Office for police and fire dispatch
services in spite of citizen complaints.
In other action, officials set Oct. 21
as the date for the commission to
consider buying back the lease for the
Daytona Beach Pier.

After phone calls and e-
mails from constituents,
the City Commission has
made plans for public
involvement in a possible
Riverwalk development in
the Bailey River Bridge
Gardens area at the north-
west corner of the Granada
Bridge.
At a meeting in Septem-
ber, the commission
approved a preliminary
concept for a restaurant,
boardwalk and other
improvements, and for a
developer to create a more


detailed design. No feasi-
bility study has been done.
Many residents of
Ormond Beach were
apparently surprised to
learn about the idea, but
Mayor Fred Costello said
the commission has dis-
cussed a Riverwalk con-
cept many times since he
became a commissioner in
1999.
"Evidently, some inter-
ested parties did not know
we had discussed creating
a waterfront amenity that
could draw folks to our
downtown," he said. "So,
we'll slow down and have a
(public) workshop that is

the sheriff's office, which will cost $1.5
million for the fiscal year.
He said it would not be cost effec-
tive for the city to handle its own dis-
patch system because the first year
start-up cost would be $2.1 million.
Commissioner Pam Woods said
she gets a lot of complaints about the
dispatch service from people in her
zone at neighborhood meetings.
"They complain about how they are
treated and talked to," she said.

Airport noise task force

ORMOND BEACH The Air-
craft Noise Abatement Task
Force will soon come in for a
landing, but efforts to control
noise will most likely continue.
Members of the task force say
even after their work is done,
keeping airplane noise to a mini-
mum will require an on-going
effort.
After months of listening to
complaints from the neighbors
who live around the airport and
getting into the details of take-
offs, landings and flight pat-
terns, the committee has com-
piled a list of recommendations
to present to the City Commis-
sion.
At a meeting scheduled for
November 5, the task force will
determine when they will deliver


the findings.
In a recent workshop, they
were helped with the list by one
of the foremost airplane noise
consultants in the nation, Ted
Baldwin of Massachusetts, said
Steven Lichliter, airport manag-
er and member of the task force.
Mr. Baldwin told the task force
which of their recommendations
were not realistic and which
were doable.
The task force has also pre-
pared an "in-flight guide" with
noise abatement procedures
that has been given to pilots.
The guide is in the form of a
tri-fold brochure and is designed
to be carried in the cockpit, Mr.
Lichliter said.
"When I presented it to the
flight schools, they were very
receptive," he said. "Some of the

Manager walks and talks

ORMOND BEACH As the sun
broke through the morning mist
and lit up the Granada Bridge, City
Manager Joyce Shanahan and sever-
al fellow walkers walked up the
steep incline toward the top.
Turning to offer encouraging
words, she said, "On the way down
the other side of the bridge you'll
feel like Wonder Woman."
About a dozen women took part
in the first "Walk with the Manager"
event recently. The public was invit-
ed to walk over the Granada Bridge
and back one morning at 7:30 while
sharing suggestions, comments and
ideas with Ms. Shanahan.
"It's an informal way to meet resi-
dents, chat about city issues and get
some exercise," Ms. Shanahan said.
The "Walk with the Manager" idea
was suggested by Ormond Beach
resident Rita Press.
"This gives citizens a chance to
get to know the city manager and it


also promotes fitness," she said.
Terry Mercer of Ormond Beach
said walking gives you a different
perspective of the city.
"You don't see how beautiful the
new Rockefeller Park is when you go
zooming by in a car," she said.
Carolyn Harford said she looked
forward to the event because she
had been wanting to meet Ms.
Shanahan.
"Nothing is better than one-on-
one conversation," she said.
The walkers perspired in the early
morning humidity but they seemed
energized by the exercise as they
discussed issues with Ms. Shanahan
over cold bottles of water after the
walk.
Ms. Shanahan, who participated
in a five-kilometer run recently in
Ormond Beach, revealed during the
talk that one of her goals is to run a
marathon before she is 50 and she
only has a year and a half to go.
Her marathon goal seems attain-
able, judging by the brisk pace she
set as she walked over the bridge.

sia County ECHO Grant program.

DAYTONA BEACH The sparkling
new pool at the Daytona Beach PAL
Center (also known as Cypress Recre-
ation Center) lies in stark contrast to the
dilapidated adjacent gym and recre-
ation center, built in the 1950s.
But not for long.
Plans are under way to renovate the
gym and build a brand new community
center to replace the existing decaying
facility.
"We will have a decent place for recre-
ational activities that will benefit the
community," City Commissioner Cas-
sandra Reynolds said. "It will comple-
ment the area. I hope all citizens take
advantage (of the facility)."
Center director Keith Willis, who


spent many hours at the PAL center as a
youth, said the changes are past due.
"It is time for this to happen," Mr.
Willis said. "The kids need better. We
are happy with what we have but a new
facility is needed."
The center will be known as the Mid-
town Educational and Cultural Com-
munity Center. It will consist of a
kitchen, dance area, music studio, com-
puter lab, photo area and ceramics stu-
dio.
"This will encompass a lot more cul-
tural events and activities," Percy
Williamson, the city's leisure services
director said. "The culinary arts area will
provide professionals and others a
kitchen for use in weddings, banquets,
etc. The dance area will hold dances

VOLUSIA COUNTY -Rubber
ducks often brings smiles to young
children during their bath time.
At this year's 2nd Annual Rubber
Duck Race sponsored by Halifax
Health Hospice of Volusia/Flagler
County, the ducks won't be in the
bathtub, but they will represent a
chance for children to smile again
after dealing with life's ultimate loss.
The race will take place Sunday,
Oct. 25 at Jackie Robinson Ballpark
in Daytona Beach and will benefit
the Lawrence E. Whelan BeginAgain
Children's Grief Centers in Daytona
Beach and DeLand.
The center offers free grief coun-
seling to children who have just
experienced the death of a loved one
or friend.
"It's a really spectacular place,"
said Johnnie Carrow-Nelson, Halifax
Health events coordinator. "We sup-
port the children who are dealing


with death and teach the parents
how to cope with the grief."
The center also offers a special
camp, Camp BeginAgain, a weekend
retreat for children dealing with a
loss.
Karen Grant director of the Day-
tona Beach location, said the pro-
gram is run entirely by donations
and volunteers.
"We offer them compassion, lis-
tening and connection with other
kids they are not alone," she said.
"(Hospice of Volusia/Flagler) contin-
ues to support it, hope the commu-
nity supports it so we can continue
to offer services."
Last year, 7,500 ducks raced
toward the finish line. The winning
duck brings a $3,000 grand prize to
its owner.
Ducks cost $5 each.
Other prizes this year include
roundtrip airline tickets, gift certifi-
cates to local restaurants, area hotel
packages and tickets to Sea World.
In addition to the duck race, which


begins at 2 p.m., there will also be an
all-day festival with games, food and
entertainment.
"Aside from being a fundraiser, it's
a wonderful community festival,"
Ms. Carrow-Nelson said. "It's a really
great opportunity for hospice to get
involved in something fun. We're
really glad to bring a wonderful
fundraiser to the community."
Ms. Carrow-Nelson said she hopes
that even more people this year will
come out to join in the fun festivities
and purchase a duck.
"We want to create awareness (of
the grief center)," she said. "It's a
service that anybody in Volusia or
Flagler County can use. Aside from
making money, it's also nice for more
people to learn about the children's
grief center."

Health official: H1N1 flu expected to increase in schools

VOLUSIA COUNTY-
The county's top health
official said she expects
the number of cases of
H1N1 flu in our area to
grow with the coming win-
ter months, but empha-
sized that it is a "mild ill-
ness."
Unlike the seasonal
influenza virus, the H1N1
flu affects young people


more than the older set,
said Dr. Bonnie Sorenson,
director of the Volusia
County Health Depart-
ment.
"The flu did not go away
over the summer, as it nor-
mally does, and now that
school (has started) the
health department is see-
ing a rise in cases," Dr.
Sorenson said. "The cur-
rent outbreaks are H1N1
virus, not the seasonal flu."
Dr. Sorenson spoke to


about 20 people recently at
Ormond Beach City Hall in
an informational meeting
that was open to the pub-
lic.
Citizens should realize
that H1N1 symptoms are
the same as seasonal flu
symptoms, she said, and
when sick should stay
away from crowds, includ-
ing work, events and
school.
"Schools are incubators
for germs and viruses," Dr.


Sorenson said. "Students
bring the virus home to
their family. As the weath-
er gets cooler and drier, we
expect the flu to spread."
The illness is too wide-
spread to try to "contain it
or preempt it," she said,
and there are no plans to
cancel school events.
"We're just going to try to
deal with it the best we
can," she said.
The county is conduct-
ing educational cam-


paigns, she said, and
preparing to receive the
H1N1 vaccine.
Dr. Sorenson said there
are five priority groups
who should receive the
H1N1 flu vaccine when it
becomes available: preg-
nant women, people who
live with children younger
than six months of age,
health care and emergency
medical services person-
nel, all people from six
months through 24 years


of age, and persons 25
through 64 who have
health conditions associ-
ated with higher risk of
medical complications
from influenza.
Dr. Sorenson said people
should consult their per-
sonal physician if they
think they have seasonal
or H1N1 flu.

"We cannot mandate
that pilots follow specific
procedures," Mr. Lichliter
said. "That would require
approval by the FAA."


Mr. Baldwin told the task
force that it is very difficult
to get the FAA to approve
mandatory guidelines
because they are too
restrictive.
At the recent task force
meeting, members dis-
cussed the need for a con-
tinuing effort after they
complete their mission of
establishing guidelines.

force follow up with more
meetings to see if the situa-
tion improves.

Aviation Advisory Board
could make aircraft noise a
regular part of the agenda,
and members of the com-
munity could attend the
meetings.
Another possibility
would be to add citizens as
members of the Aviation
Board, she said.
Mr. Lichliter said
addressing aircraft noise
will require a process of
consistent communication
with the aviation commu-
nity.
"There's a high turnover
rate for students at the
flight schools and it will be
a constant effort to let
them know about the pro-
cedures," he said.
Mr. Lichliter said that he
believes the procedures, if
observed, will help allevi-
ate the noise problem.
"We've flown patterns as
they existed and we've
flown patterns based on
the noise abatement proce-
dures," he said. "We've seen
significant improvement."

Ms. McKay-Vaughan asked
the police chief if being part
of a large dispatch system
made communication better
or faster.
He responded that the ben-
efit of a unified dispatch cen-
ter is that "if something goes
on in Ormond Beach or Port
Orange that's headed our way
we know all about it."
He said when tornadoes
came through the city "we
had a ton of resources"
because units from Ormond
Beach and Holly Hill
responded when they heard
the calls.
In other action, the fate of
the pier could be determined
next week at the City Com-
mission meeting.
The commissioners, in
their role as the Community
Redevelopment Agency,
voted to end the pier lease
with a private company and
approved the purchase price
of $1.3 million plus closing
costs.
The final decision will be
up to the City Commission.
According to city docu-
ments, the current tenant has
agreed to the price. The
money will come from the
Main Street Redevelopment
Fund.
There was discussion
among the commissioners
about other fees related to the
closing, such as title insur-
ance. The mayor said a break-
down of all the fees would be
available at the city commis-
sion meeting.
Main Street area resident
John Nicholson asked about a
rumor circulating that the
State of Florida holds a 35-
year submerged land lease
affecting pier operations.
"I heard there's a statement
in the lease that we're not to
charge for access to the pier,"
he said. "I believe they are
charging $6 or $8 to fish. That
would be important to know
if the pier will be profitable or
not."
Mayor Ritchey said he had
not seen the document. He
said, however, that he had
looked into the fee issue and
his understanding is that you
can charge for fishing or other
services like rides but you
can't charge for general
admission.
"There's a document circu-
lating, supposedly, that has
not darkened the doors of City
Hall," he said. "I'd like to see it
and get an interpretation."

We need to support chief

Daytona Beach Police Chief Mike Chitwood is the best
thing to ever hit this area. Chief Chitwood is out to clean up
this town. You should back him.

Airport causes suffering

I am suffering daily with symptoms from living too close
to the Daytona Beach International Airport.
I have popping and ringing in my ears and stinging. It
also sounds like there is an engine over the house at all
times.
On a daily basis, I've spoken to Daytona operations,
Embry-Riddle Aeronautical University and the military,
which says there's nothing they can do.
I am asking anyone with similar symptoms to write this
paper. I can't suffer this alone, and I know you are out there.

Big business doesn't care
about patrons' health

I am an 80-year-old veteran. I used to patronize a large
chain drug store.
However, I just found out you cannot get a prescription
filled between 7 p.m. and 7 a.m. because that department is
closed.
If you want to buy lipstick, Vaseline, magazines or toys,
they are open. I find that repulsive.
Big business could care less about our health. However,
there are other companies who do care for your health, like
the Port Orange Halifax Emergency, that will help you as
they did for me.

'Dogs on the Beach'

Everyone should stop to take the time to just think about
what makes the experience of going to the beach so won-
derful, unique and relaxing.
It isn't just the sound of the waves or the beauty of the
water and the beach itself.
It is also the opportunity to experience the natural ani-
mals and bird life that live along the shore. Shore birds, sea
turtles, sea gulls, crabs are not domestic pets like dogs, but
they depend on the natural environment because that's
were they live and raise their young.
If dog lovers really care about animals, keep your pets at
home where they belong.

Give me more local news

I have basic TV stations that carry and report local news.
I don't care about David Letterman's affairs and why
should I?
I want news from "our community" on jobs, work, volun-
teer work, weather for those of us who work and play in it,
even sea reports for fisherman.
What's happening in our parks, not Disney World, Sea
World or Universal Studios? I attend these once in 20 years.
I regularly visit Tomoka State Park, Blue Springs, DeLeon
Springs and Canaveral Sea Shore. These are interesting
inexpensive attractions for families and grandmas.
If I want to hear about the nuts in show business, I can
watch "Inside Edition" or "Entertainment Tonight."
These have no effect on living here in Central Florida.
Stimulate my brain with real news, which can benefit our
community. How? Get out in the communities and see the
real people.

Cell phones are like drugs

It has to be said. There is a drug out that that must be
contained. It has a stranglehold on many, many adults who
cannot break the bonds of dependency. That dependency is
the need to stay connected via cell phone at whatever cost.
I can understand that a few adults have a need for a con-
stant cell companion, such as a physician on call or an
expectant parent.
Basically, the bottom line is this: if you can't function in
society without your Bluetooth or your cell strapped to your
waist, then at least have the common courtesy to take your
call outside.

In response to 'Riverwalk
project proposed for Ormond Beach'

I encourage everyone to take note of this article and
voice their opinion to Ormond Beach Mayor Fred
Costello and his city planners by e-mail or as a letter to
the editor. Mayor Costello's e-mail is
Costello@ormondbeach.org.
The city planners' potential plans to change the
Bailey Park and Pilgrim's Rest Church site could be
detrimental to many historical places that we all now
enjoy.
It would also create more traffic in the area; therefore
take away from the scenic beauty that exists. Please
voice your opinions to the mayor. We need a public
workshop concerning this plan, so the people can have
a say.

As you know, the International Festival is the official
American home of the London Symphony Orchestra,
one of the best orchestras in the world.
While the Festival brings world-class international
performances to our area and has for more than 40
years, its impact far surpasses its simple entertainment
value. It is an economic engine.
It has been calculated that in 2009, when the Festival
had a record year, the economic impact of the event
was more than $20 million to the local economy. The
event generated 3,900 hotel room nights for out-of-
area tourists in a historically slow period, generated $2
million in destination marketing for our area and
brought travel editors from the Boston Globe, New-
York Times and other major publications.
This year the Festival presented numerous free
events in our community and 16 percent of its ticket
buyers were Ormond Beach residents.
For every $1 invested in the festival by the local cities
and Volusia County, $3.50 was raised and spent in our
community.
The economic, cultural and community image that
benefits the citizens of Ormond Beach and our neigh-
bors inVolusia County far outweigh the City's generous
investment in the Festival.

DAYTONA BEACH -
Xavier Atkins can flat out
run.
And this summer, the 13-
year-old ran away with two
gold medals from the
National AAU Track and
Field Championship,
becoming the first Daytona
AAU athlete to win gold in an
individual race.
"We are very proud of
him," said Coach Fred Mor-
rell.
Xavier took gold in the
100-meter dash and 200-
meter dash in the sub youth
division titles. He ran 11.5 to
win the 100 and 23.1 to win
the 200.
He also holds the Disney
National Club Champi-
onship record with a time of
11.4 seconds in the 100-
meter dash.
Xavier, who also plays
football for Calvary Christ-
ian Academy where he is a
seventh grader, has been
running track for the past
four years. He is pleased
with his success.
"It felt great, winning for

Xavier pulled a back mus-
cle in 2006 and in 2007 a
pulled hamstring slowed
him. He has fought back
from injuries to excel.
"This was really the first
year that he stayed healthy,"
Coach Morrell said. "He was
ranked no. 1 in the nation in
the 100 meter the past two
years. He probably would
have won if he didn't get
injured."
Xavier, whom his mother
calls a "good kid who doesn't
get into trouble," said he has
worked hard for his success.
"It is not easy, he said.
"You just cannot go and run
because you are fast. You
really have to train. My first
year I just ran then I started
training and it paid off. You
really have to work hard."
And Xavier has good rea-
son to work so hard he's

Avery Atkins, a former
Mainland High School foot-
ball star and University of
Florida scholarship player,
was found dead in his Port
Orange garage under myste-
rious circumstances in 2007.
An extremely talented ath-
lete, 20-year-old Avery had
struggled to improve his life
after several run-ins with the
law over domestic violence
and drug crimes.
Xavier said his brother's
struggles inspire him to do
better.
"My younger brother

future Olympian."


Mr. Willis said they are
exploring other funding
options.
"We are looking for more
funding which may allow for
construction (of a new gym),"
he said. "We have applied for
the President's economic
stimulus package. We must
move forward, but if that
money comes in we can look
into it."

Ralph Campbell is a man of
many interests.
During a lengthy career in
the banking industry in West
Virginia and since his retire-

elderly and the alleged
victim is his elderly mother.
William Kunselman, 62, has
his mother's power of
attorney and was author-
ized to write checks for her
care because she is in a
nursing home. However,
police said Mr. Kunselman
didn't pay her bills, wrote
checks to himself and
cashed out her CDs. They
said Mr. Kunselman spent

Two die during
home invasion

Police in Daytona Beach
said drugs were at the root
of a home invasion robbery
that claimed two lives at an
apartment on Jean Street.
Police said Armando
Navarro Jr., 24, wearing a
mask and armed with a
semi-automatic weapon,
burst into the apartment
and confronted Myrten
Lindsay, 27. Police said
suspect Navarro opened fire
and wounded Mr. Lindsay.
Five other adults and two
children were home at the
time and one of those adult
residents grabbed a gun and
fired back, killing Navarro.
Mr. Lindsay was rushed to
the hospital with gunshot
wounds to the foot and
shoulder. He died at the
hospital when one of the
bullets hit an artery. Police
think others with weapons
were at the scene with
suspect Mr. Navarro, but
they have not been identi-
fied or found.

Deli owners bring a classic taste of


New York to Palm Coast

you're a transplanted North-
erner who misses a real New
York style deli, or a South-
erner who wants a new din-
ing experience, head up
Interstate 95 to Palm Coast.
You'll find Strathmore
Bagels, which offers a full
delicatessen of homemade
foods including "true New
York kettle" bagels.
Owned and operated by
Alan and Karyn Philips, who
use recipes passed down
through the family, the
restaurant offers fresh,
made-from-scratch food
with natural ingredients.


The restaurant has a spa-
cious dining room and a deli
for carryout service
On a recent visit, my wife
Heidi and I found out why
delis are such a popular tra-
dition in New York and sur-
rounding states. The simple
reason is that you get deli-
cious, homemade food.
If you think a bagel is just
a bagel you should visit this
restaurant. Ms. Philips said
Strathmore Deli is the only
place she knows of in North
Florida that makes bagels
the way they have made
them in New York for the
past century.
They are kettle-boiled in
specially purified water and
then baked in a hearth


stone oven. This is the only
way to make a true bagel,
Ms. Philips said, and the
process gives them a nice
crunch on the outside and
softness on the inside.
"People drive from Orlan-
do and Jacksonville just to
get a real bagel," she said.
The couple makes a "deli
express run" to Ponte Vedra
Beach and Jacksonville each
week. Customers phone or
e-mail their orders and the
Philips deliver the meals to a
set location.
Ms. Philips said they
moved to Palm Coast seven
years ago and realized the
area needed a "good deli like
the ones in Brooklyn."
They had operated


restaurants in New York and
Connecticut and trace their
family's restaurant tradition
back to their great grandfa-
ther who baked bagels in
Manhattan in 1905.
The servings are plentiful.
At the table adjacent to ours,
a man was served a pancake
that was larger than the
plate and at another table a
lady was enjoying an "over-
stuffed deli sandwich."
Mr. Philips said they are
known for quantity as well
as quality.
"No one leaves hungry,"
he said.

busy, neighborhood deli in

Heidi said she thoroughly
enjoyed every bite, especially
the hand-sliced fish, which
one doesn't see very often in
these parts.
Ms. Philips said they clean
the fish themselves and slice
it very thin by hand.
I had the smoked whitefish
platter for $12.95, which
included cauliflower, carrots,

"Wait Until Dark," written
by Frederick Knott, was first
a Broadway stage show back
in the '60s and was later
made into a motion picture
starring Audrey Hepburn.
As this story unfolds, the
villains enter Susy's apart-
ment to retrieve a shipment
of smuggled heroin. Susy at
first appears defenseless,
but she turns the tables and
plunges her apartment into
darkness where she
becomes the hunter. The
play is a masterfully con-
structed thriller that moves
from one moment to anoth-
er as it builds to a heart-
stopping conclusion.
Reserved seating is avail-
able for purchase at the Lit-
tle Theatre Box Office.
Adult tickets are $14.
Senior tickets are $13 and
tickets for students younger

A Halloween treat, hot fudge and an unwelcome visitor


Hello smart shoppers. I
knew things were
getting a little too
normal at the Borg household
and then came the frog.
When I got up in the middle
of the night and went into the
bathroom, I wasn't prepared
for a frog at least 6-inches
long to leap onto the sink. I
was trapped between the sink
and the commode and in no
mood at 3 a.m. to chase this
critter, so I rushed out, closing
the door, knowing that my cat
would be poisoned if she bit
this thing.
In the morning, armed with
a glass and towel, I was ready
for the challenge, but the frog
was nowhere to be found.
Suddenly, there he was, in
the toilet. For a moment I felt
guilty then I closed the lid and
flushed. He was too smart
and clung to the top of the
bowl. The chase began as I
kept circling the glass under
the lip. Finally I succeeded
and was able to put him
outside. This is the third time
over the years I've faced a frog
in this bathroom, once under
the lid and then a day later
coming up out of the drain. I
ask you, why me?
We're closing in on
Halloween and it's time for
some fun. We're going to
make adorable little baskets
for a child's Halloween
party, learn about chocolate
and top it off with a hot
fudge sundae.

HALLOWEEN
FLOWER BASKETS
(NIB)

To make several baskets
you will need:

1 bag multi-colored
gumdrops
1 bag giant gumdrops
Pipe cleaners
Cellophane (colored)
Tooth picks
Small rubber bands


Cut the cellophane in 5- or
6-inch squares. Place a large
gumdrop in the center and
secure it with a rubber band
near the base, as you ruffle up
the cellophane.
Insert a pipe cleaner in the
gumdrop, curving it to create
a handle. With a toothpick,
spear small gumdrops as
"flowers" and insert them into
the large gumdrop. Very
pretty, very different and
yummy.
What makes Halloween
special is that you get
chocolate, it's my weakness.
Finally the experts have
learned what we always
knew: chocolate is good for
you. It contains several
antioxidants and vitamins
that help prevent many
diseases. Does that mean you
can eat that whole box of
chocolates? You know the
answer, of course not, but a
little dark chocolate every day
can be good for you.
The scientific name for
chocolate, theobroma cacao,
means food of the gods.
The history of chocolate is
a mystery. About 3,000 years
ago, in what we now know as
Mexico, cacao trees grew
abundantly. The natives cut
off the giant seed pods,
discarded the flesh and
removed the seeds which
they cut in half, allowed them
to ferment, dried and ground
them. The result: chocolate.
How mysterious, since the
pods had a foul smell.
I think it's time for a hot
fudge sundae or maybe a
banana split, topped with
whipped cream and a cherry
or two, don't you? There are


strings attached. You must
use low-fat or fat-free ice
cream or frozen yogurt. You
must use low-fat whipped
topping or fat-free canned
cream. This fat- and choles-
terol-free hot fudge sauce is
the best. It is usually made
with baking chocolate
squares. One square of
chocolate contains 14 grams
of fat, 9 of them saturated!
The nutrients in chocolate are
in the cocoa powder, not the
high-fat cocoa butter. The
powder is fat free. It's still
chocolate, but the fat has
been removed. Just follow
my lead, assemble a beauti-
ful dessert grab yourself a
nice big spoon and dig in.
No need to feel guilty, you
are getting little to no fat but
oh so much pleasure.

HOT FUDGE SAUCE
(FAT FREE)

There is nothing to
compare with a hot fudge
sundae or a banana split,
and when you're watching
the fat and cholesterol, it's
usually a forbidden food.
My hot fudge sauce is better
than any you'll find in the
stores.

2/3 cup light corn syrup
1/2 cup cocoa powder

Check store brands for the
corn syrup; many are much
cheaper than name brands.
Place corn syrup and cocoa
in a small saucepan, over
medium heat and slowly
whisk together until blend-
ed and warm.
Top your ice cream choice
with hot fudge. Add
bananas and any other fresh
fruit you choose. Top with
your whipped cream choice
and a cherry or two, (they're
fat free). You can add some
chopped nuts if you choose.


They do contain fat, but it's
a "good" fat.

For the next couple of
months forget football, the
baseball playoffs and the
World Series. Forget the
NASCAR Chase To The
Championship. Now is the
time to fish.
Each fall when the
humidity drops and the
temperatures remain in the
80s, fishermen begin to
unfurl their rods to take to
the water.
The fish also recognize
the change. With the sun
not quite as intense and the
nights just a bit cooler, the
resulting drop in water
temp will send the fish into
a feeding frenzy.
The animals are always
first to predict a change in
nature. From the squirrels
in the park that know to
hoard away nuts for winter,
to the elephants that knew
to leave before the tsunami;
they just know.
With the subtlest of
water-cooling, the fish
begin to get serious about
laying on fat for winter

My favorite method at
this time of year is to troll
open water with tiny soft
plastic jigs. Put out four or
five rods with jig heads as
small as 1/32nd ounce and
change colors until you
find the one that works.
Use split shot to raise or
lower your bait in the water
column. An electric trolling
motor is a big help but it is
not absolutely necessary.
Years ago I, trolled up many
a bucket using my 90-horse
Mercury.
In salt-water you will find
that the flesh of some of
your favorite targets has
become firmer with the cool
down. Spotted sea trout
maybe a little soft and
unappealing to the palate
during the summer, but will
now be great table fare.
Some fish develop
parasites during the warm
weather and if that bothers
you, they will now clear up.
The fish taste better and the
fishermen are more com-
