the Florida
Department of Law
Enforcement.
The system generates a
mailing via post cards to
residents in the immediate
area affected by the
offender changing his or
her residence. Since its
inception more than
134,000 individualized
notifications have been
directed to Brevard
County residents. The
service also provides an
option for the residents to
sign up for email alerts
that can be generated
immediately upon verifi-
cation of the offender's
address.
There is also a need to
verify the information
provided by the offenders
during registration. A
verification system was
introduced to verify the
address of every offender
in the unincorporated area
of the county twice yearly
using sheriff's patrol
deputies. A coordinated
effort with the Brevard
County law enforcement
community also provides
the manpower to perform
county-wide monitoring
and verification of offend-
ers in their respective
jurisdictions. This effort
also includes partnering
with probation officers
who are able to assist in
searches of offenders

under court supervision,
gain access to the condi-
tions of probation for
specific offenders, as well
as access to GPS tracking
of offenders.
With the great interest in
the protection of children
from sexual exploitation
additional investigators
and a certified forensic
computer specialist were
assigned to S.O.R.T. to
specifically address
victimization through the
use of the Internet.
Because of the worldwide
capability of the Internet,
a partnership was forged
with the International
Crimes Against Children
Task Force (ICAC) as well
as Immigration and
Customs Enforcement
(ICE). Locally, ICE and
S.O.R.T. formed a Child
Exploitation Task Force.
All available resources via
the Internet to include
chat rooms, personal ads,
MySpace and Peer to Peer
downloads are utilized.
The efforts of the
S.O.R.T unit has resulted
in reducing the number of
absconders in Brevard
County whose where-
abouts are unknown.
There were 52 at the
implementAtion of this
program which was
reduced to 15 at the end of
its first full year of service.
The S.O.R.T. Unit has also
formed a partnership with
the United States Marshals
Office, which has assisted
with attempting to track
down those absconders
who have fled Brevard
County and Florida to
elude capture.
All of these innovative
approaches use every
facet of law enforcement
manpower and knowledge
base within Brevard
County to actively monitor
and verify the movements
of offenders. This has
resulted in a registration
compliance rate of
approximately 94 percent
every month. Most
importantly violent crimes
against women and
children have seen a 12
percent decrease in
reported cases since 2006
as a direct result of S.O.R.T
enforcement activities.

Daily Bread agreement

The Daily Bread game article tells it like it is. It is the truth.
The day babysitters for the Daily Bread's "career freeload-
ers" is the Fee Avenue library. The "freeloaders" monopolize
the computers playing video games, scanning Facebook
and online dating services. They are never searching for job
postings or to better themselves. My tax dollars, they don't
pay any taxes, support them in air-conditioned comfort
until John Farrell provides their next "daily meal."
I patronize the Daily Bread thrift shop and applaud those
hard-working volunteers if only all their monies were
going to the truly needy.
Would residents of the "beaches," who always send sym-
pathy rants, want the Daily Bread in their neighborhood or
polluting their public library? I think not.
I don't want more freeloaders in beautiful downtown Mel-
bourne, the Fee Avenue library or spoiling the lovely, histor-
ical residential areas surrounding the Daily Bread.
If you build it, they will come.

Caution for animal owners

On June 5, my dog was shot in the leg by a firearm. Not a
pellet or BB gun. The bullet went through my dog's right leg
and traveled through his insides and ended up lodged in the
bone of his left leg.
The individual who shot my dog is unknown, but a report
has been filed with Animal Control and the West Melbourne.
Police Department and the incident is under investigation.
My dog did nothing wrong; but I guess someone thought it
was wrong for him to go to the bathroom in his own back-
yard.
This is just a warning to all pet owners, as this incident is
absolutely disgusting and no one should have to suffer the
pain and horror that my dog suffered.
If you know the shooter, call the West Melbourne Police
Department. You do not have to give your name.

Parents, be a parent

I don't understand how the parents of today work. They
don't watch their children. They blame everybody else for
their children's mistakes, problems and bad attitudes. They
don't pay their bills. They teach all of this to the next genera-


tion. I don't understand it. I fee like I'm an alien on a differ-
ent planet sometimes when I see a majority of parenting. It's
absolutely ridiculous. Parents, be a parent.

Get with the driving program

I wholeheartedly agree with the rant on "learn to drive." I
have found myself almost on the verge of road rage, just jok-
ing of course. Our community is quickly growing and start-
ing to become city-like. The left lane was supposed to be the
passing lane. Now, it's just another lane to sightsee, as I call
it. People driving, to me, seem to be in a driving coma.
When the light turns green, it takes a few moments to make
the connection to accelerate in a timely fashion so when the
driver coming from some distance behind has to put the
brakes on because the light is green and the one in front is
asleep at the wheel. If everyone kept up with the speed lim-
its and not go over or under, traffic would flow a lot
smoother. I could go on. but enough said. Everyone should
be required to review the handbook, retake driving lessons
and tests. I would love to see traffic flow smoother and, of
course, safely. Let's get with the program, people.

Go green?

It is a shame that .Governor Crist wants to be a senator
and yet he signs bills that favor developers, doctors (he
needs their money for campaigning), and forgets the people
who elected him to office. He certainly got cozy with the
California governor in trying to look "green" to enviromen-
talists and signs bills that are pro developers, whbo do not
care about it. He's turned into another Jeb Bush.

Economy fixer

There are certain steps that can repair the depressed
economy, if it can be fixed at all.
First, all illegal aliens should go. Simply fine anyone who
hires an illegal at $1000 per day, per head. This will fund the
removal costs. Illegals broke the law simply by being here
and have no rights to stay.
Actually, considering the costs of illegal aliens to the
economy, removing the illegals would have an immediate
positive effect on the economy. Build the wall between the
USA and Mexico to keep out drug traffic.
All American industry should be saved. However, tax
breaks should only go to industries that hire American at
home and use American parts and products. Toxic plastics
and baby bottles, imported sheetrock poisoning homes,
contaminated food products haven't we learned yet?
Our textile mills are gone. Our shoe shops are gone. All
small appliances are imported and half of our major home
appliances are imported. Half of our fishing industry and
agriculture are gone. Weren't we once known as the bread
basket of the world?
The automotive industry should be rewarded only when
they meet high mileage standards. Eliminate the produc-
tion of all automobiles getting under 30 miles per gallon.
Assist auto manufactures who produce only high-mileage
vehicles getting 50 mpg and alternative vehicles'. Last year
there was a Prius that got 150 miles on the first gallon of

The two ranters who attacked the
writer of "Get Rid of Democrats" should
do a little research before putting their
two cents in the paper.
One called the Republicans "sick"
while the other stated it was the eight
years of Republican administration that
got us into this economic mess.
Let's go back in history to 1933, when
congress passed the Banking Act of
1933. What did this act do? Basically, it
separated the incentive banks from the
commercial banks.
An investment bank is a financial
institution that raises capital, trades in
securities and manages corporate merg-
ers and acquisitions. Investment banks
profit from companies and govern-
ments by raising money through issuing
and selling securities in the capital mar-
kets, both equity and bond, and insur-
ing bonds, selling credit default swap, as
well as providing advice on transactions
such as mergers and acquisitions.
A commercial bank is a type of finan-
cial intermediary and a type of bank.
Commercial banking is also known as


business banking. It is a bank that pro-
vides checking accounts, savings
accounts, and money market accounts
and that accepts time deposits.
After the Great Depression, the United
States Congress required that commer-
cial banks engage only in banking activi-
ties, whereas investment banks were
limited to capital market activities.
Now fast forward to 1999 and the pro-
posed Financial Services Modernization
Act of 1999 which did away with restric-
tions on the integration of banking,
insurance and stock trading imposed by
the Glass-Steagall Act of 1933, one of the
central pillars of Roosevelt's New Deal.
Under the old law, banks, brokerages
and insurance companies were effec-
tively barred from entering each others'
industries, and investment banking and
commercial banking were separated.
Some economists state that the 1999
legislation spearheaded by Sen. Phil
Gramm, R-Texas and signed into law by
President Clinton, the Gramm-Leach-
Bliley Act, and the efforts of former Fed-
eral Reserve Chairman, Alan


Greenspan, are to blame for the sub-
prime mortgage crisis and global eco-
nomic crisis. This bill was the Bill Clin-
ton's "coupe de grace" and one of his
presidential promises to make housing
available to everyone. The subprime
mortgagors allowed the loaning of
money, adjusted rate mortgage, to
unqualified housing purchasers. When
the ARM' interest rates rose to a point
where mortgagees could not meet the
monthly payments, housing markets
fell on their faces and the foreclosures
began.
This is but a simple-explanation of the
crisis we are in. There are many more
elements that played important roles.
But remember this: one rotten political
promise, Clinton, added to greed, indi-
vidual, Gramm, stupid decisions,
Greenspan and large financial institu-
tions and their CEOs, etc., led to this cri-
sis.
Both democrats and republicans are
to blame.

Only a few miles south of
the Space Coast lies Florida's
Treasure Coast, long known
for its beaches, rapid growth
and Jai-Alai.
Jai-Alai (pronounced "hi-
lie") is Florida's first profes-
sional sport and was once
played throughout the state,
including here in Brevard
County.
As gaming has proliferated
throughout the state, all but
six frontons frontonn is the
building in which the sport is
played) remain. The facility
opened in 1974 and has been
in constant operation since
that time.
Although ravaged by the
hurricanes in 2004, the facility
underwent a huge renovation
in 2008.
"It was not so much a ren-
ovation as much as a trans-
formation," assistant gener-
al manager Stuart Neiman
said.

The Jefferson Awards for Public Ser-
vice, selected by the Brevard County
Board of County Commissioners,

The Jefferson Awards program was
founded by the American Institute of
Public Service in 1972 to encourage
and honor individuals for their
achievements and contributions
through public and community serv-
ice. Each year in Washington, D.C., the

just to see the room. It's
beautiful, comfortable and
everyone is so friendly."
They may be friendly
down in Fort Pierce, but
they are also serious about
poker. Three of their cus-

Vegas for the 2009 World
Series of Poker.

Brevard County's dual-enrollment graduates at peak level

When it comes to educa-
tion, staying ahead of the
game has become a trend
for students in the Brevard
County School District.
Results from the 2008-09
school year proved this
trend is only increasing.
In May, Brevard Public
Schools graduated 85 dual-
enrollment students.
These students attended


college while still in high
school, earning both a high
school diploma and an
Associate of Arts degree at
the end of the year, said
Christirie Davis, director of
district communications for
BPS.
. For many years, the dis-
trict has collaborated with
Brevard Community College
to offer this service to quali-
fied students and has seen a
dramatic increase in recent
years in the number of stu-

There is also the potential
for 13 additional 2009 high
school graduates to earn
their Associate of Arts
degrees during the 2009
summer term, she said.
These results will be
announced during the May
2010 commencement cere-
monies.
If all of these students
earn their degrees, the 2008-
09 school year will feature
the largest number of dual-
enrollment graduates, Ms.
Davis said.


Brevard Public Schools
relates these high numbers
to the expansion of the col-
legiate high school program,
in which the school board
provides required college
textbooks, and BCC waives
all tuition and fees associat-
ed with the program.
"Ten schools were able to
offer this initiative this year,"
said Brevard Public School
Superintendent Richard
DiPatri. "Expansion of this
program, combined with
our tremendous partnership
with BCC, outstanding
counselors, teachers and
high-achieving students,
has afforded us this great
success."

The infrastructure that Obama wants to fix
should begin with alternative transportation.
Build more rapid transit systems. There are
American cities and European countries
where people do not need personal vehicles.
Public interstate travel should be available at
a reasonable cost. Expand the railroads to
replace many 18-wheelers going coast to

to the best birthday
party ever complete
with millions of guests,
celebrations, parades and
fireworks.
You are invited, too. It is
the birthday of our country
on July 4. This year, she will
be 233 years old and,
despite what some would
have you think, she is in fine
shape, though a bit harried,
for her age.
If you are like me, there
are very few of these
birthdays that you have not
celebrated in some way.
From the time I was a little
girl, I can recount picnics
and potato salad, swim-
ming in a lake or a pool,
games and laughter and
warm summer nights filled
with fireworks or starlit,
skies.
As a youngster, I would
join my sister in chasing
fireflies and putting them in
a glass jar with a punctured
metal lid. When we were far

our fireflies became our
own private pint-sized light
show.
I remember July 4,1976
when our nation celebrated
its 200th birthday. I was
living on the outskirts of
Washington, D.C,, where
the party was, literally,'quite
explosive, with the largest
fireworks display ever
produced.
Another of my favorite
July.Fourth celebrations was
in 1983, when I lived near
Buffalo, N.Y. We had joined
some friends at their house
for a picnic and walked to a
neighboring field to view
the fireworks. While my
then-husband, my three
daughters and I sat gazing
at the sky with our friends
"oohing and ahhhing" at the
colorful explosive display in
the night sky, our poor dog
sat glued to me, trembling
terribly at the sound of each
loud "bang."
That lesson taught me to
leave my dogs at home
during Mother U.S.A.'s
fireworks party.
This year, I will be
celebrating the holiday
again with my family in
Richmond, Va., just south of
the nation's capital.

Classic albums ring out at King Center

Concerts and summer just seem to
go together.
This summer, concert-goers will
have the chance to relive the classic
concert experience at the King Center
when they attend the performances
of Classic Albums Live.
Over the next few months, fan-
favorite albums, such as Bob Marley's
"Legend," Queen's "Night at the
Opera" and Led Zeppelin's "Physical
Graffiti," will be played note-for-note,
cut-for-cut.
AC/DC's Back in Black is the next
concert in line, scheduled for July 11.
"They really do create these albums
the way people remember them,"
said Christine Powers, with the mar-
keting department for the King Cen-
ter. "I saw Led Zeppelin in person,
and the (Classic Album's Live) band
recreated what I remember. It brings
back so many memories for people
my age who heard these bands live."
This is the second summer that the
King Center has hosted Craig Martin's
Classic Albums Live. It was brought
back by popular demand, said Ms.
Powers.
For these summer concerts, atten-
dees are allowed to bring drinks to
their seats with them, which is usually
prohibited at the King Center.
It's a new policy, called "Summer
Rocks."
"We want them to have the full con-
cert experience," said Ms. Powers. "It's
appropriate for those who remember
the concert experience. This added
feature is also to try and make it more
comfortable for (concert-goers) dur-

with me, as past columns
will be repeated until I can
move on.
T his week we will
celebrate the only
holiday that is truly
American, the Fourth of
July. It's all about food and
fun.
Now comes the question,
what's for dinner? Along

about pulled pork? What
exactly is pulled pork? That
is the question I asked when
seeing it on a menu while
visiting my son in North
Carolina.


Pulled pork is barbecued
pork. I found a recipe and
tried it. Super for a crowd
and leftovers freeze great.
The original recipe called
for a pork shoulder; tried it
and it was wonderful.
Unfortunately, some fat is
necessary for good pulled
pork. I added some extra
ingredients to make the best
pulled pork you'll ever taste.
Add a wonderful appetiz-
er and the salads I gave you'
in previous columns. Top it
off with a flag cake or a large
dessert tart. I'm sure you're
familiar with the sponge
cake dessert tarts sold in
supermarkets such as
Publix, next to the strawber-
ries? Find yourself a large
dessert tart pan at specialty
stores. I have one that takes
one half box of cake mix and

2-1/2 pound boneless
pork shoulder
4 tablespoons brown
sugar
Garlic powder
Salt and pepper

Trim all visible fat from
meat. Sprinkle with salt,
pepper and garlic powder.
Press on sugar.
Wrap meat tightly in foil.
Place in roasting pan and,
roast at 350-degrees for two

Let meat cool slightly.
Using two forks, pull meat
apart (shred). Pour juices
into a small saucepan and
de-fat by tossing in several
ice cubes. Let sit until fat
congeals and clings to
cubes. Remove with slotted
spoon. Add juices to meat.
Serve on rolls or ham-
burger buns topped with a
good barbecue sauce.

FAT-FREE AND
CHOLESTEROL-FREE
CAKES

The following substitu-
tions will give you a deli-
cious fat- and cholesterol-
free cake from a cake mix.
Use applesauce in place
of the oil.
Use egg substitute or egg
whites in place of whole
egg. 1/3-cup of egg substi-
tute or egg white will equal 1
large egg.
*Add 1 tablespoon flour.

Mix and bake according
to package directions. Use
cooking spray to grease the
cake pans.

FLAG CAKE

1 package yellow or white
cake mix
Cream filling, see recipe
below
2 cups whipped topping,
regular, low fat or fat free
1 cup blueberries (use
half for the filling, half for
the "stars")
1-1/2 cups strawberries
(sliced vertically)
Sliced bananas (optional)

NOTE: Place bananas in a
mixture of lemon juice and
water to prevent darkening.
Prepare cake according to
package directions or follow
recipe above for a fat and
cholesterol free cake: Bake
in a 13- by 9-inch pan that
has been sprayed with
cooking spray. Invert on
cooling rack and remove
pan.
When cooled, split cake in
half horizontally. Prepare
cream filling, spread on split


cake and top with remain-
ing layer. Spread topping
over top and sides of cake.
Decorate with strawberries,
blueberries and bananas to
resemble the flag. The
blueberries are the stars and
the strawberries and
bananas are the stripes.

CREAM FILLING
regular or fat free

1 4-serving package
instant vanilla pudding and
pie filling
1-1/2 cups milk, regular,
low-fat or skim
1 cup frozen whipped
topping, regular, light or fat
free
1/2-cup fresh blueberries

Packaged pudding is fat-
free. The milk you use
determines the fat content.
Prepare pudding using 1-
1/2 cups milk, rather than
the 2 cups recommended
on package. Fold in the
thawed whipped topping
and the 1/2-cup blueberries
and spread on cut layer.
Frost with remaining
whipped topping.

Champions use 'HAH' formula for excellence


Recently, the Los
Angeles Lakers won
the NBA champi-
onship for the 15th time.
The coach, Phil Jackson
won his 10th title, giving him
sole possession of first place
among coaches.
He has a radical approach
among his peers. Instead of
all the "rah rah, go team go"
approach other coaches use
to get the players all wound
up, he does just the oppo-
site.
Before the warm-up
begins on the floor, he gets
all the players together in the
locker room, asks the
reporters to leave and locks
the door.
Then, he leads the players
in guided meditation to
refocus, center and balance
them mentally and emotion-
ally and reconnect with their
spirit.
This usually lasts 15
minutes or so. Then he
reminds them that they are
all one in spirit and connect-
ed to each other as a team.
Now they are psyched up,
relaxed and in a playful
mood with their mission for
the next 48 minutes to
increase the joy and sense of
purpose and win the game.
This is what I call the
"laser beam" approach.
The rah rah, I term "the
shotgun approach."
Which will reach further, a
laser beam or a shotgun?
What does "HAH" mean?
The first "H" stands for
"health." To be a champion
at anything worthwhile
demands good health.
Good health gives us the
motivation to excel and face
challenges we might other-
wise avoid.
Colds, flu, migraine
headaches, lack of energy,
rashes, high blood pressure
and many other related
ailments can usually be
traced back to eating too
many high-calorie,
processed or sugar-filled
sweet stuff that tastes good,
but has no nutritional value.
Over a period of time, our
bodies get sick and break
down at the weakest points.
Our original dreams and
aspirations go to the scrap
pile of life, along with our
candy wrappers. We end up
existing instead of really
living. We procrastinate on
taking that walk around the
block. It's easier to plop in
front of the TV and eat a
large bowl of ice cream;
Theonly way I know to
change this pattern is to
clean out the non-living
poison and chemicals in the
kitchen and replace them
with living vegetables, fruits,
water and juices.
Gradually de-tox your
body and mind. Use more
herbs instead of patent cures
and quick fixes. You can
recover your health. The
champion athletes practice
the fundamentals of good
health. So can you.
The "A" in "HAH" is
abundance.
When we feel healthy, we
have the energy and motiva-
tion to take active participa-
tion in our own welfare,
rather than wait for a
handout from family or the.
government.
Using our natural talents
and gifts to live a rich, full
abundant life is why we are
here on earth.
An independent spirit is
the greatest of treasures. The
champions of every calling
make more than they need.
The world loves to reward a

talents and refuse to accept

MELBOURNE If you're
craving authentic Mexican
food, but don't have the time
or money for an international
trip, you really don't have to
go that far.
Francisco's Mexican Restau-
rant, located at the west end
of the Albertson's plaza on the
corner ofWickham and Lake
Washington roads, is as close
to south of the border as you
can get without going
through customs.
Co-owned by husband and
wife team Mary Lou and
Ramon Gonzalez, along with
Ms. Gonzalez's brother,
Francisco Sanchez, (yes, that
Francisco), this Mexican food
paradise has been happily
serving customers since
October.
As soon as patrons sit down,
they are treated to a compli-
mentary basket of freshly
fried tortilla chips and a
ramekin of homemade salsa.
It's a bit spicy, but outstand-
ingly delicious.


To start your meal, try the
sample platter as an appetizer
to get a feel for three separate
dishes in one. The platter
includes nachos, a cheese
quesadilla and taquitos
served with tomatoes, sour
cream and guacamole. Mmm,
mmm good.
Move on to the lunch
special, served from 11 a.m.
to 3 p.m. Monday through
Friday. For $6.95, choose a
main entree from one of the
following: burrito, supreme
burrito, chimichanga, one
enchilada, two tacos, chile
relleno, enchilada verde, taco
or fajita salad or burrito
verde. Other selections are
available and all lunch
specials are served with rice
and beans.
If you're there for dinner, try
one of the generously por-
tioned entrees, such as the
fajitas, served with chicken,
steak, shrimp or vegetarian-
style on a sizzling platter over
a bed of sauteed onions and
bell peppers and served with
rice, beans and warm tor-
tillas.
One of the restaurant's most


popular dishes, the pork
carnitas, includes chunks of
pork slow-cooked and served
with pico de gallo and
homemade guacamole.
There are also burritos,
combination dinners or
selections made with chicken,
beef, seafood or pork. Several
vegetarian entrees are
'available as well.
Early bird specials, served
until 5 p.m., are $7.95 and
include a choice of burrito,
supreme burrito,
chimichanga, enchilada, two
tacos, chile relleno or enchila-
da and taco served with rice
and beans.
A children's menu, featuring
a choice.of taco, enchilada or
burrito; quesadilla or cheese
crispi; hamburger or cheese-
burger; or chicken fingers, is
available for the little ones.
