aul Prudhomme looks like a food expert and even
when he speaks he doesn’t reveal his Cajun roots —
until the subject comes to food. Then you know for
sure he’s from Louisiana.
The guru of gumbo says he’s on a mission to tell the
world about Louisiana food.
“I started to cook with my mother when I was 7 years
old when my last sister got married. There were only three

“I left Louisiana when I was 20 years old and did a kind System

. of apprenticeship of my own. I went to Texas and Chicago,

but I didn’t like it. It was too cold.

“Then I went to the western part of the United States
and worked the mountains and in California. Twelve years
I spent working in coffee shops and truck stops and fancy
restaurants. I had a ball and really learned a lot.

“That’s when I realized that New Orleans food and Loui-
siana was so important because it was so unique, you
know.”

Paul, who is 48 years old, says the uniqueness of his food

over Europe.

“In the kitchen, we would cook for each other and when
they did their best it didn’t compare with the amount of
emotion that Louisiana food had.

“That’s what started my mission of telling everybody
about it.”

Paul says he realized 15 years ago when he and his wife,
K., (that’s all, just K.) were trying to name their restau-
rant, that the food he cooks is not just Cajun or Creole but
an amalgam of both with a large measure of Prudhomme
thrown in for flavor.

“We never cooked with eggs and cream when I was
growing up. The eggs went to the school to help pay tuition.
They were too valuable to use in cooking. Mother would
trade them at the store for sugar and flour and things we
didn’t grow. The butter went to the sisters or the store.

Here’s where the mixture of cuisines comes in.

“I knew I had to have Creole food and it’s great food, so
putting them together was when we decided the restau-
rant should be called K-Paul’s Louisiana Kitchen.”

He uses butter and cream in his cooking and anyone who
watched him make a white sauce for pasta at the recent
Maison Blanche opening in Lakeland, Fla., will testify to

that.

They opened the restaurant in July 1979, and they have
taken the whole thing on crusades a number of times —
pots, pans, food and staff.

It puts his food in the public eye when he sets up in a
strange town. They have even set up in a rock night club
with walls made of curtains delineating the 74-seat restau-
rant. Some of the food is flown from home base to make
sure the dishes are as authentic as they can be.

‘I always had a great love for Louisiana and when we
traveled I understood that in order to make people under-
stand the food I had to take it with me.”

Some other Louisiana chefs had left their home state
and gone in the world alone. They tried to duplicate their
own food with different ingredients and staff that wasn’t

schooled in Louisiana ways, he says, and it doesn’t work.

That’s why he takes the real thing from home base.

“We do it for fun,too,” K. says.

But success hasn’t come easily to the chef. He opened
and closed four restaurants before his present one took off.

Paul is probably best known for his blackened redfish, a
dish he adapted from an open-fire favorite.

It has become such a part of Louisiana cuisine than
many people don’t realize it’s not a couple of hundred
years old, steeped in the roots of the culture. It’s really
steeped in the roots of his kitchen.

He made it first with redfish and that’s what caught on
with customers.

“The first night we made it we opened and about 35
people came into the restaurant. We were worried that
when the customers saw it black they would think it was
burned. I cooked three pieces of redfish and took it into the
dining room and gave everybody a taste and like 20-some-
thing people ordered redfish.

“Some nights almost everyone in the dining room would
order the redfish and that’s all they wanted. We tried to

convince them to let a couple of the people at the table
have the redfish and the rest order something else and
exchange tastes. That's become a custom at the restaurant
now.”

Many people wouldn't have any other fish, he says, but
all kinds of foods are good blackened.

The blackening is from the butter and hot pan, not an
impenetrable coating of spices. “The secret is to season
the fish lightly. If you can’t taste the flavor the dish is too
hot.”

Tuna works well for blackening but it has to be pink in
the middle wlien you eat it to be best.

fierce heat that is needed for blackening. Paul says. The

butter coating the food will burn as soon as it hits the pan

and there is so much smoke it’s best done outdoors.
Big, oily fish are not great blackened and shrimp and

oysters don’t work either.

dhomme’s Louisiana Kitchen.”

If it only works in one kind of pan then it surely won't

Ingredients: Bleached flour, sugar,

partially hydrogenated vegetable shortening, dextrose,

work in a microwave. There are no micros in the restau-

rant kitchen because “they don’t mash the tastes together

like conventional cooking.”

He carries his burners, pans and ingredients when he
and K. go on culinary crusades and they don’t do it as
much as they used to. “We do it for charities now, and we
did this one for Maison Blanche because it’s a Louisiana

company.”

His favorite dish to make is not his preferred one to eat.

“I'm the official jambalaya cook in the restaurant. The
dish was originally an inventive way to use leftovers. All
the scraps from the cooler go into it.”

His favorite meal to eat is a roast of pork or a chicken
cooked really slowly to brown it well and candied yams

with dirty rice and potato salad.

He and K. collaborate on it and it takes almost no work
at all. Early on a Sunday morning one of them will put a
seasoned roast, beef or pork — the kind doesn’t matter, or
big old chicken on to bake at just over 200 degrees.

All through the day, when either of them goes by, they
will add a vegetable. Whole peppers, onions, potatoes and
yams are favorites. By 5 p.m. the dish is done and the

vegetables are like candy, he says.

“You try to make food taste like a dance. Brown the
chicken well to give it a nutty taste, then take it out of the

3 tablespoons lemon juice

2 tablespoons prepared mustard
% cup raisins

Heat jam in saucepan over medium heat, stirring until melted. Blend in
lemon juice and mustard. Brush all but one cup of the glaze over ham during

last half hour of

Science and Technology Week.

The purpose of this week is to call
attention to the important role that
science and technology play in our life.

Here are two science mysteries to solve.

Problem: What causes iron to rust?
= J Finding out: Use three iron
ad, nails. Paint one nail. Put grease or
butter on another. Do nothing to
the third nail. Put the nails out in
DTN damp weather for several days.
Observe daily.
Does rust form on all the nails? Why?
Clue: Oxygen in the air reacts with iron to
make rust. Some things keep the oxygen and
iron from coming together better than others.

Freddie Brooks. un
Cree, 19, was born in California.
Her father is a musician and actor.

moved to a Plains Cree Indian reservation in
Canada when Cree was a baby. She was named
after the tribe.
Cree began performing at 12 when she sang with
her father’s band. Since then, she has been in many
TV shows, movies and plays. She does one of the
voices in the “Care Bear” movies.
Cree lives in Hollywood, Calif. She enjoys reading
philosophy.

any low-nutrient, calorie-dense food, is not advisable.

One of the ingredients he uses now is his own blend of
spices called Cajun Magic. There are seven flavors, each
with a different purpose and they take the place of salt and
all kinds of other things.
And he does add the spices frequently as the dish cooks.
It’s important to let foods stick to the bottom of the pan

Melt the butter in a large heavy pot, add onions and bell
peppers, and saute over medium-high heat. Brown well,

Bring mixture to a boil; reduce heat and simmer until rice
is tender but still a bit crunchy, about 20 minutes, stirring
occasionally toward the end of cooking time.

Meanwhile, heat the serving plates in a 250 degree oven.
Remove bay leaves and serve immediately.

To serve as a main course, spoon 2 cups jambalaya onto

each heated serving plate; for an appetizer, serve 1 cup.
Yield: 4 servings.

4 small whole bay leaves

1 teaspoon salt

1 teaspoon white pepper

1 teaspoon dry mustard

1 teaspoon ground red pepper (preferably cayenne)

1 teaspoon gumbo file (file powder), optional

% teaspoon ground cumin

% teaspoon black pepper

Y%2 teaspoon dried thyme leaves

4 tablespoons margarine

6 ounces tasso (preferred) or other smoked ham,
diced, about 1%2 cups

6 ounces andouille smoked sausage (preferred) or any
other good pure smoked pork sausage such as Polish
sausage (kielbasa), diced, about 1 heaping cup

1%2 cups chopped onions

1% cups chopped celery

1 stick butter
1 large onion, chopped fine
2 large garlic cloves, chopped fine
Bunch of green onions, chopped fine
Y%2 pound each chicken gizzards and livers, minced
1 cup raw long-grained rice
2 cups water or chicken stock

Salt, pepper, garlic salt, parsley

In heavy skillet, melt butter. Gently saute onion, garlic,
and green onions until soft but not brown (about 3 to 4
minutes). Add minced gizzards and livers and cook until
firm. Put mixture in saucepan. :

Add rice. Mix well. Add water or chicken stock and
simmer about 20 minutes. Season to taste.
