ORMOND BEACH City Com-
missioners gave initial approval
recently to an ordinance requiring pet
owners to get their dogs and cats
spayed or neutered. A final vote to
enact the law is set for the June 2nd
meeting.
A representative of the Halifax
Humane Society said low-cost spaying
and neutering is available in the area.


The proposed ordinance states that
those harboring an unaltered animal
will be subject to a $100 fine. The
deadline for spay/neuter will be with-
in 30 days of the animal reaching six
months of age or within 30 days of
acquisition.
Permits can be obtained to exempt
an animal from the ordinance. Unal-
tered permits will be available for ani-
mals with medical issues, or those
involved with shows, competition,
law enforcement, service, breeding,
hunting or herding or "gainfully

complaint from residents
was the limit of 10 sand
bags per car. Mayor Fred
Costello explained the
reason for this was to
maintain a safe weight
limit. After hearing the
complaints, he said this
issue would be examined
and suggested the com-
mission consider having
residents sign a waiver if
they want to take more
than ten bags in their car.

Essential Services Cen-
ters, and residents should

arrangements.

DAYTONA BEACH -
City Commissioners
approved replacing a
Daytona Beach Fire
Department employee
with a computer software
program, a move that will
save more than $50,000 a
year, Fire Chief Gary
Hughes said.
The labor-saving soft-
ware system will produce
and manage the depart-
ment's staffing require-
ments and schedules,
handle payroll, fill vacant
shifts and manage per-
sonal logs, all labor inten-
sive work that is now han-
dled by a payroll clerk.
"What we find besides
scheduling the normal
things we have on a day-
to-day basis, payroll is
very labor intensive. A lot
of people have to touch

employees who help out,
the savings add up to about
$51,000 a year, Chief Hugh-
es said.
Major fire departments -
including the City of Orlan-
do, Orange County and
Sumter County fire depart-
ments in Florida are
already using the system
and have given it highly
favorable reviews, the Chief
said.

member and a Habitat
Steward with the National
Wildlife Foundation.
Rouge Plant and Her-
cules' Club are just two of
the plants found in the
Unitarian Universalist
Society Church's Native
Plant Garden, part of its
Green Sanctuary project.
The church is located on
Halifax Avenue, just north
of Granada Boulevard in
Ormond Beach. The gar-
den sits at the north end of
the property, a project that
began two years ago,
although getting rid of the
invasive species that had
made it their home began
a few years before that,
thanks to some very deter-
mined volunteers.
In 2008, the Unitarian
group applied for and was
awarded a conservation
grant from the Native Plant
Society to create the habi-
tat garden, a memorial to
long-time member Wayne

few weeks, it will be certi-
fied by the National
Wildlife Foundation.
Strolling through the
maritime hammock, one
of only two in this area, we
recognized Blue Spider-
wort, Native Lantana,
Scorpion's Tail, Sabal
Palms, Coralbean, Saw Pal-
metto, Swamp Milkweed
and Swamp Hibiscus (a
rarity), Coontie Fern, Trop-
ical Sage, Firebush, Iron-
weed, Wax Myrtle, Simp-
son's Stopper, Pink
Purslane, Cassia Privet,
Pepperweed, Wild Olive,
Wild Coffee, and a native
grape vine, among others.
Ms. Rich explains that
some parts of many of
these plants are edible,
including the nettle
tubers.
"Many of these plants
were chosen," she says,
"because they like a lot of
sun, and don't need a lot of
water. In addition, they'll
provide food and shelter
for the more than twenty
species of local butterflies
we have in this area."
The group strolls around
the Cherry Laurel, Magno-
lia and Live Oak trees. A
low section in the middle
creates an intermittent
wetland, also a rarity. The
group's goal is to increase
the size of the hammock,
develop and maintain the
garden as an environmen-
tal project and educational
tool for members, and per-
haps make a space for out-
door meetings or classes.

fied as Green Sanctuaries,"
he estimates, "and we want
to be a beacon."

VOLUSIA COUNTY It's
a tragedy that can strike at
any time, but peaks during
summer months.
A young child can slip
into a pool or body of
water and drown in a mat-
ter of minutes.
Drowning is the second
leading cause of death for
small children in the Unit-
ed States, said Danielle
Clark, YMCA Association
Aquatics Director, but it's
the leading cause of death
in pool-filled Florida, for
children ages one to four.
,To help counter those
grim statistics, the Volusia


Flagler Family YMCA is
holding its third annual
YSplash week to promote
water safety.
The free program, spon-
sored by Florida Hospital
and McDonald's, offers free
week long children's water
safety classes at area
YMCAs from June 1
through June 5.
"We are trying to teach
children and parents to be
safe in and around water,"
Ms. Clark said.
Although drowning can
occur in pools, it can also
happen in situations where
no one is intending to
swim, she said.
Children may fall into a
pool, bucket or body of


water when they reach in
to touch the water, she
said.
The program teaches
children safe behaviors
around water and includes
basic swim lessons for chil-
dren age four to seven.

Ms. Clark said a parent's
story convinced her it
does.
Last summer, a sibling of
a 4-year-old who had com-
pleted the class, fell into a
pool while the family was
on vacation, Ms. Clark
said.

McKay-Vaughan wants to
hold a workshop on home-
lessness.
"In my opinion it's never
going to be solved but we
need to cope with it and
we need to reduce it and
we need to help it in every
way we can but it's just
never going to go away,"
she said. "Homelessness is
here and we need to deal
with it. I just think we need
to be very well grounded in
what our city will allow
and not allow."

that summit so we don't go
to that with seven different
opinions or, even if we do
have seven different opin-
ions, I'd like to know what
they are so that we go with
a fairly strong position."

Mckay-Vaughan suggest-
ed, the commission could
review city ordinances
dealing with homeless-
ness.

Bandshell should have benches

We live in a beautiful city.
Our bandshell is a historic fixture and many happy hours
have been spent there.
It seems a shame that there are no longer any benches in it.
The city has provided some nice ones along the boardwalk and
at the park south of the pier.
The statelypalm trees on either side of the memorial plaques
that honor race car drivers provide a tropical ambiance.
Hopefully, when the rides are installed in the.empty space on
the boardwalk our visitors will bring their children to have
some old- fashioned fun. With the economy the way it is, our
beach provides some free relaxation.
There used to be a little train that you could ride up and
down the beach. A trolley route along Atlantic Avenue and on
to the beach could assist beachgoers with their paraphernalia
to go from their parking places to the ocean.

In response to
'Gnomes are not attractive'

This is in response to the curmudgeon who wrote the rant
about the Holly Hill Gnomes.
This person either has not lived in the area for very long or
has avery mean heart to think the gnomes should be removed.
If one has never seen the look on a child's face after visiting
the gnomes and the sense of wonder it invokes, you are missing
something. Not only that, but the children write notes to the
gnomes and then some time later receive a note back from
them.
The gnomes rank right up there with the tooth fairy, the East-
er bunny and even Santa Claus and should stay as long as the
good-hearted people behind them can keep this magic for our
area.

'People shouldn't take handicapped parking'

It is not only blue placards in the window. A lot of people
have handicapped plates.
I am sick of people coming up. to me and telling me I don't
have a blue placard in my window when I have handicapped
plates. What is the difference?
SInstead of jumping to concllusions. they should look at the
car first.

Why is the hand on the hip?

What is going on with all these TV field reporters?
They all have the same habit. They go out and do a news
report, and they can't talk without a hand on her hip. Even an
Orlando car dealer is doing it.
Is this a new fad, or is it something else?
It is funny. I have to laugh every time I see it.

Welfare system is a waste of money

I am one person who does not want to see any cutbacks in
the school system.
My children are grown, but the future.has a right to a great
education.
I am angry because every state wastes money on the welfare
system.
I get very angry when I hear someone is on welfare because
they have a handicap.
Here are a few of the handicaps I have heard: I suffer from
depression. I have sciatica. I have Attention Deficit Disorder. I
am bi-polar.
I have a suggestion that I think every single state should
adopt. ,
Make it a law that everyone who is on welfare must work for
it.'
Yeah, I said the horrible four-letter word.
My daughter is bi-polar, and she works not just one job, but
two.
She does this to make ends meet; she does this because she
was taught if you can't afford it, you don't get it.
Welfare was originally designed to assist a person in-
between jobs. Now it has become a career for many.
I will grant you that there might be some legitimate people
on welfare, but it would be hard to prove to me.
I had a friend who was a quadriplegic. He did not take wel-
fare, Medicaid or any other assistance.
He learned to paint with his mouth and sold paintings and

Bailed out companies are shipping
American jobs overseas

Thousands of American jobs are being shipped overseas
by Bank of America and Merrill Lynch financial corpora-
tions even though taxpayers' dollars are used to rescue
them from annihilation. Shipping jobs overseas is done
while thumbing their noses at the American people and
the Obama administration.
Bank of America accepted money from the American
public, played off American workers, and then hired thou-
sands of new workers in India. BOA cut 30,000 workers and
is planning a layoff of another 30,000 in the U.S.
We the people are incurring an $11.7 trillion national
debt with a high percentage of the debt used to bail out 'too
big to fail' corporations. Bank of America and Merrill Lynch
are 'prominent in the 'bail out-by-taxpayer-handout' sce-
nario.
Political leaders have not addressed the emergency
Nature of net job loss overseas with emphasis on bailed
out, financially controllable corporations. President
Obama did say (he) 'wants to wait until 2011 to institute
the new tax laws so the recession will have receded, or
hopefully have, ended'.
From 2011 to 2018 the administration says it can save
$103 billion. Again, ignoring the emergency of net Ameri-
can job loss overseas by bailed out corporations. This is
happening now, not in 2011 or later.
When we the people begin to accept reality many ques-
tions will be asked if it is not too late. Who is responsible for
streamlining laws allowing American jobs to be shipped
overseas by taxpayer bailed out corporations? What hap-
pened to the tax base that supports the Nation? Then, an

Car dealers should print
accurate price of vehicles

Maybe if auto dealers were more open with their advertising
they would have more credibility with the general public.
Why do most of them think if they put a price that is $2,000 to
$4,000 under what they will sell that vehicle for, it will sucker
potential customers into the dealership?
Most all ads have to have an asterisk next to the price listed,
so a person must go to the bottom of the page andtry to read
the microscopic printing that is very difficult to read and under-
stand.
Does this make potential customers rush right to the dealer
and buy a vehicle? I thinknot.
Deceptive business practices are against the law in many
states.
The very fine, microscopic print at the bottom of each vehicle
ad page is sufficient to keep from getting charged with violating
the law, but is this making the general public more trusting of
car dealers? There are some dealers that print the actual price
of the vehicle, plus sales tax and tag transfer fees.
Wouldn't it be nice if all dealers did that?

Homosexual couples
want rights license provides

A lot has been said about the issue of gay marriage and
how allowing gays and lesbians the right to marry would be a
threat to the institution, sanctity and sacrament of
marriage.
It has always puzzled me that when individuals use that
rationale they never seem to consider that perhaps the
greatest threat to the institute, sanctity and sacrament of
marriage is actually divorce, and if we as a society truly want-
ed to protect marriage and the family, we really should con-
sider a constitutional ban against divorce and not gay mar-
riage.
There clearly needs to be separation between church and
state.

Crist should stay focused on.Florida

In his youth, I guess he missed this lesson.
As a youngster, I was taught that until I had completed a
project, I was not to begin another venture.
That's why I'm completely baffled as to why Governor
Charlie Crist is aiming to become our next senator.
I think that Florida has enough unsolved problems to
make his job as governor feel incomplete, and I'm truly
mystified as to why he's compelled to focus his attention
onWashington D.C. instead of Florida.
With our public school system struggling to stay alive
and drastic cuts in the social services that we Floridians
depend on, I cannot believe that Charlie Crist feels accom-
plished enough in his job as governor to set his sights on
the next level of government, and I find the action irre-
sponsible.
If you think that he's been a good governor, I remind you
how the state's budget resulted in several local schools
closing.
Do .we honestly want such mismanagement to occur at
the national level? Personally, such a thought sends chills
up my spine.

Is a marriage in a church by clergy legal if there is no
license?
Marriage in the presence of God and his witnesses is not
what makes a marriage legal though it clearly does cast a
more profound sense of commitment in the vows that
are spoken in a spiritual ritual.
Is a marriage by the justice of the peace or notaryand not
in a church less legal when there is a license?
It is the license that makes the marriage legal, not the spir-
itual rituals engaged in by a faith or church sanctioned mar-
riage.
That is why a church or clergy can't divorce you.
Gays and lesbians are not demanding to be married in
churches by clergy, they are simply demanding to be allowed
the same rights as every other citizen to legalize their mar-
riage with a license that grants them the 100 plus rights and
privileges that heterosexuals enjoy when they say I do.

Show some cruise etiquette

We've just returned from a cruise and what we saw on
board is much the same as what we see right here in our day
to day life: lack of consideration for others and lack of com-
mon courtesy. It seems as if the "it's all about me" move-
ment has really taken over.
The selfish and self-centered behavior is rampant.
I see letters in Rants & Raves about drivers not caring
about folks in cross walks or about people having to tolerate
stereo noise.
We have a neighbor who plays his music loud enough to
be heard over three blocks away and so far the cops who
have responded to this house have not managed to stop this
inconsiderate man's behavior.
On the ship we saw a constant display of selfish acts lack-
ing of common courtesy.
We saw single diners during prime lunch time take their
tray to a table for four and sit there 55 minutes after they are
done eating while others circle around with full trays of food
hunting an available spot. We saw one person walk up to a
row of lounge chairs and put one item on each chair for
'holding,' a book on one chair, a towel on another etc., and
then walk off for two to-three hours as others want a lounge
chair right then.
We hear passengers chatter and carry on as performers
are up there giving us a grand performance or a cruise
director is giving us valuable information.
Although the dress code is clearly established in many
formats, you still see shorts, flip flops, T-shirts with pictures
and such in dining rooms.
We see children running wild with passengers and waiters
and staff stepping over and dodging these children as par-
ents look on without doing a thing.
All these things come under the title of "lack of consider-
ation" and "lack of common courtesy."
Good manners, from what I've observed, are in very short
supply today.

ized as a fundraiser by the
Ad Hoc Community Cadre
that committed to raising
$100,000 for academic and
performing arts events and
junior varsity sports that
were eliminated from the


school district's budget mid-
year due to the funding cri-
sis. So far, about $85,000 has
been raised.
Patrons will be asked to
make a donation, which will
be displayed on a large
board.
There will be a contest
between schools to see
which school raises -the
most money. Volisia Mall
retailers will also offer
coupons to everyone who
makes a donation.

Children's advocate doesn't let

stroke get in her way

ORMOND BEACH -, It
took five days for the feeling
to come back on her left side
after the stroke. But being in
the hospital didn't stop Pep-
per,Wooten from studying
for a test for one of her col-
lege classes. It was another
important step toward her
goal of helping children.
Her dedication paid off -
after attending class on Sat-
urdays for two years while
working full time and volun-
teering for Guardian Ad
Litem, the 44-year-old
mother of three graduated
from Stetson University on
May 9 with a bachelor's
degree in business adminis-
tration.
Her next goal is law
school, and to use her law
degree in her work with chil-
dren. Ms. Wooten is opera-
tions manager at the
Ormond Beach Embraced
by Grace adoption agency
and also works with foster
children for the State of
Florida.
It was during her first year
at Stetson that she suffered
the stroke one morning in
church. Some of her friends
told her she should drop out
of school because she was
trying to do too much. But
after a full recovery, Ms.
Wooten said she was deter-
mined to continue.

"I have never loved chil-
dren as much as I do now,"
she said. "Seeing how many
children in Florida need
help makes me want to be
an advocate for them. I love
what I do because I can help
children that don't have
families. ... We help children
find families and families
find children."
In her work with foster
children, she often helps the
children reunite with their

"We try to reunite families
if possible and if not possi-
ble then we try to find the
children really good
homes," she said.
After raising and home-
schooling three boys, she
got back into the work force
three years ago, armed with
a paralegal degree she had
earned after high school. It
was at that time that she and
her friend Gwen Picerne
started the adoption agency.
While working at the
agency, she realized how
much more she could
accomplish with a law
.degree, she said. The first
step was to get a bachelor's
degree, so she enrolled in
Stetson's Executive Passport
program in Celebration.
She stood out as a stu-
dent, according to Dr. Dan
Scott, director for special
programs.
"She not only has a grade
point average over 3.0, but
finds the time to be a good

of a job and family," he said.
"She inspires me."
The Passport program is
designed for working adults,
and classes are available on
Saturday. Ms. Wooten
drove there each Saturday,
leaving her Ormond Beach
home at 7 a.m. and not
arriving back until 7 p.m. It
was a 90-minute drive each
way.
"It was hard and I some-
times wanted to quit," Ms.
Wooten said. "But I love my
job so much that I'm not
willing to give it up to go to
school full time."
She has specific plans for
the day she becomes a
lawyer.
"I want to provide adop-
tion at a lower cost. Our
agency does as much as we
can to make adoptions
affordable," she said. "By
being an attorney, I can
make the legal fees much
cheaper."
She also wants to work
toward reforms in adoption
and foster child regulations,
keeping children with fami-
lies if the child is not in dan-
ger.
"I love our state agencies
and I work with them quite a
bit, but I think more needs
to be done for children. For
example, when 'families
struggle financially some-
times the state comes in and
takes the child away," she
said. "The state places the
child in a foster home and
pays the foster parents. I'm
thinking why not take that
money and give it to parents
so they can watch their own
children."
Ms. Wooten says she
needs a scholarship to
attend law school. Her plan
is to sell her house so she
can live in Orlando. She
would drive to her job at the
adoption agency in Daytona
Beach five days a week, and
drive to the Stetson Law
School in Tampa for night
classes three nights a week.
Ms. Wooten's dedication
to her goal is founded on her
strong Christian faith, she
said.

of Ms. Wooten and director
of undergraduate studies at
Stetson, said "Pepper has a
deep commitment to the
'Lord ... She truly wants to
share God's love with fami-
lies and children in need."

and neutering is available,
according to Michelle Pari of
the Halifax Humane Society.
Low-cost spay/neuter cer-
tificates are available at the
Humane Society.
"You can arrange to have
the operation done at the
shelter or we will give you a
list of veterinarians that will
honor the certificate," she said.
Volusia County, which
recently enacted a similar
ordinance, offers a low-cost
service to people in unincor-
porated areas based on
income. This service is also
available to people living in
cities that have passed a
spay/neuter ordinance,
according to Sergio Pacheco,
field operation supervisor
and community outreach
officer forVolusia County.
A bus, called the "Volusia
County Pet Vet Cruiser," trav-
els to the homes of income-
qualified people. The pet
owners must contact the
County to determine if they
are qualified, Mr. Pacheco said.
Ms. Pari said last year
15,000 animals were taken in,
876 were returned to the
owner and 3,083 were adopt-
ed. The rest were euthanized.

mals," she said. The only
option other than to eutha-
nize them is to keep building
shelters and we can't do that.
The only way to avoid eutha-
nizing animals is to prevent
the births in the first place.
That's the most sensible and
humane way. And it's afford-
able for residents so that is not
an issue," she said.
It's necessary for people to
spay or neuter their pets
because the animals often get
lost and become strays, Ms.
Pari said.
"I don't know how often
people say they don't know
how their cat got out but she
got out and now she's preg-
nant," she said. "Accidents
happen every day and we see
the results of it at the shelter."
Before the vote at the May
19th meeting, Pat Mihalic, of
Concerned Citizens for Ani-
mal Welfare, supported the
ordinance and congratulated
the commissioners on previ-
ous actions taken by the city.
"I just wanted you to know
that you set the standard for
animal welfare," she said. "We
have been using your ordi-
nances and your
trap/neuter/retum program
for cats and your animals lim-
its at every meeting we've
gone to. I thank you for what
you do."

through recycling there.
The body was that of
Michael Bobo, 52, of Holly
Hill. Authorities said


though he died of natural
causes, they still aren't sure
how he wound up at the
landfill.
Women convicted
of kipnapping
and murder
A judge in Flagler County
found a woman guilty in the
kidnap and murder of a
Daytona Beach woman last
year. Patricia Roosa, 21, was
with her boyfriend, Cor-
nelius Baker, when the two
burst into Patricia Upta-
grafft's home on Michigan
Street after targeting the
home because they wanted
the family car. Uptagrafft's
mother was beaten, her
grown son pistol-whipped
and Uptagrafft was kid-
napped and forced to with-
draw money from a bank.
She was later shot and killed
on a dirt road in Flagler
County. Cornelius Baker was
convicted and sentenced to
death for the crime. Roosa
will be sentenced at a later
date and faces life in prison.

leads to arrest
Ormond Beach police
arrested Sean Williams, 17,


of Ormond by the Sea after
investigators said Williams
robbed a Shell gas station on
Yonge Street. Police said
they got a tip on the suspect
through Crime Stoppers
after the suspect talked
about the robbery. Williams
was tracked to his home and
picked up there without
incident.
Cookies lead to
suspect
Cookies gave an armed
robbery suspect away in
Daytona Beach. Police said
Keith King, 29, was in the 7-
11 store in the 300 block of
South Peninsula Drive and
paid for two peanut butter
cookies. The clerk told
police that King leaned over
the counter after paying for
the cookies and implied he
had a weapon in his waist.
The clerk told police King
demanded all the cash in
the till and took off with $40
and the cookies. A witness
described the get away car
and police later stopped it at
another 7-11 store. A pas-
senger in the vehicle ran,
but police arrested King
who was driving the car.
Police found the peanut
butter cookies in a bag on
the front seat.

Torrential rain didn't keep
customers from lining up
for "Crabby Tuesday" at
Charlie Horse Restaurant
recently.
Last week, when my
husband and I stopped by
the Ormond Beach restau-
rant for dinner, a crowd
was waiting to be seated,
many there to take advan-
tage of the all-you-can-eat
giant Alaskan Snow crab
legs.
The crab leg special is
always all-you-can-eat,
but every Tuesday the
$29.99 entree is reduced to
$23.99.
That's all I had to hear to
make my decision. There's
nothing I like better than a
plate of steamed crab legs.
My husband and I start-
ed out by sampling appe-
tizers such as taco bites,
fried clams and crab cake
bites washed down with
ice-cold beers.
The packed restaurant
evoked a comfortable
party atmosphere with
friendly servers in a cozy
setting.
When my entree arrived,
the plate was piled high
with crab legs accompa-
nied by coleslaw and a
choice of red potatoes, rice
or fries.
Sure it's messy. You have


to crack the legs and dig
out the succulent, sweet
meat, but when you
extract a meaty morsel and
dip it into drawn butter, it's
worth the effort.
My husband, who thinks
eating crab legs is too
much work, ordered the
ribs and wings combo
which proved to be a good
meat-lovers choice.
French fry aficionados
have to try Charlie Horse's
version. They are hard to
describe, but it's like there's
a light batter on each fry.
The result is a super-crisp,
crunchy shell with a soft
potato center. It's hard to
stop eating them.
I'm sorry to report that I
couldn't order a second
round of crab legs. I just
couldn't eat another bite.
Well, maybe just a small
bite of my husband's
banana-split ice-cream
pie.
It will be a personal chal-
lenge next time to see if I
can manage a second order
as did many other cus-
tomers that evening.
The restaurant, pur-
chased in 1994 by Dan and
Margie Peckham, is known
as a casual, family-owned
restaurant.

Dupree said.
"We go to great lengths
when we bring in crab, she
said, "we bring in the best
grade."
The crab is also used to
make their specialty crab
bisque.
The extensive menu fea-
tures burgers, wings, fresh
mahi mahi, fried shrimp,


steaks, ribs, pasta, chicken
and seafood with a range
of prices from $7.99 to
around $20.
Daily week-day lunch
specials starting at $5.99
bring in a loyal, local fol-
lowing as well as many
tourists, Ms. Dupree said.
"We pack them in for
lunch every day," she said.

Everyone has a different
recipe for stuffed peppers.
Mine is an Italian recipe
with a twist.
My family likes a lot of
gravy with everything. As
I've told you before, never
throw away leftover meat
gravy. Contrary to what
you've been told, it freezes
great. If you don't have any
frozen gravy, use prepared,
packaged or canned, low
fat.

Four large, sweet bell
peppers, any color
1 pound fresh ground
"fat-free" beef
Two large eggs, or equiva-
lent egg substitute; or
three egg whites
Two medium cloves
garlic, chopped
1 teaspoon salt
1/2-teaspoon black

Note: When using fresh,
"fat-free" beef, add 1-2
tablespoons olive oil.
Cut peppers in half,
lengthwise, remove stem
and seeds, or cut tops off,
remove the seeds and stuff
them whole. I prefer them
halved.
Mix the remaining
ingredients together. Stuff
peppers loosely. Place in
pan, top with sauce.

One 14-ounce can whole
tomatoes
One medium onion,
chopped

This recipe is from my
maternal grandma. The
ingredients are unusual.
The flavor is amazing;
superb at a party.

15 large or about 20 small
Cubanelle peppers
3 cups plain bread
crumbs
Three cloves garlic,
minced
One can flat fillets of
anchovies with oil
Several sprigs fresh Italian
parsley, chopped; or 1
tablespoon, dried
1/2-teaspoon black
pepper
1/2-cup canola oil

Cut stem end off peppers,
remove seeds, wash and
drain.
Mash or chop the
anchovies and add to the
remaining ingredients,
along with the anchovy oil.
Loosely stuff peppers,
getting the bread crumb
mixture as far down into the

serves 2-3
Zucchini makes an
unusual and delicious
entree when stuffed. A little
meat goes a long way.

Two medium-sized
zucchini
1 tablespoon extra virgin
olive oil
1/2-pound "fat-free"
freshly ground beef, or
half ground beef and half
Italian sausage removed
from casing
Five whole scallions
(green onions), chopped
One large clove garlic,
finely chopped
One large egg or two egg
whites
Two 1-inch-thick slices of
day-old Italian bread
One handful grated
Romano cheese
Several sprigs fresh Italian
parsley, chopped; or 2
teaspoon parsley flakes
3/4-teaspoon salt
1/2-teaspoon black
pepper
2 tablespoons milk

Note: Soak the day-old
Italian bread slices in
water, remove crust, then
squeeze out excess water.
Sliced bread may be
substituted.
Cut off stem end of
zucchini and cut in half,
lengthwise. Scoop out
pulp, leaving 1/4-inch
shell. Be careful not to cut
through skin.
Chop the pulp. Place oil
in a large skillet and cook
zucchini with scallions and
garlic.

Grated Romano cheese.
Mix first six ingredients
together and pour over

grated cheese, cover with
foil and bake at 375 degrees
for 45 minutes to 1 hour.

One package yellow cake
mix
11/2 cups cake flour
Prepare cake mix accord-
ing to package directions.


Add cake flour; mix well.
Drop large cookie-size
circles onto greased or
sprayed cookie sheet; bake

'Off the record' Barracuda chase makes for wild ride


he largest barracuda
ever caught in the
state of Florida was 67
pounds.
It was landed in 1949 in
the likely spot of Islamora-
do in the Keys.
That record may have
been topped in the most
unlikely spot of Port
Orange this past May 15th.
Fishing on the flats near
Pelican Island in the
shadows of the Dunlawton
Bridge, Al Houser hooked,
played down and landed a
fish that may have been a
new record.
SUnfortunately,-with no
way to weigh or measure it
we will never know. By any
account it was a monster.
It all began quietly .
enough with Al and I
drifting in his 19-foot
Carolina Skiff at slack low
tide.
We had caught a few
small fish that morning,
but as usual, when the tide
stopped so did the bite.

We were both throwing
my quarter ounce char-
treuse shrimp tail jig when
Al muttered that he had
snagged bottom. I turned
to see him pull back hard.
That's when it happened. A
fish of about six feet leaped
from the water.
Not skyward, but a long
low lateral jump just
skimming the water. As the
two of us watched slack-
jawed we did not put the
jumping fish together with
Al being hung up.
Within seconds, it
dawned on us that the giant
barracuda was attached to
Al by his six-foot Bass Pro
Shops medium action trout
rod. I immediately jumped
to action clearing the deck
of loose rods and equip-


ment and starting the 60-
horse Evinrude. "May as
well get comfortable," I
yelled. "This is going to take
at least an hour." Al nodded
and hung on as the drag on
his little 4,000 Shimano reel
screamed while the'cuda
headed for Ponce Inlet.
With me driving the boat,
Al was soon able to recap-
ture some of his line, which
happened to be 20-pound
Power Pro Braid.
Had the big fish hit my jig
and my 10-pound mono.
the fight would have been
over before it started.
Down the river the fight
raged. Sometimes near the
west spoil islands; some-
times near the east. After 45
minutes and about a half
mile the monster still had
the strength to jump clear
of the water telling us it was
nowhere near finished.
SAt an hour and a half, Al
had it near the sandy,
shallow west bank. Prepar-
ing to do my best Steve
Irwin impression, I readied


myself to jump off the bow
onto the fish. I was deter-
mined to land this animal.
My plan was to grab it by
the tail and drag it onto the
beach while avoiding the
huge mouth that held teeth
as thick as a soda straw. Just
as I was about to jump, the
barracuda turned and shot
back out to the depths of
the channel, perhaps
rescuing me from a
moment of poor judgment
and some nasty wounds.
After an hour and fifty
minutes and more than a
mile from the initial hook-
up, it finally laid up along-
side the boat.
My two hands would not
go around the small of its
tail. It took me a couple
tries to muster the strength
to hoist it into the boat, but
at last it came onboard and *
it was over. The three of us
collapsed into the boat,


spent. After a short while, I
released the big fish and we
watched it swim away. At
that time neither of us
realized that the state
record was 67 pounds.
Was it that big? I believe
it was. For my money Al
Houser of Ormond Beach
caught the unofficial state
record barracuda in the
Halifax River of Port.
Orange.
